This has to be one of my favourite vegan meals so far!! Warm Ginger Green Bean Honey Mustard Salad with Pita Pockets - equally good with rice. Herbs(Basil, Majoram Parsley Oregano Thyme Rosemary) Green Beans, Spinach, Red and Orange Capsicum, Mushrooms, Ginger, Dressing (Olive Oil, Mustard Seeds, Cider Vinegar, Mustard Powder, Celery Salt, Honey)

Soul credit goes to the lovely people t piko for selling me some amazing veg cheese made from almonds. Gluten free pasta, olives, capers, spinach, Sauce- capers vinegar, flax seed oil, soy milk, Italian herbs(Basil, Majoram Parsley Oregano Thyme Rosemary). Topped with that delicious vegan cheese!

Stuffed capsicums are my go to atm, Stir fried capsicum, mushroom courgette and eggplant, with black and white rice , herbs (Basil, Majoram Parsley Oregano Thyme Rosemary) sliced almonds for added crunch and when stuffed into the pepper I then drizzled with a mustard dressing (Olive Oil, Mustard Seeds, Cider Vinegar, Mustard Powder, Celery Salt, and Honey)

Barilla Gluten Free Spaghetti, Grated Carrot, Grated Parsnipt, My Favourite Italian Herbs (Basil, Marjoram, Parsley, Oregano, Thyme, Rosemary) Tomato Paste, Olive Oil, Chilli, Worcester Sauce, Chilli and Capsicum Flakes, Gherkins. Couldn't help but top it with my favourite vegan topping of sliced almonds and pumpkin seeds.

Today is the day!
Monday the 13th of February 2017 i am going 100% vegan. I have been pescatarian for a month or so but today I'm going all out. I'm throwing away all my egg and dairy products (not that there is much) and avoiding all fish!! This won't be easy for me, I already have many dietary requirements with my ibs. I have to avoid Fermentable Oligosaccharides, Disaccharides, Monosaccharides and Polyols (fodmap). So eliminating meat products aswell makes life so much harder. Especially when most vegans get their proteins from lentils beans and chickpeas which I can only eat small amounts of. However, I want to show everyone that it is doable. I am determined to go a whole year without meat products. Wish me luck, I think I'll need it!
