I have baked a pan of brownies in a water bath yesterday, and can confirm it is a beautiful success! Their texture is sublime, and I have eaten far too many pieces already! Used a 9x13 baking pan double wrapped in tinfoil, in an oven-sized baking pan filled a bit more than half an inch deep with water. No noticeable difference between edge and center, and incredibly tender. 10000000/10 will definitely switch to this method from now on.

Taiwanese Castella Cake
Based on this recipe by Emojojie here
Ingredients
65g cake flour/normal flour
65g unsalted butter
65g milk
4 egg yolks
vanilla extract (small amount)
65g sugar
hot water bath
Instructions
Fold cake parchment paper into the square cake pan
Separate egg yolks from egg white
Measure 65g flour and milk separately (double check this)
Melt butter in pan/pot but not until it bubbles and is just melted right
Pour butter into the flour to mix thoroughly so it doesn't separate
Pour milk into the butter paste and mix thoroughly
Add in egg yolk to paste individually and mix with whisk
Turn on oven to pre-heat, make sure oven rack not too low
Add vinegar into meringue, mix on medium speed until foam forms, then put sugar in three batches
Continue whipping on medium speed until soft peaks form and meringue stabilizes
Boil hot water for water bath
Put some meringue into egg paste to mix, then pour the rest back into the meringue. Fold with whisk then spatula
Pour mixture into square pan and drop pan onto table to pop air bubbles.
Notes
To avoid overwhipped meringue beat at medium speed
Add sugar when foam forms in the merignue
When mixing, butter, flour & milk. First add the melted warm butter to the flour and then add milk for it to become a paste.
