Lamb with my cauliflower rice version of Mojardara (recipe below). Sometimes I get a bit obsessed with cooking certain meals...even if I don’t have the time. The payoff is plenty of leftovers for lunch’s (for days 😂)
This comes with a health warning though...it’s cauliflower, onions and lentils 😮🤦🏻‍♀️ a bad recipe for some people 😂 3 small onions - sliced and fried, put aside on kitchen roll (this is not healthy - you have to leave this out if still losing lbs but I love them 😋)
Tin of green lentils, blended or grated whole cauliflower, 1 tbsp cumin seeds, 1 tsp ground coriander, 2 tsp ground cumin, 2 tsp ground cinnamon, 1 1/2 tsp turmeric, salt, raisins.
Heat the seeds then spices...then stir in the lentils, cauliflower and raisins.
Stir for a few mins then stir in the onions. Tastes even better cold the next day 😍
Kind of imagining my cooking during the #fjallravenpolar will be slightly different 😂 vote for me

10 min warm up cycle with 25min interval training followed by #nikentc 45min workout session today, loving my handstands these days, no longer scared of reverse hold medball squats 💪 😝

Speedy dinner tonight - red curry vegetables with sea bass (red curry paste, coconut milk, veg and lime juice). Takes 20 mins (15 mins chopping, 5 mins cooking) and can be done alongside kids-tea #kidswonteatit

Another day and another before/after.
There was a time when I’d avoid family photos at all costs - if I had no choice I’d make sure they weren’t full length (or I’d hide behind someone/something). Most saved, I’ve cropped half my face out. I wanted to have family pics but I just hated what I looked like. It’s a good feeling knowing those days are over.
No more untagging myself from fb posts 😀
