Ooooh, tough question! I'm kinda stuck between the crab and armadillo personally, the penguin design is cute but I don't really care about boats going faster since they already go pretty fast imo. The only true upside I see to penguins is giving more life to frozen-themed biomes, which while nice and long overdue, is not enough to pique my interest sadly.

On one hand I want the crab because having the block reach extended would be a GODSEND, though there is the issue of how it would work in execution. I really hope that concept doesn't simply require an inventory slot because that's getting real old, the inventory needs an update SO badly because I always have issues carrying items on literally every single exploring or mining venture. But still, the concept seems cool, I would love to be able to reach ores further away instead of constantly building up to them, and then there's the obvious plus of building in general being a lot more manageable, especially in survival.

BUT there's also the armadillo, which has a neat function for tamed wolves in terms of crafting armor for them. If armor trims are also involved then this would be SICK, then any tamed wolves and I can be twins hehe :>. But I mean, while armor for tamed wolves is nice, I don't see TOO much use in it. I don't usually have pets in my survival worlds, and when I do I never take them anywhere because they can die so easily. I feel like armor for tamed wolves is a band-aid on a gaping wound; the core problem of them, and pets as a whole, is still present. And as a certified cat lover, I feel bad that the same can't be done for them, Mojang is biased (kidding lol).

Both the armadillo and crab have good uses though! I think I'll vote for the crab in the end, I see me finding the most use out of that mob. It would also be cool if crabs could be a food source! We really need more seafood in Minecraft, all we got at the moment is fish. I want V A R I E T Y :>.

But this doesn't mean the armadillo or even the penguin are bad mobs! I think all are nice and unique. But like I said, I see myself finding the crab to be the most useful, so I'll likely vote for that one.

so the giant squid plushie is uh, currently the bane of my existence, because I sewed the edges of the body before I put the fins in, so I now need to seam rip ~3 feet of stitching, but!!!

it's name is jeremy and I'm making it based off of this pattern from a screenshot-ed tumblr post I found on pinterest three years ago, before I had a tumblr or the confidence to make an 8 foot long giant squid plushie

It's mostly purple, except for half of the tentacles, because part of the design is that one side of each tentacle/arm is the felt you're using for the rest of the piece and then the other half is an accent fabric thing, so for the accent fabric thing I'm using yellow novelty printed chicken fabric (this was partly an excuse to buy novelty printed chicken fabric)

I wanted to use different, cuter novelty yellow printed chicken fabric but that one was out of stock so I got this one instead. it still works!! and I have an extra yard of it cause you have to order 2+ yards if you're getting it online so I am tempted to make my next project attempting to make a button down out of this. no clue if I have enough or not, that's a problem for future copper (I really really hope I have enough).
