Mientras aprendo más sobre destilados de agave, mi amigo @ccuarta_el_cuarta me hizo llegar esta botella de @cimarron_tequila con origen marcado por el Número de Origen Mexicano (NOM) 1146. Este número lo asigna el gobierno mexicano a la destilería. . Esto sucede porque muchos tequilas son hechos en alrededor de 140 destilerías compartidas en todo el país, con excepción 8 que son hechos en destilerías dedicadas a su marca. También hay unas 18 destilerías adicionales que producen su propio tequila, pero no están registradas bajo el NOM. . La destilería que hace Cimarrón en todas sus variedades se llama Tequileña S.A. y se encuentra en Jalisco, y en el Top 10 de las mejores destilerías del país (según el registro). En ella hacen otras 12 marcas como Arquitecto, Cierto, Don Fulano, Don Lorenzo, Fuenteseca, Lapis, Purasangre, Tears of Llorona, Xalixco y Tres, Cuatro y Cinco. . Este Cimarron Reposado es un blend de tequila destilado en una columna doble (80%) con tequila de alambique (20%), que luego es combinado y dejado reposar durante 60 días en barricas de roble blanco americano, y finalmente embotellado a 40% alcohol. Algunas páginas dicen que su reposado alcanza los 4 meses. . En nariz tiene notas de agave (por supuesto), madera, pimienta negra, vainilla, notas de tierra y arcilla, caramelo y una ligera nota de grama recién cortada y mantequilla. En general es un tequila de aromas suaves, no muy abrasivo ni agresivo, por lo que se disfruta mucho mejor solo. . En boca nuevamente es el sabor del agave cocinado lo que domina, pero también hay una fuerte nota de pimienta, más aromática que picante. También tiene notas fuertes de madera, especias como vainilla y canela, caramelo y notas vegetales, con un retrogusto a tierra, clavo y miel. . Una experiencia interesante que sin duda realza la calidad del producto mexicano y un destilado del que quiero seguir aprendiendo. .
