More JJBA HCs from my AU:
Sorbet & Gelato
Gelato is basically REALLY into westerns. Like, a lot - he taught himself how to speak like a cowboy because he got really into Spaghetti Westerns and American westerns when he was young. He likes to pretend he and Sorbet are like a Bonnie & Clyde type deal.
Gelato's stand is Whiskey River - it's useful as a form of interrogation and assassination when paired with Sorbet's Badfinger.
Whiskey River's ability is to convert perspiration into an alcohol that absorbs into the body. Basically, if you're locked into a humid chamber or sweating a lot from battle - you're gonna end up getting intoxicated. This was partially inspired by Harvest injecting Okuyasu and Josuke with spirits in DiU.
Sorbet's Badfinger manifests as a ghoulish third arm that attaches to a victim and lures them towards deaths that end up looking like a suicide. Have a gun on you? It'll try to yoink that. Near a busy street? It'll try to drag you into traffic.
When Badfinger is paired with Whiskey River, it often makes an assassination target appear to have gotten drunk and taken their own life, meaning it's rather subtle form of taking out a target. (Looking at you, Formaggio, putting shrunken cars into people's fucking drinks...)
Plus, Whiskey River can be used to interrogate a target for information before their demise - Sorbet likes to try and get cash out of people before they die.
As for Sorbet's personality - he's pretty greedy (as is hinted at in canon) but is otherwise a pretty straight-cut guy. He claims to "put up with" Gelato's western obsession, but he does love it in secret.
As for how they act with their team, well, they kind of act a bit narcissistic in terms of thinking that they're better than the rest of them, but all in all are both in Passione's business for the money. When the cash stops flowing - well, we saw what happened there.
Their loyalties lie to whoever's gonna make them rich, not necessarily solely to Risotto or Passione as a whole. But, they still do hold some level of respect for their team members who show cunning and skill.

Song Review: Willie Nelson - “Whiskey River” (“Colbert”)
The studio audience rose and chanted, Willie!, Willie!
And for good reason. For the folks who gathered to witness a taping of “the Late Show with Stephen Colbert” were treated to a rambunctious rafting trip down Willie Nelson’s “Whiskey River” - a powerful version that defied Nelson’s 90 years as he fanned Trigger’s strings and was in full command of his band.
So when Nelson played behind and sung raspily ahead of the beat, it seemed clear this was just a continuation of his normal course of business as opposed to a sign of aging.

Song Review: Ray Wylie Hubbard - “Whiskey River” (Live, May 1, 2022)
Ray Wylie Hubbard’s in-concert cover of “Whiskey River” is just perfect.
Set to a bluesy swagger with country-and-western undertones - dig the pedal steel - the track finds the gravelly Hubbard backed by a chorus of female backgrounds. And the track flows flawlessly.
It comes from the forthcoming One Night in Texas: The Next Waltz’s Tribute to the Red Headed Stranger, due April 28. The album contains the titular May 1, 2022, show that featured Nathaniel Rateliff, Margo Price, Steve Earle, Robert Earl Keen and Sheryl Crow among others.
If the other guests are even remotely as successful as Hubbard, this thing is going to smoke.
