Lavender Blueberry Scones

3/4 cup non-dairy milk 1/4 cup lavender syrup 1 tsp lemon extract 1 tsp pure vanilla extract
1 cup dried blueberries
3 cups all-purpose flour 2/3 cup cane sugar 1 tbsp baking powder 2 tbsp dried lavender (culinary grade)
1 cup cold salted vegan butter
Line two baking sheets with parchment paper.
In a small mixing bowl, whisk together the non-dairy milk, lavender syrup, lemon extract, and vanilla extract. Stir in the dried blueberries. Set aside.
In a large glass mixing bowl, sift together the; AP flour, cane sugar, baking powder, and dried lavender. Cut the cold butter into the dry ingredients and use your hands to fully incorporate.
Pour the wet mixture into the dry mixture and stir well then use hands to fully incorporate.
Using a 1/4 cup measurement, form approximately 18 balls. Flatten each ball gently to form discs.
Place discs on lined cookie sheets. Sprinkle each scone with a touch of cane sugar.
Place tray in freezer for 15 minutes.
Preheat the oven to 350 degrees F. Place chilled scones in preheated oven and bake for 15 minutes.
Allow to cool for a few minutes before serving.

Tea for (more than) Two
So, in a delightful turn of events, I recently got together with some pals who are also TOTALLY NORMAL about Carry On. And we did our best to replicate afternoon tea at Lady Ruth’s house. And I thought it would be kinda fun to share the results (and some recipes, which are at the end under the cut). So, here they are, featuring:
Scones! (Sour cherry, ofc.)
Cake! (Chocolate with Chocolate-Orange Buttercream featuring a super respectful remembrance, Lemon Drizzle, and Classic Victoria Sandwich.)
Lavender Earl Grey shortbread cookies!
Finger sandwiches! (Egg & cress, Lemon and prawn, Caprese on focaccia, and Coronation chicken - all on freshly baked bread.)
A selection of teas! (Including Simon's Sour Cherry looseleaf blend, Simon Snow Tea, some proper English Breakfast, and of course Earl Grey.)
A giant slab of butter! (Fancy butter.)
A basil plant!
A crucible!
A sword through the table!
Special cameos by a Watford goat (wings hidden) and Prof. Minos (tiny fluffy edition)!
Sadly, no tea trolley, but we did our best to provide glamorous staging anyway.
It was pretty much the best, guys! Highly recommend. Recipes (including dairy-free versions for many treats) below the cut.
Chocolate cake with chocolate-orange buttercream (dairy-free)
Using this recipe for the cake, and this one for the frosting (instructions at the end for a chocolate variant). A hot tip is to use egg whites instead of aquafaba (they whip up much faster) and of course to add orange zest, per AWTWB ch 89.
Lemon Drizzle Cake (dairy-free)
Using this recipe, using vegan butter and replacing the self-raising flour with some flour/baking powder/salt ratio from the internet. Garnish with Kellogg's ICEE Cereal or any other weird cereal you saw at the store and couldn't resist trying, for a little visual flair.
Classic Victoria Sandwich (dairy-free)
Using this recipe, substituting butter with vegan butter, milk with a non-dairy milk alternative (ideally soy but in this case oat milk was used), and replacing the self-raising flour with the same flour/baking powder/salt ratio from the internet as above. Regular old granulated sugar can be used in place of caster sugar. Garnished this with some black raspberries, but any attractive fruit (or weird cereal) could be used.
Sour Cherry Scones
This recipe from the Joy of Cooking does the trick! Use the GOOD butter.

Mixed berry scones & lavender-dark chocolate scones Cucumber sandwiches & radish sandwiches Rosemary-chocolate olive oil shortbread (vegan) Chocolate layer cake with rosewater buttercream frosting (this is my standard but I love it and it's my birthday party and I really have to make up for the terrible cake last weekend)
Not sure actually what teas to serve with it! Probably my favorite rose tea needs to be one of them. Maybe also a milk oolong, though I think that could be too delicate for the other flavors?

These vegan lavender lemon scones are light and fragrant, and they would be great for breakfast or afternoon tea. The flowery lavender and sour lemon make a flavor profile that is all its own and is sure to impress.
Ingredients: 2 cups all-purpose flour. 1/3 cup granulated sugar. 1 tablespoon baking powder. 1/2 teaspoon salt. 1 tablespoon culinary lavender buds. Zest of 1 lemon. 1/2 cup vegan butter, chilled and cubed. 3/4 cup non-dairy milk. 1 tablespoon lemon juice. 1 teaspoon vanilla extract.
Instructions: Warm the oven up to 400F 200C and put parchment paper on a baking sheet. Mix the flour, sugar, baking powder, salt, lavender buds, and lemon zest in a large bowl with a whisk. Mix in the vegan butter that has been chilled. You can use your fingers or a pastry cutter to cut the butter into the flour until the mixture looks like big crumbs. Put the non-dairy milk, lemon juice, and vanilla extract in a different bowl. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Be careful not to mix too much. Place the dough on a floured surface and shape it into a circle that is 1 inch thick. Cut the circle into 8 wedges with a knife. After preparing the baking sheet, put the scones on it and bake them for 15 to 18 minutes, or until they are golden brown. Take it out of the oven and let it cool down a bit before you serve it. Have fun!

things i want to bake when my brain stops being an asshole:

- Chocolate cherry shortbread for mi grandmum bc they were her fave of my Christmas cookies
- Some kind of scones w the leftover cherry juice... perhaps cherry and coconut?
#if the vegan yogurt happens to still be good i’ll use that in the scones but i’m not optimistic it’s been open a While#it makes rlly good scones though#i made blueberry muffins w that milk the other day and they were SO good#it just adds a really lovely natural but intense blueberry flavor#i didn’t get much lavender from it but that’s ok#also the cherries are the ice cream cherries in case ur wondering#idk if the juice will actually work as scone liquid but we will see#i’m worried it will turn them a weird pink color#i think i’ll cut out most of the sugar to balance#and maybe add in some oil in addition to the butter?#idk yet. the yogurt would actually be perfect in those if it’s still good#i never see scone recipes use juice or water in plave of milk#and they USUALLY call for smthn high fat like cream or buttermilk#so i think the fat content probably keeps them moist?#so yogurt would mimic that well. i worry abt oil bc it might change the consistency#i wonder if i could also melt some butter to mix in?? in addition to what i cut in?#idk we will see what speaks to me when we get there

I hosted a tea party for some of my crew last night and it went SO well!!!
I busted my ass making the food all day and then it was such an amazing turnout. All of the food was gluten and dairy free. I made:
- Cucumber and fresh herb cream cheese sanwiches
- Egg salad sandwiches
- Blackberry scones with clotted cream (I was SO excited find an easy vegan recipe for it) and lemon curd
- Cherry jalapeño jelly thumbprint cookies (with homemade jelly a very nice old coworker gifted me)
- Lavender tea cake with lemon glaze (one of my go-to recipes)
This was definitely the largest baking project I've ever attempted and I'm SO happy everything turned out well. I was especially proud of my scones because I can never find good gluten free scones AND these are vegan, so I can share them with my roommate and her boyfriend, who were bummed that they missed the party.
My other roommate and one of his crewmates got home after a night of drinking (accompanied by his supervisor who is an absolute saint for making sure they got home safely) and they ate some of my pastries to help with the alcohol, and they gave rave reviews of my work. His crewmate wants to be invited to the next tea party.
[Safety note: my area is in a lightened lock down phase so small multi-household gatherings are allowed and these are people I spend 40+ hours a week with anyway]
Oh, and I used my cow tea pot for the first time, alongside my chicken tea set that my late grandmother gave me. 💜

this was literally my first time experimenting with baking playing it by ear style so like literally , literally - change this to your tastes lmao preheat your fucking oven . preheat it to 325
3/4 cups of milk ( or almond milk if your vegan like me ; i also added like 2 extra tablespoons just for fuck all reason so )
you can use any amount of lavender that you choose depending on your preference but i’m gonna tell you i used maybe about three tablespoons worth ( that’s a rough estimate the local thrift market near me is weirdly OUT of like 2/3 of it’s spices lmfao so i could only pick up a little one inch by one inch box , and the flavor isn’t like. super potent ?? but it’s pleasantly there so going a little over won’t hurt ) but if you’re gonna use any that’s not ground down to a fine texture i recommend pestling it ( if you can get your hands on a paste that’d probably be preferable ; i just found adding a little more milk and flour to the mix to make my own easier tbh idk it seemed easier at the time ) mix it in with the milk and your dough and just stir the fucking hell out of it until it’s thick and sticky and a pain in the ass flour your counter or a board and knead it about idk for three minutes or until the lavender looks evenly dispersed throughout the dough ; section it into three parts once you’re satisfied and then take each part and flatten them into about five inch diameter roundlets with the middle slightly raised , and then cut those into four cute little buddies to stick on your baking sheet leave those dudes in there for mmmmm idk i’d say maybe 15 to 20 minutes or just eyeball it like i did and take it out whenever you feel like man i took mine out until the bottoms browned , you might wanna wait until they’re lightly browned because the bottoms of mine burned a little >:/ fuck man then you’re done you got lavender scones pour some honey on those puppies and go to town idk

Brag moment for a second....but I have one of the best friends a gal could ask for! My bestie/soul sister/PIC whatever you want to call it, the me threw me BEST bridal shower, and I just have to document this so the world can see!
The original idea started because I wanted something fun, and to connect with some of my future in laws, and a high tea afternoon at my future mother in laws seemed like the perfect venue, the backyard was newly redone, with enough room for at least two dozen people, perfect!
The food. Any afternoon tea needs the perfect finger foods, we stuck with salads, cookies, sandwiches and scones. At first the big dream was to make it all, but time is precious. And we got it catered by Sugar Birds in Los Angeles. The food was great, they took the order four days before, and were even early to drop off; would recommend!
The Desserts. What is tea without cake? Cupcakes that is. And cookies too. All the cookies. Here we may have gone overboard, but the world can never have enough sweet things! Rose cupcakes, and gorgeous sugar cookies by Sweet Art Bakeshop in Moorpark. What is lovely is this shop is owned by high school friends, and they delivered with some beautiful work that left our guests speechless! The rest of the cookies were from Trader Joe’s in both vegan and non vegan varieties.
Plates/decorations. We used real plates and tea cups for this event! A lot is being used for my wedding, but we used them double for this event, including most of the linens, and they looked lovely! All were found via Craigslist/garage sales/eBay, for pennies per peice. Sure it was a lot more work to wash and pack before and after; but it is my most cherished work with how much people enjoyed the set ups and mix matched sets! The paper napkins/hanging decos and plastic cuttlerly were purchased via amazon. (Key yo planning a party in two different cities)
Bevarages. Well of course tea! We had a whole tea mixing station with boiling water and all kinds of tea to blend together. We had tea bases of black, green and chamomile; and then a divided tray with different mix ins to add to your blend. Like rose, lavender, ginger etc. Guests could bring up their tea cups and blend together in a sachet. There was also spa water, using my Craigslist find of glasses (also being used in the upcoming wedding) which was a water spout of lemon and rosemary infused water that guests could come up and grab.
Gifts games: Tiffany planned a lot of games she found on amazon including get to know you games (in this case a Disney guess who) so guests could mingle and chat right away. Guests also had a little jar to make their own tea blends to take home, and a heart shaped infuser, which was a little hard to work. But hey, that’s amazon! There was also a photo wall that we made that guests also had fun taking photos with.
All in all, the day was litteraly picture perfect, and I hope others find some insperation from this! Pinkies our!
