White Truffle Mayo Recipe
Yup, that’s right! White Truffle Mayo. I swear this goes great with just about everything. It doesn’t add an overpowering taste, but you do taste truffle in the sauce. This is actually one of the trickiest sauces to make next to the legendary hollandaise. I broke mayo 3 times when I was first learning in culinary school. I know. I know... crazy right? 3 times breaking it and now I’m good at it. lol.

THE RECIPE:
Ingredients - 3 Egg Yolks + 1 Whole Egg, 1fl oz Water, 1 fl oz White Wine Vin, 24fl oz oil(veg/olive), 1 fl oz Lemon Juice, 4 fl oz. White Truffle Oil salt/pepper to taste.
Instructions -
1. Add Eggs, Vinegar, Water, and pepper into a mixing bowl and whisk very well.
2. Slowly add oil and continue to whisk. Be careful, too much oil at one time will break the sauce. Take your time!
3. Once your halfway with your oil, proceed to add your lemon juice and continue to whisk. This will thin it and make it easier to stir. Becareful about adding to much though.
4. Add your seasonings. Salt, Pepper, Truffle oil. You name it! you can pretty much add anything to this recipe.
