Lebanese-inspired Soy Curls

1 pack of soy curls 2 cups veggie boullion
Place soy curls in a large glass mixing bowl. Pour veggie bouillon over top and stir. Allow soy curls to sit and rehydrate for at least ten minutes.
Marinade
1/2 cup plain vegan yogurt 2 tbsp za'atar 1 tbsp olive oil the juice of one lemon 1 tbsp cilantro paste 1 tsp cumin 1 tsp harissa paste 1 tsp garlic powder 1 tsp sea salt 1/4 tsp black pepper
In a medium-sized mixing bowl, whisk together the; yogurt, za'atar, olive oil, lemon juice, cilantro paste, cumin, harissa paste, garlic powder, sea salt, and black pepper. Pour marinade over rehydrated soy curls. Stir until the soy curls are thoroughly coated. Allow soy curls to sit in marinade for at least one hour.
Preheat oven to 400 degrees F. Line a cookie sheet with parchment paper. Pour marinated soy curls onto lined cookie sheet and spread out evenly. Bake in preheated oven for 25-30 minutes, stirring at the half way point. 
Serve soy curls over rice or alongside a salad with a drizzle of Zhoug and Lemon Tahini sauce. 
Zhoug
1 bunch cilantro 1/4 cup olive oil the juice of half a lemon 2 cloves garlic, peeled 1/2 tsp cumin 1/2 tsp chili paste 1/2 tsp cardamom 1/2 tsp salt 1/8 tsp black pepper
Place all of the Zhoug ingredients into a blender and blend until smooth.
Lemon Tahini Sauce
1/4 cup tahini 1/4 cup water the juice of half a lemon 1 clove garlic, peeled and minced 1/2 tbsp soy sauce 1/2 tbsp maple syrup 1/2 tsp harissa paste 1/4 tsp sea salt 1/8 tsp black pepper
In a small glass mixing bowl, whisk all of the ingredients together until smooth and creamy.
