1. The Potato Trick
Cut a potato in half and stab one half with a fork. Rub the hot grill with the cut surface of the potato. The heat removes starch from the potato, which creates a kind of non-stick coating on the grill. Now you can grill your meat without worrying about it sticking to the grill.
2. The Ice Cube Trick
Press a small hole in the patty and place an ice cube inside. As the meat cooks, the ice will melt and all that moisture will be retained by the patty, which ensures a nice and juicy burger. It gets even better when you add a piece of butter on top of the ice cube. A flavor explosion awaits!
3. The Apple Juice Trick
To make sure your steak is nice and tender on the inside but gets a beautiful crust on the outside, we're going to let you in on a secret: Spritz it with some apple juice. You're not going to believe the amazing results!
4. The Charcoal Trick
If you get your coals too hot, the result might be disappointingly dry or burnt meat. The coals are ready when they're covered with white-gray ash and glowing evenly, which can take up to 30 minutes. To gauge the ideal cooking temperature, hold your hands about 6 inches above the grill. If you can't take the heat anymore after about 2 seconds, the charcoal is too hot.
5. The Rosemary Skewer Trick
Instead of using regular wooden skewers, simply use sprigs of rosemary. This also has the added benefit of injecting some nice rosemary flavor into your shish kabobs.
6. The 3-Zone Fire Trick
Divide the grill into 3 coal zones. The hottest zone (Zone 1) is where the coals are stacked closely together. The area with fewer coals is going to give off medium heat (Zone 2). The final section (Zone 3) does not get any coals. These 3 distinct temperature zones are going to help you cook your meat perfectly every time.
7. The Onion Trick
Cleaning your grill can be a pain, but there's actually an easy way to do it. Cut an onion in half, stab one half with a fork, and rub it over the surface of the dirty grill. The onion juice acts as a disinfectant while also removing the invisible dirt from the grill.
8. The Sausage Trick
Never stab or cut into a sausage while it's still on the grill. On the one hand, you're going to stab it to shreds, and on the other hand, all the fat will drip out. This will cause the grill to give off a lot of smoke, produce harmful toxins, and make the meat lose all its flavor.
9. The Lemonade Trick
Cut a few lemons in half, dunk the cut surface into sugar and then grill them for 10 minutes until the sugar has caramelized. Now squeeze the lemons into a pitcher and add some ice cubes. Add a few more lemon slices to the pitcher, and voila, the perfect lemonade, straight from the grill!
10. The Resting Trick
When you take a steak off the grill, cover it with aluminum foil for 1-2 minutes to let it rest. The result is going to be a super juicy, delicious steak. But if you're grilling brats, you can eat those right away or they're going to end up losing too much moisture and flavor.
11. The Newspaper Trick
Do you still have to wrestle with a dirty and rusty barbecue rack? If the onion wasn't enough, try this one: grab an old newspaper and wrap the dirty barbecue rack in it. Spray the newspaper with water and let everything soak overnight. Then the next morning, you can just wipe the rack down with a dish towel.

Fondant potatoes are something really special, with a fluffy, soft interior, crisp top and a crunchy, slightly chewy base that's packed with flavour from the stock, butter and garlic.
They really are eyeball-rollingly delicious!
Perfect for that extra special date-night dinner, a family Sunday roast or as a dish that everyone will be fighting over on the Christmas dinner table.

Oven Temp: Preheat the oven to 200C/400F (fan)
Ingredients:
4 large, long potatoes or 8 medium-sized potatoes - , peeled (about 800g/1.75lbs - 900g/2lbs)
2 tbsp vegetable oil
3 tbsp unsalted butter
2 cloves garlic - peeled and sliced in half
2 sprigs of fresh thyme
240 ml (1 cup) hot chicken stock - , use strong stock if you can - I use 2 chicken oxo cubes with 240ml/1cup water.
½ tsp salt
¼ tsp freshly ground black pepper
To Serve:
sprigs of fresh thyme
Maldon salt

Summary:
1. Oiling the vegetables: Smothering your veggies with oil before you start cooking them may seem like a foolproof way to avoid them sticking to the pan. Unfortunately, adding oil to them increases the chances of the veggies getting burned because the oil will get extremely hot.
2. Not cooking them at all: While it’s true that many vegetables are healthier in their raw state, it is not true for all of them. Beets, broccoli, onions and bell peppers have more nutrients when raw, but others actually become more nutritious when heat is applied.
3. Prepping veggies too early: Some people like to get ahead and do tasks in advance rather than at the last minute. While that is a good trait for some things, it doesn’t always work with vegetables. Once you wash and cut them, oxidation and nutrient loss begins as does wilting and spoilage. It is better to cut your veggies right before you use them.
4. Boling them too much: Boiling may be a quick way to prepare veggies, but it’s also a quick way to rid them of nutrients and flavor. When you boil them, the water soluble nutrients seep out of the veggies and into the cooking water. Boiling can also lead to overcooking, which will make them soft, gray and mushy.

2 Tbs flour
1 cup chicken broth
1/2 cup whole milk
1/2 cup heavy cream
1/4 cup grated parmesan cheese
2 little cubes of chicken bouillon
1/4 cup fresh basil, chopped
1/4 cup of fresh parsley chopped
Bake at 400F for 45 minutes or until chicken has internal temperature of 175 F

Ingredients for Chicken Reshmi Kabab:
- Boneless Chicken - 500 gms (cut into 2” tikka pieces)
1st Marinade:
- Ginger Garlic Paste- 3 tsp
- Salt- 3/4 tsp
- Lemon Juice- 2 tsp
2nd Marinade:
- Hung Curd- 4 tbsp
- Processed Cheese- 4 tbsp
- Fresh Cream- 5-6 tbsp
- Green Chillies, deseeded and crushed- 1.5 tsp (around 3 green chillies)
- White Pepper Powder- 1/2 tsp
- Green Cardamom powder- 3/4 tsp
- Garam Masala Powder- 1/2 tsp
- Nutmeg (Jaiphal) grated- 1/2 tsp
- Salt- 1/4 tsp
- Coriander Leaves, fine chopped- 1 tbsp
Other Ingredients:
- Butter for basting. 4 tbsp
Preparation:
- To prepare the hung curd, strain the water from the curd or plain yogurt using a strainer or cloth to have a thick curd without any water.
- You can use chicken tikka pieces or alternatively cut boneless chicken fillets into tikkas.
- Wash and pat dry the boneless chicken fillets. Cut into 2” tikka shapes.
- For the 1st marinade, add all the ingredients, mix well and set aside for 30 mins.
- To prepare the 2nd marinade, add all the ingredients specified above.
- (For the cheese, you can use cream cheese, grated mozzarella or processed cheese)
- Whisk everything together and then add the marinated chicken pieces. Mix everything well so that the chicken tikka pieces are well coated with the marinade.
- Set aside to marinate for 3-4 hours in the refrigerator.
Process:
- Skewer the marinated chicken tikkas on a metal skewer 4 at a time.
- Lay the skewers on a foil lined baking tray
- Preheat the oven/OTG to 250 degrees C.
- Slide in the tray in the top slot of the oven.
- Roast for 10 mins at 250 degrees C. After 10 mins turn the chicken tikkas.
- Roast for another 10 mins at 250 degrees C on the other side.
- Remove and baste with melted butter.
- Reduce the oven temperature to 200 degrees C.
- Roast for 6-7 mins at 200 degrees C. Flip the chicken and continue basting with melted butter.
- Finally roast for another 5 mins at 200 degrees. Remove the tray once the edges of the chicken are lightly charred.
- Serve as an appetizer.

Here is what you'll need!
chicken pieces with skin - 500 g
salt - 1/4 tsp
soya sauce - 1/2 tblsp
tomato ketchup - 1 tblsp
Ginger paste - 1 tsp
Garlic paste - 1 tsp
Black pepper powder - 1 tsp
instant noodles masala (like Maggi) - 1 pack
IT's optional but it will help to increase the taste...plz try with it.
for coating:
All purpose flour - 1.5 cups
corn flour - 1/4 cup
salt - 1/2 tsp
Garlic powder - 1/2 tsp
Chilli powder - 1/2 tblsp
turmeric powder - 1/4 tsp, for nice golden color but its optional

Meat
∙ Lamb chops
∙ Pork rashers
∙ T-bone
∙ Boerewors
Braai spice
∙ 2 tablespoons salt
∙ 2 tablespoons black pepper
∙ 1 tablespoon garlic powder
∙ ¼ teaspoon cayenne
∙ ½ tablespoon sugar
∙ 1 tablespoon paprika
∙ 2 teaspoons coriander
Garlic bread - Doubling the recipe gives better results.
∙ 1½ cups white bread flour
∙ ½ cup of water
∙ 5 grams instant yeast
∙ 1½ tablespoons butter
∙ ½ tablespoon sugar
Garlic bread spread
∙ 125 grams of butter
∙ 2 tablespoons minced garlic
∙ 1 tablespoon fresh parsley
∙ 1 cup freshly grated mozzarella cheese
∙ 1 tablespoon braai spice
∙ 2 eggs, sunnyside up
∙ Onions, caramelized

3 large cloves Garlic (3 tablespoons)
1 punnet Portobellini mushrooms
4 Corn on the cob
250 grams of Carrots
100 grams of Dried Cranberries
½ cup Canola oil
Spices
2 teaspoons dried Coriander seeds
1 teaspoon Black Peppercorns
1 teaspoon dried Chilli flakes
10 Cardamom pods
½ teaspoon Fennel seeds
2 Star Anise
1 small piece Cinnamon bark
4 whole Cloves
1.7 liters Beef stock (4 beef bouillon cubes)
1.5 liters Water
¼ cup Worcestershire sauce
