Meal #1
Last night we had Chicken Noodle Soup, Swiss chard and charred tomatoes on bread.  
The tomatoes came from a video on Bon Appetit Youtbube channel- which everyone should watch because they are great videos- and I realized I had purchased some of the exact tomatoes Brad was using-Flavor Bombs- so I made the dish without the good crusy bread. All I had was Naan in the freezer which worked but wasn’t the ideal bread for this dish. It was still delious.

I simply did what Brad did- threw 2 garlic in the husk, a dried chili and the tomatoes into a skillet (I used cast iron) with about a tablespoon of olive oil and let them cook on medium until they charred a little. Then I let everything set in a bowl with salt and pepper while I toasted the bread- 10 minutes or so.  I smashed the garlic on the cutting board and discarded the husks. I had some fresh ricotta I made (also super easy) but store bought would work. I added some olive oil and salt and papper to the riccotta, spread it on the bread and added smashed garlied mixed with the tomatoes and scattered that on the bread along with a few pieces of basil

Chicken Noodle Soup is super easy.  Poach the chicken
I use Bon Appetit’s recipe (X) which is very easy- simply add chicken and COLD water (they give you the ratios) and bring it to boil on medium.  As soon as it boils turn the breasts over and turn off the heat. Cover and let set until cooked through. I started with slighlty frozen breasts 5-15 min.  Take it out of the water when the internal temp hits 150 F or check them for doneness but cutting it open if you have to. Set aside and let cool on a plate or cuttingboard. 
You can use homemade stock like I did or store bought.  Use about 6 cups of stock. Add 4 cloves of garlic peeled, 6 peppercorns, 2 bayleaf, 2 carrots cut into slices.  I added some celery I had that was going bad but didn’t cut it so I could remove it before I added the noodles since I don’t really like celery all that much.

let the carrots and garlic cook for 5 minutes and then add Noodles.  I add about half a package of noodles for 4-5 people.  Cook according to package instructions.  Taste and add salt and pepper.  
 When chicken is cool enough you can either use two forks or your fingers to shred it into bite sized pieces.

When the noodles are done toss in the chicken and taste again for seasoning and add salt if needled and you’re done 
The last dish we had was Swiss Chard done super simple.  Wash the chard and pull the leaves from the harder stem.  Keep the both in two piles.  Cut the stem portion into small pieces- I split the bottom of stem into two pieces and then cut into 1/4 inch pieces. Mince 4 garlic cloves using a garlic press or with a knife.  Finally cut the leaves into bite sized pieces

Saute the stems and the garlic in 1 tablespoon olive oil in a medium sized skilled over medium heat.

Saute for 5 minutes.  When they look like this, add the leaves

Saute utntil they shrink- they will wilt down to nothing.

You know YouTube’s algorithm is fucked when it starts recommending you videos on stuff you HAVE LITERALLY NEVER watched before. Or watched ONCE. As opposed to stuff you’d actually be interested in.
Or, even better (worse?), stuff on a language you don’t speak.
No YouTube, I do not, in fact, speak Russian. Nor am I interested in Minecraft. And I’m especially not interested in watching Minecraft videos in Russian. FFS.
