Yummy collard greens What you need: 2 bunches of collard greens 6 bacon strips cut into 1/4 inch wide pieces (could substitute with diced ham or turkey bacon) 2 tbs vinegar 1/2 chopped red onion 2 1/2 cups low sodium chicken broth How to make It: Stack collard greens on top of one another. Make sure leaves are completely spread open. Cut the stem out of the middle by cutting lengthwise the entire leaf on each side of the stem. **** THIS IS THE MOST IMPORTANT STEP (in the picture you can see that I didn't do that and I had to go through after and cut out the stems, huge pain !) Once the stems are cut out.... cut vertically 1 inch strips. Fill a large bowl with cold water and add collard greens. Let soak and then dump into a strainer. Let ALL water drain out. In a LARGE skillet over med/high heat.. add 2 tbs olive oil. Add finely chopped red onion and bacon. Cook until bacon browns. Once browned, add all the collard greens. Cook on med high for 2-3 min. Reduce heat and add vinegar. Cover and let cook for 5 min. Add chicken broth. Keep on med heat, cover. Cook for 20-30 min. Once cooking is done. Turn off heat and let sit for 45 min for best flavor. Serve and ENJOY!!!

Mango sorbet 2 cups frozen mango thawed for about 10 min 1/2 cup vanilla coconut milk Blend until smooth. This also tastes really good with some mint leaves added while blending. Enjoy !!!

Tomato basil What you need: 1 organic tomato 3-4 fresh basil leaves Kosher sea salt Black pepper White wine balsamic vinegar How to make it: Slice tomato and soak in white wine vinegar for about 5 min Slice basil leaves into thin pieces. Put tomato on a plate as shown and place sliced basil in between each tomato slice. Sprinkle with salt and pepper. ENJOY !!!

Paleo chocolate chip cookies with pumpkin butter What you need: 3 cups almond flower 1 tsp baking soda 1 tsp kosher salt 1 tsp vanilla extract 2 large eggs 1/2 cup melted coconut oil 1/4 cup raw honey 3 Splenda packets 1 1/2 cups enjoy life chocolate chips 1 cup chopped walnuts Pumpkin butter from trader joes (optional) Directions: Preheat oven to 350 degrees F Mix all dry ingredients in bowl except chocolate chips and walnuts . Mix all wet ingredients in separate bowl. Add wet ingredients to dry until smooth. Mix in chocolate chips and walnuts. Evenly place on parchment paper and put in the oven for 8-10 min. Once cooled add desired amount of pumpkin butter on top of each cookie. ENJOY !!

Paleo challenge : I'd like to call this a paleo "pizza" if you will. Grilled mushroom, bell pepper, red onion and tomato with garlic. Over a bed of fresh baby spinach with raw tomato sauce with basil, ginger, garlic powder and pepper to taste. Topped with a runny organic egg all sprinkled with crushed red pepper. So yummy. Enjoy !!!!

WHAT YOU NEED :
Turkey-bacon
Smoked turkey breast
Tomato
Mrs dash all purpose
Mustard
Romaine Lettuce
HOW TO MAKE IT :
Grill turkey bacon
On each piece of lettuce put a piece of turkey, turkey-bacon, tomato and anything else you like.
Wrap and hold with a toothpick.
I served mine with sugar snap peas and some grilled chicken with salsa from the night before.

Omelet bites !
These are perfect for big families on the go !
WHAT YOU NEED:
6 Eggs
Sautéed mushrooms ( and any other veggies you like )
Cupcake tin
HOW TO MAKE IT:
In a pan saute all veggies with your favorite seasoning until slightly soft.
Whisk eggs in a separate bowl.
Spray baking sheet.
Add a spoonful of your veggies into each cupcake.
Pour eggs into each cupcake.
Bake for 30 min on 350F.
I served mine with sliced tomato with fat free cream cheese.

Turkey Meatloaf
WHAT YOU NEED:
Ground Turkey
Tomato Paste
Chopped onion
Cilantro
Ground Almonds (optional)
Mrs dash all purpose
Mrs dash garlic flavor
Pepper
Minced Garlic
3 eggs
8 cups spinach
1-2 tomato
Fresh Mozzarella cheese
HOW TO MAKE IT :
Grill chopped onion in pan until browned.
Meanwhile in a bowl, mix tomato paste, cilantro, ground almonds, mrs dash, pepper, some minced garlic and 3 eggs.
Mix in the ground turkey and onion.
Put half of the turkey mixture into a baking dish.
In a separate pan saute spinach with minced garlic until wilted and spread evenly over turkey in the baking dish.
Layer with sliced tomato. And mozzarella cheese.( you may add any other veggies you like as well)
Put the remaining turkey mixture on top and bake on 375 for 1hr 15 min.
** I put cheese on the top of mine, but keep in mind that adds calories !

Green Machine
Great way to get kids to get in their daily requirements for veggies !
What You Need:
5 cups spinach
1 cup fat free greek vanilla yogurt
1 frozen banana (peel before freezing)
1 cup unsweetened vanilla almond milk
2 tbs organic peanut butter
2 tsp unsweetened shredded coconut
How To Make It:
Add all above ingredients into blender and add ice.
ENJOY !
TIP: If you are trying to gain, add 1/2 scoop of your favorite protein powder !

Breakfast Bagel
This is definitely one of my favorites on a re- fuel carb day.
What You Need:
1 multigrain bagel thin
1 sliced tomato
Fresh spinach
Fresh low fat mozzarella
Fat free cream cheese
Mrs dash garlic salt substitute
How To Make It:
Pop the bagel in the toaster.
Spread cream cheese on bagel.
Add fresh spinach on top.
Then place sliced tomato.
On top of that add mozzarella.
Sprinkle with mrs dash.
Put in microwave for about 30 seconds.
Enjoy !!!
TIP: You may also put all ingredients on bagel and place in a toaster oven until cheese melts.

Turkey Bacon Veggie Omelet
What You Need:
1 organic egg
2 egg whites
Mushrooms
Turkey bacon
Bell pepper
White onion
Tomato
Low fat mozzarella
Salsa
Avocado
Minced garlic
Coconut oil
How To Make It:
In large pan melt coconut oil.
Add bacon. Cook well. Remove from heat. Chop.
In the same pan add mushrooms, bell pepper, onion, tomato and garlic. Cook over medium heat until soft.
Put eggs into a cup and whisk.
If you are only making one, pour egg mixture over veggies. Flip. Add cheese on top. Fold over.
If you are cooking for multiple people, pour egg mixture into separate pan.
Once eggs start to brown on one side. Flip omelet onto other side.
Add desired amount of veggies on top. Sprinkle with cheese.
Once egg is cooked, fold egg over veggies.
Serve with sliced avocado and salsa. Sprinkle cheese on top if desired.

Twice Baked Cauliflower
This is a great potato replacement. It tastes SO good and even the picky eaters seem to go for this dish. I originally found this dish on Pinterest but I tweaked the recipe to make it lower cal/fat. I don't measure so the measurements are not exact .
Try it out !
What You Need:
1 med/large head of cauliflower
Green onion (i used red onion and it tastes great too)
4 oz fat free cream cheese
4 oz fat free sour cream
Fresh parmesan
Fresh cheddar
Minced garlic
Pepper
Turkey bacon
Oven safe baking dish
How To Make It:
Chop cauliflower and add to a large pot of boiling water.
Let cauliflower cook until tender. (but not too soft)
Meanwhile in a large pan, cook turkey bacon. (I used 8 pieces, but you can use more/less or even omit )
Remove bacon from pan and add chopped onion and garlic. Cook onion until browned.
Pre-heat oven to 350F
Chop bacon into small pieces.
Drain water from cauliflower and mash. ( leave some chunks)
Add onion, 3/4 of bacon, parmesan, cream cheese, and sour cream. Mix well.
Put mixture into baking dish.
Sprinkle remainder of bacon bits and cheddar cheese on top.
Put in oven for 20- 30 min (or until slightly bubbling on the corners.
ENJOY !
Serves about 6

Overnight Oats
Good morning ! This is one of my favorite "in a rush" breakfasts !
What You Need:
1 cup rolled oats
3 packets of sweetener
1 cup unsweetened almond milk
Unsweetened coconut
Ground cinnamon
Blueberries
Strawberries
Organic honey
Fat free greek yogurt
Home made Nutella (not my recipe)
Home made Nutella:
1 avocado
1 banana
3tbs coco powder
Honey to sweeten (optional)
Nutella recipe from @joneacie.
How To Make It:
Mix: oats, almond milk, sweetener and cinnamon in bowl and let sit over night. (if you did not prepare the night before, let sit in refrigerator for about an hour, until all liquid is absorbed.
In tall glass, layer the overnight oats with, yogurt, honey, cinnamon, berries and home made Nutella.
Enjoy !!
