di Umberto Ginanni "Ho lavorato per un giorno in un mattatoio. Per la precisione tre ore. Nella mia zona ce ne sono diversi Sono entrato alle otto e sono uscito alle 11. Sembrava dovessi entrare in un laboratorio chimico. Invece, dopo la prima mezz'ora, già tutte le finte raccomandazioni del datore di lavoro erano andate a farsi benedire. Le cose che mi avevano fatto leggere, per farmi sentire di essere in un'azienda rispettabile, erano miseramente fallite. Mi ricordo che dicevano più o meno così: “Il nostro protocollo fornisce un impianto di macellazione a bollo “M” CE con capacità di 30 animali adulti all'ora. Dal recinto gli animali vengono fatti passare in un corridoio dove vengono visitati, poi schedati e preparati all'etichettatura. L'impianto è dotato di “tripperia” con le relative fasi di pulitura e cottura. Un'ulteriore visita determina la destinazione delle carcasse, i soggetti con grosse anomalie sanitarie sono mandati alla distruzione, mentre le mezzane idonee vengono dotate di bollo sanitario. Segue la pesatura con bilancia aerea computerizzata e poi il raffreddamento prima a +4° e successivamente in celle frigorifere nelle quali le mezzene sono conservate per un tempo che varia a seconda della categoria merceologica...”. Parole. Parole che nascondevano l'uccisione cruenta di esseri viventi privati di ogni dignità. Occhi neri lucidi che si gonfiavano fino ad esplodere zampe che tremavano tanto da far rumore. Urla strazianti di dolore, di ricerca di aiuto, diverse dalle nostre, che tutti facevano finta di non capire. Ganci, ganci, ganci d'acciaio ovunque, laghi di sangue rosso che scolavano a fiumi nelle grate di raccolta, migliaia di chili di interiora grigie di corpi di animali diversi finite insieme, ancora calde, in calderoni giganti. Un giorno. Tre ore. 08:00 - 11:00." Long live Florentine street food!!! Today, out of the blue, for the first time in two decades, I had one of the most traditional and peasant lunches possible: Rosetta col Lampredotto and a couple of glasses of new wine... I am not a gigantic fan of offal, but this #supertuscan recipe is something everyone should try at some point in their life!!! The fourth stomach of the cow is cooked for hours w herbs, then when finally softened, it is finished in a light red sauce (usually a secret). Only the use of a traditional “Rosetta”, a round a slightly crumbly bread, is admissible! One panino, one glass of wine, 5 Euros. I thought he was mistaken, tried to ask him why he was giving me back so much change... he looked at me weird. I tried to tip him, he looked at me offended. “Hey man, what’s wrong with you? I’m selling bread and guts, that’s where I make my money. Ieri sera. Firenze. Quando sei in centro a Firenze e hai voglia di trippa e lampredotto è tappa fissa l’Osteria Tripperia Il magazzino in Piazza della Passera (serve altro?). Dal sushi di lampredotto, alle polpette, dai ravioli, agli spaghetti, qui la sua anima è quella. Bel locale, in una delle zone più intriganti di Firenze. Prezzo medio 35 € p.p.

After two months in lock down it has been so nice to be able to move beyond 200m from our homes! Florence is as beautiful as ever although it certainly is missing its buzz.
With most stores closed along with Galleries and Churches the City is looking quite desolate. Although with such beauty and architectural masterpieces we can still enjoy a lovely walk. Masks are obligatory and social distancing is still a part of life.
What I really miss is the interaction.  My morning cappucino at a local bar. . Meeting up with friends, watching kids play in the main squares. I miss meeting travellers to recount stories about our city and take them on walks to discover what our city has to offer
Today I visited the San Lorenzo Market just to see what was going on and what is open. The ground floor Growers, Butchers, fish mongers and delicatessens are open for business from Monday to Saturday 08.00am – 02.00pm. The Pasta Fresca also organizes deliveries
It is a great way to help local businesses and visit the Mercato Centrale to purchase various goods from the few vendors that are open.
Here is a list of what is open:
Bambi Tripperia – The oldest Tripe Stand and vendor in the city. Currently selling take away tripe specialties. Including their delicious Peposo di Brunelleschi and ragu. Take a look at their takeaway menu or click on their web link to see delivery options
Alimentari Perini Bruno–  Typical Tuscan IGP salume and Cheeses, with other delicacies including truffles, sundried tomato, schiacciata and more. They also have a seleciton of take away foods made fresh daily. You can see their daily menu on their facebook page

Visit  Agritusimo Annita’s wonderful stand with their local organic farm to table products.
  The Mercato Centrale will not be open until June 2020.

It’s undoubtedly Florence’s most famous sandwich shop, thanks to its thousands of beaming reviews – in 2014, All’Antico Vinaio was reviewed on TripAdvisor more times than any other restaurant in the world! The small panineria is known for its tasty albeit generously large panini made with schiacciata (flatbread) and of course plenty of Tuscan ingredients. Armando & Michele are the friendly proprietors of I due fratellini (meaning the two brothers), a pocket-sized panini shop which is just a stone’s throw from Palazzo Vecchio. Established in 1875, this tiny hole-in-the-wall has one of longest panini menus in Florence with over 30 options to choose from. Their sandwich ingredients and wines come from small Tuscan producers who are passionate about quality produce. A few of their popular fillings include finocchiona (a typical Tuscan salami with fennel seed), wild boar salami , cured pork back fat, pecorino cheese from Siena, salsa verde, Tuscan porchetta (roast pork), all served between Tuscan bread.

La Tripperia & Da Simone
If you consider yourself a real foodie and want to experience local delicacies, you have to try the lampredotto. Found on virtually every street in Florence, the famous Lampredotto panino consists of tripe (the cow’s fourth stomach to be exact) highly seasoned and slow-simmered in celery, carrots and onions, and usually served with salsa verde (a green sauce) on fresh bread dipped in the lampredotto juices. There are several places where you can enjoy this traditional Florentine street food, including La Tripperia in Piazza delle Cure and Da Simone in Piazza de’Nerli.
