I was CRAVING tacos recently but did not have any tortillas 😦 So I made a bowl! The base is roasted zucchini and sweet potato (chop, add olive oil, salt, pepper, and garlic powder, bake at 425 F for about 25 mins), and the “taco meat” part is tofu and black beans. Crispy beer-battered tofu combined with refreshing mango salsa, all wrapped in warm tortillas, make for a delicious and satisfying taco experience. Perfect for a meatless meal option or for anyone looking to explore new flavors!

Ingredients: 1 block tofu, drained and pressed. 1 cup all-purpose flour. 1 teaspoon garlic powder. 1 teaspoon paprika. 1/2 teaspoon salt. 1/2 teaspoon black pepper. 1 cup beer. 2 cups vegetable oil for frying. 8 small tortillas. 1 ripe mango, diced. 1/2 red onion, finely chopped. 1 jalapeno, seeded and diced. 1/4 cup fresh cilantro, chopped. Juice of 1 lime. Salt to taste.

Instructions: Slice the tofu into 1/2-inch thick rectangles. In a bowl, combine flour, garlic powder, paprika, salt, and black pepper. Slowly whisk in beer until the batter is smooth. Heat vegetable oil in a deep skillet over medium-high heat. Dip each tofu slice into the batter, letting excess drip off. Carefully place battered tofu into the hot oil and fry until golden brown and crispy, about 3-4 minutes per side. Transfer fried tofu to a paper towel-lined plate to drain excess oil. In a separate bowl, mix diced mango, red onion, jalapeno, cilantro, lime juice, and salt to make the salsa. Warm tortillas on a skillet or in the microwave. Assemble tacos by placing a couple of pieces of beer-battered tofu on each tortilla and topping with mango salsa. Serve immediately and enjoy!
