Why can't I stop. It's not even coping skills anymore. It's an addiction. I do it for fun. My shorts are wet from blood. It's hard to walk, and yet I still continue to push through. Promises upon promises have been broken. Tears have been wasted on my stupid addiction.

I went on a quest through my oldest saved minecraft world 2 grab some screenshots! This was 2021 right after 1.17 released. I built this train station as though it spawned with the village, but the real project was the TRACK!
This awesome tecture pack is Mythic ++ by @fishymint on twitter!

This train track was the first big project I ever took on! And man was it big... these tracks run for several hundred kilometers... I never did finish them. After the first few months of working on this and nothing else, I thought maybe I'd try to learn worldedit. Didn't help lol

Japanese Advanced Cuisine- Week Two

Week two started with Kasturamuki practice. Matthew and I have gotten pretty good and this is definitely a technique I will be using in my future. Monday we prepared bento boxes to get us ready for when we are in Japan as Inspiration with Chef Martin. Learning about bento was pretty interesting. Traditionally, a bento is prepared to eat at a later time, so you would make dishes that are good at room temperature or refrigerated. This is not exactly what Sensei has in mind though. He wanted to teach us the more upscale way to prepare bento. The one we made is similar to what you would find at a kaiseki restaurant for lunch. We had hot dishes and a cold dish. This is not as conventional as a bento a mother would pack for her kids, but it focuses on quality. We prepared a rice dish (gohan), a raw fish dish (sashimi), a simmered dish (nimono) , and a grilled dish (yakimono). The rice dish was scattered with dried baby sardines that we prepared in a rich, syrupy, soy based sauce. The sashimi was almost identical to plates we had done previously, my carrot curl is getting way better.
Helpful Tip: You must uncurl the katsuramuki exactly how you cut it. If you uncurl it the opposite way, it will snap.
The Nimono and Yakimono was also something we had practiced multiple times and this time the flavors were really superb.

Tuesday and Wednesday were sushi days! We spent majority of Tuesday going over the process of making sushi rice. We made sushi in our last class, but this demo was more thorough. There is a few big things that I took away from these days.
1.) You must prepare the sushi rice as soon as the rice is done cooking. You want the rice hot when you add the vinegar.
2.) 30ml of sushi vinegar per 1 cup of rice.
3.) This rice is very sticky. If you want to clean off the paddle use a wet towel and keep you hand damp while handling any sushi.
The rest of the day we practiced placing different toppings (netta) onto the rice. We had the opportunity to work with the delicious Chu-toro (fatty tuna). You have to be careful when handling this fish because it is very delicate and can be melted at body temperature. It is important to prepare that sushi relatively fast.

Wednesday was our “sushi practical”. It was similar to the tempura practical in the way we took turns serving and preparing the meal. Jasper and I went first while Matthew and Eubene ate and then we switched. This was overall an incredible day. I had to much fun interacting with my team and preparing sushi with Jasper.

Thursday was a practice day for our techniques so we can lock them in place for kaiseki. We had our mushroom gohan dish again, the spinach salad with sesame dressing, puréed edamame soup, and a hojicha tea pudding. Our main course was a dish that they invented at Tsuji about 40 years ago, and it is still taught there today. When Sensei first described it, I was worried. It’s mackerel that is wraps around a Japanese style potato salad and then roasted en papillote. The aroma when you first tear open the parchment was magical. The warm potato salad was similar to mashed potato tecture and I loved it. This is definitely something I will make again in the future. The tea pudding was very delicious and I really liked the texture. Although, we made a sugar syrup to go on top and I wasnt a fan of how sweet it was. I would love to try making the pudding base into an ice cream.

Friday we remade the same dishes and completed the same menu to gain some repetition. We added dashi maki tamago to get some more practice at that and I think mine definitely turned out better than last time. We discussed briefly how we would present this if we were serving it bento style. I really enjoyed the mackerel with potato salad again.
Helpful Tip: When making Tamagoyaki, don’t rely on the chopsticks too much. It’s all in the wrist.

Bicycles are everywhere, meandering past bakeries and shops as easily as the summer sun lingers in the night sky far past children’s bedtimes. Visitors from afar are here to explore the town’s world-class architecture, museums, and hygge, the homespun Danish concept of coziness that’s gone viral just as the world finds itself on shifting geopolitical ground. Or they may just be here to find out why the city always tops perennial lists of the world’s happiest places. However dubious the distinction, it invites further study.
Our guide is designer Josephine Akvama Hoffmeyer, whose Zen sensibility could hold some answers to that question. The Danish native, who began her career as a singer, shifted focus after moving to Italy and being struck by the beauty of local handmade tiles. “I fell in love with them,” she says, “but I didn’t really like the patterns of grapes and olives.” So she did what any obsessive creative would and, in 2001, launched her own line using 120 muted, sensuous colors. “In Scandinavia, we have a simple, strict sense of patterns and a Japanese aesthetic of textiles. Mine are infinite in all four directions, across all tiles.” Made a Mano Italy was born, and four years later a Copenhagen offshoot followed. These days, Hoffmeyer is busy with a new venture, the studio File Under Pop, which launched in 2015 and added paints and “wallpaper” – handcrafted movable sheets that are typically hung a few inches in front of a wall – to complete her surface-focused arsenal. Hoffmeyer’s subtle interiors are deceptively complex, with swatches of tribal patterns appearing alongside Rothko-like resonances. Among her recent clients is Claus Meyer, a co-founder of the acclaimed Noma restaurant. Of her hometown, Hoffmeyer says, “Copenhagen has the vibe of a village. You can bike all over town; it’s easy and simple and a great place to grow up.” Here are some of her of favorite places.

Paper Island
Housing massive halls that once stored the paper for Copenhagen’s print media, this centrally located island in Inner Harbor is home to a panoply of temporary residents, including Experimentarium, a hands-on tech museum, and Copenhagen Street Food, a collection of international stands selling sustainable, from-scratch street food that can be eaten at waterside tables or inside the cavernous reclaimed buildings. You could be treated to a music or art event over lunch. “The sun is always out at Paper Island, in a way. The kids love it and the food is amazing,” Hoffmeyer says.

Finn Juhl’s House at Ordrupgaard
“Finn Juhl is one of my favorite Danish architects,” says Hoffmeyer of the eclectic 20th-century creative best known for his midcentury modern craftsmanship. “I love his private residence full of his furniture, crafted ceramics, and art pieces, decorated with oppositional colors, sometimes even four different colors in one room — and you hardly notice it,” she says. The house, though occupying its original site, became part of the Ordrupgaard Museum complex in 2008, thanks to an unexpected private donation.

“It’s is the most magnificent museum of modern art overlooking the coast and Sweden,” says Hoffmeyer of the Louisiana Museum of Modern Art, about 25 miles north of the city, featuring an exceptional collection of works by modern masters like Pablo Picasso, Louise Bourgeois, Alexander Calder, and Philip Guston. “You get it all: art, landscape, and archi tecture at the same time. I often like to stay there for half a day by myself. Everything is so subtle and silent up there, as you let beauty simply overwhelm you.”

Drop by Hoffmeyer’s showroom in Frederickstaaten to peruse her aesthetic via handcrafted tiles, wallpaper, lava stone works, and an exclusive line of paints. “I really use music a lot, because colors work together like notes,” says former singer Hoffmeyer. “One color doesn’t say anything. It’s only when you put the colors together that they happen to have a connection.” The wares can be purchased on-site, so consider taking home a few as an inspiration-packed gift for your abode.
