Learn more about two beers, made from the same barrels, in Utopias and Utopias Barrel-aged World Wide Stout.
Long before the stainless-steel fermenters, there was the wooden barrel.
A brewer's best-friend, the wooden barrel was often used to age recently brewed ales or lagers. But it was also the means for transportation and delivery of said ales and lagers, at pubs, inn, and taverns throughout the world. Nowadays, wooden barrels remain primarily associated with creating spontaneous, wild, or secondary fermented beers. If you need further proof, just walk the aisles of your nearby grocery store or specialty bottle shop, to see beers with names like Lambic, Foedere, or, yeah, barrel-aged.
These beers, at one point, were conceived, brewed, aged in a fermenter or aged in a barrel, aided by yeast, possibly adjuncts (like fruit, herbs or spices), and possibly in a barrel-previously used to make spirits or wine. Now if all of this is a novelty and you’ve heard of wine barrel-aged this, or bourbon barrel-aged that, then when was the last time you heard about a beer, which was aged in wooden barrels, previously used to make an even stronger beer? If you’ve not heard of this, then you’ve not heard of Utopias barrel-aged World Wide Stout, made by the dedicated brewers of Dogfish Head Craft Brewery in Milton, Delaware. Oh, you’ve not heard of Utopias?

So what’s a Utopias anyways?!
Made by the brewers of iconic Boston brewery, Boston Beer Company’s Samuel Adams, Utopias was released in 2002, proving that beer isn't just for backyard barbecues, ball games, or tailgates. With an ABV (alcohol by volume) averaging some 28% (or 56 proof), Utopias is not only one of the highest ABV beers out there but also one of the most expensive at nearly $250. Showcased in a 25.6 fluid ounce bottle, surrounded by a copper jacket and in the shape of a copper kettle brewery, Utopias remains a hard to find and still talked about beer.
Yeah, despite non-beer drinkers comparing it to port or sherry, this beer isn’t produced in stainless-steel fermenters, but is instead aged in wood barrels, many of which were used to produce everything from spirits (like bourbon, cognac, rum, aquavit, whiskey, or whisky) but also in port and, yeah, sherry barrels. The result is a beer that will not only make you recall your last glass of port or sherry but also a short stack of pancakes on a warm, sunlit morning. Each release we hand-select single-use bourbon casks from our friends at the award-winning Buffalo Trace Distillery. The beer then ages even longer in a variety of spirit barrels including Bourbon, Wine, Port, and more, each gifting their unique flavors and history to Utopias. For 2021, we used a combination of 86 different barrels. We began barrel-aging beer in 1993 with the Triple Bock. Today, our techniques have led to the lunatic fringe of brewing, one of the oldest, strongest, most extreme beers in the world.
Some of the beer in this extreme reserve spends up to 30 years in bourbon barrels, which makes for a pretty tough customer. It’s inefficient, but the long road to your glass means Utopias has earned a complex character for a drinking experience above the ordinary.
Utopias is a true community effort. Our head brewers want it to pass through every Sam Adams brewery. We brew, age, and blend in various locations across the country, before a time-intensive hand-bottling process where we personally make sure each bottle of Utopias is given special attention.
Brewed with multiple yeast strains, including those used in champagne, and designed to sustain itself in the highest of alcoholic environments, Utopias remains a beer despite the ABV. But it’s not just the use of high abv-tolerant yeast, or the barrels from which it’s aged in, but also the use of a blending program that takes full advantage of Samuel Adams’ library of wood-aged beers, some going back 30 years.
Using a similar process, distillers, and vintners employ, the brewers and sensory experts at Samuel Adams, measure volumes of aged Utopias from various barrels and various years (even decades). Taking careful notes for aroma, flavor, mouthfeel, and finish, and measuring volumes to take full advantage of a perceived strength or flaw, the staff eventually settle on a ratio, resulting in that year’s Utopias. So, to better understand what makes Utopias still talked about, after all these years, we sought out a bottle which just turned out to be 2021’s edition aged with cherries. And our thoughts? Well, read below.

First off, Utopias remains as it has in the past, a still or an ale with no visible carbonation. Because of this, you get little in the way of whipped, foamy caps on top. What remains in the glass is burgundy, but clear. While the lack of carbonation might be a turnoff, it’s important to recognize that this still beer will not change in characteristics nor will it take on carbonation.
Swirling there are notes of maple, vanilla, and some dark fruit.
Sipping, you get upfront notes of maple, a hint of apricot, dark cherries, along with notes of oak, maple, and vanilla. Overall, there is a definite strong mouthfeel, and a lingering alcoholic burn.
If we were to associate this with a moment during the day or night, we’d probably pair it with an energetic fireplace, after a three-course meal, accompanied by a black forest cake, or maybe while relaxing in the living room as a gentle snow falls against the night sky. But we haven’t even gotten to what this beer does to Dogfish Head’s iconic World Wide Stout.

World Wide Stout, one of the first extreme beers.
Released in 1999, World Wide Stout was Dogfish Head Craft Brewery’s founder Sam Calagione, shot across the bow to conventional thinking that beer had to be light, sessionable, or under 10%.
Brewed with copious amounts of barley, World Wide Stout remains one of the few imperial stouts which challenge imbibers' patience, to put a few bottles away in their closets, basements, or buried in the backyard. Although the results will never replicate that first sip, from that year’s release, World Wide Stout is one of those beers that will never be retired by Dogfish Head’s brewery staff. What’s more the brewery, like Samuel Adams, has aged this beer in various wooden barrels.
Besides the usual bourbon barrels, World Wide Stout by Dogfish Head has aged, among other things, in previous use oak-aged vanilla bean barrels.
What’s even more remarkable is the beer’s ABV fluctuates from year to year, with the lowest being around 15% and the high being around the 20% range.

World Wide Stout becomes Utopias Barrel-aged World Wide Stout
Starting with Utopias barrels that were only recently emptied, Dogfish Head takes ownership of these wet barrels (meaning they still have Utopias), before receiving large volumes of World Wide Stout. After being filled to the brim, they are capped, remaining (mostly) untouched for some 7 months. During this time, the brewers of Dogfish Head will take occasional samples from each barrel, evaluating the characteristics gained from the Utopias barrels and how this interplays with Dogfish Head’s World Wide Stout. Once the beer is deemed ready, they empty these barrels, emptying them into 12-ounce bottles, each kissed with the Dogfish Head’s logo, a shark, and the words World Wide Stout, in gold lettering. But how does it taste?

Utopias Barrel-aged World Wide Stout, our thoughts.
With its iconic, neon, yellow-green cap, World Wide Stout initially pours with a vigorous head, before finishing still, almost matching the iconic stillness found in Utopias by Samuel Adams.
Dark as pitch and with little to no light escaping, there is a soothing calm about how this beer’s surface. Obviously, we would prefer an imperial stout to have a fogbank of khaki-white head, but the lack of strong carbonation isn’t a negative as we dive deeper.
Swirling, one recalls aromatic notes of dark roasted coffee, hints of baking chocolate.
Sipping, there are upfront notes of dark chocolate, sweet dark fruit, before vanilla and honeycomb make an appearance. Overall Utopias barrel-aged World Wide Stout, has a medium to strong mouthfeel, a strong (like 17.7% ABV) alcoholic warmth, and a lingering finish akin to consuming a black forest cake, with the cherry replaced by something more alcoholic.

When enjoying these side by side, there is a definite marriage of maple, dark fruit, and notes recovered from the previous use barrels, first used to age Utopias and then World Wide Stout. Overall, this is a fun project between two perennial breweries in Sam Calagione’s Dogfish Head and Jim Koch’s Samuel Adams.
At 17.7% ABV (alcohol by volume), you might be lucky to come across a 12-ounce bottle or four-pack of Utopias barrel-aged World Wide Stout, wherever you find Dogfish Head’s regular World Wide Stout. While at 28% ABV, Samuel Adams’ Utopias 2021, aged on Balaton Cherries from Michigan and in Sauternes French Oak Wine casks, is available at select retailers throughout the country.

there’s an extended scene i’m still working on for this, but there was a lot of stuff going on offline today (including internet blips) that ultimately caused me to leave off with the SFW version so i hope no one is too disappointed. XD

Perhaps the most self-evident observation that could be made of the small house nestled in its small copse in the Shroud upon first entry was that its adventuring inhabitant -- or inhabitants -- were either avid readers or wished any potential guests they might have to believe that was the case. The sitting-room with its tall shelves of books was immediately visible from the front entry, and one might be forgiven for assuming there was no possible way every tome on its shelves had been read.
In point of fact, the Warrior of Light was an avid reader when the subject fascinated her. However, this particular book was not the sort that normally caught her eye. She had only attempted to peruse its contents once, and that was yesterday when she had decided to outline today’s plan of attack. Last year, Nero had treated her to dinner - among other things - and she had completely forgotten the occasion.
Well, she was not going to be caught unawares by the holiday this year. Today was Valentione’s Day and by some miracle, confluence of the fates, or what-have-you, she had managed to capture a small handful of days to herself in order to prepare. The flower arrangements were simplicity itself; those were already set on the table along with the gift she’d commissioned, wrapped neatly in its box- part of his gift, anyroad- and now all she had to do was see to the dinner.
And the chocolates.
...Aurelia wasn’t nearly as sure about the chocolates.
Making them herself had seemed like a wonderful idea at the time, but she was starting to regret it. Warrior of Light or not, she really wasn’t what one would call the most accomplished culinarian, unlike Nero, who seemed to take the same meticulous approach to cooking as he did to his research and his engineering. He had grown up in a poor farming village, had learned how to make food alongside the grandmother who had raised him in order to help feed his family.
Whereas Aurelia had- well. As the daughter of a wealthy landed gentleman - even if he was a younger son - her upbringing had been very different. Her lady-lessons had not included such things; the husband her family selected for her would have hired a cook and a housekeeper in the interest of keeping up appearances. And as a child, she had wanted to climb trees and grow flowers and be a scholar, the seven hells take sweating over a stove or bending over a distaff until her fingers ached.
Too late for regrets now, she supposed.
Aurelia squinted doubtfully at the illustrated page, then back to the bubbling mess in the pot. It all felt rather simple, she thought. She’d never made truffles before, true, but only four ingredients? Surely she could do better than that. Chocolates with no embellishments seemed so-
“Well,” she muttered, “perhaps it’s fine if it’s a little uninspired.”
Though on second thought, watching the cocoa melt down in the saucepan: perhaps some brandy wouldn’t hurt? Culinarians put spirits in sweets and other things all the time, and she remembered some treats she’d had in the Crystarium with Lakeland brandywine in them that had been absolutely amazing.
With that decision made, she turned to make her way down the stairs towards her wine cellar, but the moment she set foot on the stairs, her linkpearl sounded off. Frowning faintly, she tapped the small device alongside the shell of her ear.
“Yes?”
“Oh, Relia!” Tataru’s voice, perhaps just a touch too bright, chirped across the aetheric link. “So sorry to trouble you! I know you asked for no calls unless it was an emergency.”
“So I did. Is aught amiss?” She glanced over one shoulder as she made her way down the stairs towards the cellar door, too impatient and worried about the state of her cooking chocolate to pay much attention.
“Oh, not at all! This isn’t a work call, I promise. It’s just, er…”
Aurelia knew the sound of Tataru’s ‘I’m about to ask you for a favor’ voice when she heard it. “Go on.”
“I was going through my measurement book for sewing patterns - for no reason whatsoever! - and realized I was missing one of yours. The, um, the bust.”
Her brows furrowed once more, this time in mild disbelief.
“...The bust.”
“Yes.”
“Just the bust size is missing. Somehow.” Damn, where had she put that cognac?
“Yes.”
Right. Well, you're clearly up to something, old friend.
She supposed she could grill Tataru for the details of whatever scheme she’d hatched, but attempting to pick apart the reasoning behind the Lalafell’s choice to call her with an extremely transparent lie would be better done while she was not preoccupied. In the meantime Aurelia didn’t see any harm in giving her a couple of measurements - she had, after all, entrusted her with them once before.

But it was a question she could ask herself later. Right now she had chocolates to make.
She trotted happily up the stairs, bottle in one victorious hand… only to see an alarming amount of smoke billowing from the stovetop.
“Oh swiving Twelve- ” She made haste to the range and switched it off, then snatched one of the mitts from the nearby wall mount to wave back the smoke. Most of the pan’s contents appeared salvageable, thankfully, but it didn’t seem like enough. She wanted to make another batch, but if she didn’t have the extra ingredients-
Wait. I can just melt down some of the chocolate chips I saw in that bag in the dry pantry, can’t I? And just add the brandy in while it’s melting?
Aurelia turned towards the shelves of dry goods, somewhat cheered by the thought that she could spare herself a trip to the markets, at the very least. The bag was at the back of the very top shelf and she had to stretch a considerable bit to reach it, but she managed to pull it down without spilling any of its contents.
She set aside the saucepan with its half-scorched contents, reached under the counter for a fresh pan, and poured in the chocolate, then paused. She probably didn’t need the cocoa butter if all she was doing was melting pre-made chips-- she’d have to pour in the cream while it was still hot but maybe that was fine, maybe it would even help melt the chocolate faster. Then “a splash of spirits,” whatever that meant. To taste, perhaps?
Hmm. Speaking of taste, which patisserie was it back in the capital that used to put chilies in their truffles...?
Her good mood returned as she acted upon that stray impulse; she plucked one of the chilies from its bag and started cutting into fine pieces to add to the new mix. Of course, she might be getting a touch ahead of herself, but surely it would turn out alright in the end. These were all flavors she knew would work in chocolates so a little deviation here and there wouldn’t hurt.
The longcase chronometer in the parlor struck four just as she was stirring the pieces into the half-melted lumps.
Hells. She still had to put the noodles on to cook and she hadn’t even started the sauce yet. If she wanted everything to be ready in order to spring her surprise, she’d have to work fast.
That was all right. She’d worked under far worse conditions before.
With a determined nod, Aurelia tucked a stray tendril of hair back behind her ear, turned up the heat on the cream until it began to bubble, and uncorked the cognac bottle. ~*~
Nero was not sure exactly what he should have expected when he opened the cottage door, but the smell of burnt sugar and the sight of a darkened kitchen was concerning, to say the least.
He set the box that had been in his hands upon the nearby table (where, he noted, there was a wrapped box and a vase of fresh-cut flowers she had likely arranged herself) and ventured into the parlor. He found Aurelia sitting in one corner of the sofa, curled in a tight ball with her arms wrapped about her legs and her face buried in her knees. “Before you say anything,” she said, her voice muffled, “don’t.”
His brows arched.
“That bad, is it?”
“You have to ask? You can surely smell it for yourself.”
“I can.” Though he knew it was unwise, he cracked a grin. “...Did you perchance fight an eikon in the kitchen? Is that my surprise?”
Nero received precisely the answer he had expected for that particular bit of cheek: a sound swat to the face with one of the sofa pillows. He ouched as she drew her hand back and made an exaggerated face at her, but Aurelia didn’t take the bait. Instead she made a breathy, angry little hmph!, the sound muffled against her thighs, and tried to angle herself away from his perusal to face the apple-green brocade which covered the sofa’s frame.
“Sweetling-”
“Don’t talk to me,” she huffed. “I’m angry.”
“Yes, I can see that.”
“I’ve made a mess of everything.”
“I don’t see how- well yes, alright, I suppose the kitchen is a bit of a disaster. But it’s naught that can’t be salvaged.” He sat down next to her and smelled chocolate and… something alcoholic. “What happened? You look absolutely gutted.”
Finally she lifted her chin to look at him. Her blue eyes were very dark and very wide and shimmered with suspicious wetness.
"I was going to make dinner for you," she groaned. "I had flowers and a present and I was trying to make-”
“Chocolates.” Aurelia’s face was hard to see in the darkness but he could see her chin bob. “I take it something went awry.”
“A great lot of somethings. And then I was so busy trying to fix what had gone wrong that I burned dinner and-”
“Hush. Come here.” Reluctantly she let him untangle her from her sulk and pull her into his lap, like a tired kitten. “You know I appreciate the gesture, but it wasn't necessary.”
“Yes, it was!"
"How so?"
"I completely forgot last year. You went to all that trouble and I forgot. So I wanted to make it up to you. I thought if I could make it as special as possible-.... never mind.” Aurelia lifted her hands and stared at her chocolate-stained fingers with a disconsolate sigh. “...I’ll clean up the kitchen as soon as I’ve my wits about me.”
“You will do no such thing.” Nero kissed her on the nose, then gave it a tiny tap with his index finger. “You are going to go downstairs and run yourself a bath while I clean the kitchen- once I’ve dialed Mistress Tataru and thanked her for her very timely assistance, that is.”
So that was what that call was about! Seven hells, what had Tataru told him? The look on his face was that of a man hiding an extremely exciting secret, and she didn’t know whether to be apprehensive or curious.
Cautiously, she chose the letter.
“Dare I ask?”
“You can ask all you like,” he grinned, that smile that was so often in turns endearing and infuriating. “Whether you’ll get an answer before I wish to give it remains to be seen.”
Aurelia sighed but felt her lips curve in a smile, some of her humor returning. “Surely cleaning the house was not on your docket for the evening.”
“Of course it wasn’t- but there's really only been a slight change of plans. Once you've had a chance to clean up, you're going to open that gift, and then I’m going to show you how to make proper chocolate-- and how to put it to far more interesting uses than homemade truffles.” Her cheeks felt ablaze with color, and as she watched a mischievous curl crept slowly into his smile. “One good turn deserves another, after all.”
“Is this where I say ‘happy Valentione’s Day’ or somesuch?”
His lips brushed her cheek.
“It's a start,” he said. "And if it hasn't been happy thus far, I am quite confident I can make it so."

View the Mayor’s Christmas tree in Crown Center, then wander over to see the Christmas decorations and giant Christmas tree inside Union Station. It’s all a magical sight. Crown Center even has an iceskating rink for those brave enough to take on the ice! For those a little less sure, enjoy browsing the shops, go to a movie, or explore Legoland!

A farm-to-table modern bistro serving Kansas City classics with a bit of flare. Dimly lit, the atmosphere is perfect for a nice date. The food does not disappoint! We were obsessed with their cocktails here. Matthew ordered the Barrel-Aged Old Square which included Union Horse Rye, Cognac, Dolin Vermouth Rouge, Benedictine, bitters and a flamed orange (an actual orange ON FIRE!). Michael tried the Oaxacan Autumn which included Espolón Blanco Tequila, Sombra Mezcal, with a little lemon, apple cider and apricot. Both were incredible!

Novel has some serious dishes and small plates that pack a punch of interesting flavors. We recommend trying a variety of the small dishes, then sharing a main … but I suppose that depends on how hungry you are! We shared an assortment of dishes (shown above in order) — Steamed buns with poached shrimp, tempura flakes and spicy mayo. Calamari marinated in lime and jalapeño, salad of bitter lettuces, green chickpeas, toasted hazelnuts and a creamy spicy dressing. White bolognese tagliatelle with pork, veal, sweetbreads, parmesan cheese and fresh basil. And lastly the Gnochetti with sheep’s milk cheese, spicy lamb sausage, black beans and lacinato kale.
The Perfect Sunday Brunch at Ça Va
What can we say about Ça Va? The atmosphere is absolutely lovely. The food is delicious. The coffee is the best we experienced during our trip, and the staff is so fun. Ça Va specializes in different kinds of crepes and quiche, though their menu changes weekly to feature the best local and seasonal ingredients. Ça Va is only open for brunch on Sundays, and it is well known throughout the city. Put this in your itinerary so you can call ahead and make a reservation and get in on the action!
Vegan Friendly Meals at True Food Kitchen
This is the first place we ate once we arrived in Kansas City! Located in the Country Club Plaza, this place is perfect for happy hour appetizers and drinks. Everything on the happy hour menu was $5, and it was too good to resist! Big portions, great prices, and amazing flavor! Could not be happier with this fun mid-shopping stop.

If you’re lucky enough to make it to the Miracle Pop-Up Bar in Kansas City’s Country Club Plaza, you will not be disappointed. It is decorated to the nines, has a line out the door, and is absolutely worth the wait! This bar is only open from Thanksgiving to Christmas Eve. You won’t find it on Google or Apple Maps, but the Country Club Plaza location is right at 4087 Jefferson St., next to Parkway Social Kitchen.

Chinese New Year Celebration Menu at Oriental Palace
Oriental Palace Seafood Restaurant & Banquet Hall is inviting everyone to celebrate the Year of the Fire Rooster with a captivating Celebration Menu specially crafted by Master Chef Chiu-Fai Tsoi. This special set menu is steeped in symbolism and ritual as the dishes are thoroughly chosen based on traditional Chinese beliefs for their respective symbolic meanings. It is available from January 27 to February 26, 2017 so there is still time to enjoy this special and auspicious set with the entire family.
Oriental Palace is located at 148 Tomas Morato at the corner of Scout de Guia Street and just beside Jollibee. The restaurant is one of the biggest Chinese restaurants in Quezon City and is a popular venue for birthday celebrations and special occasions among the Filipino-Chinese community living in the city. Oriental Palace traces its roots all the way back to 1978 when a young cook from Hong Kong named Henry Chua started a small noodle and dimsum shop named Wah Yuen (Chinese Garden) in Escolta. Henry’s son Chris inherited his father’s gift and passion for good food and excellent cooking as they opened Oriental Palace which showcases the Chua family’s artisanship in delivering authentic Chinese cuisine to their loyal diners.
The huge restaurant can accommodate big events with its total capacity of 700-800 guests. It is divided into several areas which includes the main dining hall, adjustable private function rooms, and a shabu-shabu area. The Hungry Kat was invited to sample the Celebration Menu courtesy of guest chef Chiu-Fai Tsoi who personally attended to our banquet.
Master Chef Tsoi has worked at several distinguished establishments in various cities all over the world such as Hyatt Regency Tokyo, Hong Kong Disneyland Resort and The Ritz-Carlton Beijing. With over 30 years of Chinese cooking experience, he has also published a series of five cookbooks that highlight his specialties. Also dining together with us that evening was owner Chris Chua, who also serves as the restaurant manager, as he shared with us the history of their family’s passion for cooking.
Our dinner was also made more special because it was accompanied by endless rounds of Hennessy X.O. Cognac to spice up the evening. Celebrations are definitely better with Hennessy.
Oriental Palace also offers a wide selection of beverages including fresh fruit juices, shakes and sodas like this Fresh Coconut Juice and Oreo Chocolate Frappe.
We started our Year of the Fire Rooster Celebration Menu with the Fresh Prawn Salad in Golden Cup. This dish came in a grandiose golden tray highlighted with special effects to symbolize a happy new year ahead. The soft and tender prawn slices came on top of a light and refreshing salad which is served in a cute pastry shell.
Next was the Baked Scallop with Cheese which also came with a very beautiful display. I like the cheesy way they prepared these scallops and it is definitely an upgrade over the basic scallop dish. The scallops are said to bring good fortune and increased wealth, so I think l’ll eat a few more of these.
We also had a soup course called the Tai Chi Seafood Bisque. Each individual bowl had its own burner to keep the soup warm and hot. It contained a hearty medley of seafood chunks in a creamy and delightful broth made with spinach and pumpkin.
A healthier part of the Celebration Menu would be the Hong Kong Choy Sum with Creamy Squash Puree. Eating vegetables will obviously bring better health, so this is what I should be having more of.
