Classic Vanilla Cupcakes & Homemade Cream Frosting
A Cupcake or a fairy cake is a small cake designed to serve one person, which may be baked in a small thin paper or aluminum cup. Cupcakes may be topped with frosting or other cake decorations. Vanilla is a very classic cupcake flavor liked by kids of all ages. Cupcakes are easy and simple to make, which is probably a reason why there very popular. Here is a very simple and easy recipe to follow. Enjoy!
Ingredients
For Cupcake Batter
Melted Butter – ½ Cup
All Purpose Flour – 1 Cup
Icing Sugar – 1 Cup
Warm Milk – ½ Cup
Eggs – 2
Baking Powder – 1 tsp (Video may have 1 tbsp. but please take 1 tsp)
Baking Soda – ½ tsp
Salt – 1 pinch
Vanilla Essence – 1 tsp
For Frosting
Vanilla Essence – 1 tsp
Heavy Whipping Cream – 1 Cup
Icing Sugar – ½ Cup
Method:
Cupcake Batter:
Mix all dry ingredients (Flour, baking soda, baking powder and salt) and pass through a sieve. Keep Aside
In another bowl take eggs and add ½ tsp of Vanilla essence and beat the eggs for 10 mins until egg batter begins to rise and is light and fluffy.
Add icing sugar and another ½ tsp of vanilla essence and mix well
Add flour mix and milk (Add in two additions)
Mix well until a smooth batter consistency is formed. Scrape down the sides of the bowl as needed.
Pre-Heat the Oven at 350 F
Pour the batter evenly into the cupcake moulds and bake for 20 mins
If a toothpick inserted into a cupcake comes out clean, cupcakes are done.
Frosting:
In a bowl add all frosting ingredients and mix with a hand blender until stiff peak is formed
Add food coloring of your choice and mix well
Pour the frosting into a piping bag and keep aside
Cupcake decoration:
When cupcakes are baked, let these cool down for sometime
Add the frosting over the top
Sprinkle some sprinkles over the frosting and enjoy.

Ingredients:
1. Soya chunks -2 cups 2. Boiled chana dal - 1 cup 3. Salt- 1 tsp 4. Red chili powder - 1 tsp 5. Cumin/Jeera powder - 1/2 tbsp 6. Dhaniya powder - 1 Tbsp 7. Garam masala powder - 1 tsp 8. Turmeric Powder/ Haldi -1 pinch 9. Ginger garlic paste - 1 tbsp 10. Oil to fry Recipe: 1. Add soya chunks in a boiling water. Cook for 2 mins or until becomes spongy 2. Drain the water and then wash it thoroughly with cold water 3. Squeeze the soya chunks to remove the excess water 4. Grind it until medium consistency. 5. Mix it with boiled chana dal 6. Add all the spices, salt and ginger Garlic paste 7. Mix well 8. Heat the pan and add oil for frying 9. Make the flat disc and coat with corn flour. 10. Shallow fry on a medium to low heat From both sides For around 10 mins 11. Serve hot With chutney or ketchup

Naan Pizza | Flatbread Pizza | Veg and Chicken Pizza
Making pizza using naan or any other Indian flat bread as pizza base is quick, simple and delicious. Just spread the pizza sauce & lay your favorite toppings then it goes straight into the oven to bake. When my kids demand a pizza, instead of making the pizza dough from scratch using the naan bread saves lot of time & use of simple ingredients for toppings yields big flavors too. For this recipe we have used Lavash (lavasa) bread and the outcome was a perfect naan pizza. Enjoy!
Ingredients:
1. Any type of Naan Bread - 2
2. Pizza Sauce - Classic Tomato and Creamy Garlic
3. Boneless Chicken - 200 gm (Cut into small pieces)
4. Mushrooms - 3 - 4 (Cut into Slices)
5. Bell Peppers - 2 (Cut into julienne)
6. Onion - 1 (Cut into rings)
7. Olives - 5 -6
8. Tomato - 1 (Cut into Slices)
9. Mozzarella Cheese - 500 gm
10. Olive Oil
11. Dried herbs like Oregano and basil
Method:
1. Heat oil in a pan and add chicken pieces
2. Add some salt and pepper and then cook the chicken for about 3-4 mins and keep aside.
3. Now place the naan breads on the pizza trays
4. Spread tomato pizza sauce on one naan bread and creamy garlic on another naan bread.
5. Spread the cheese evenly on top of both the pizzas
6. Now spread the toppings evenly on both the pizzas and then spread the cooked chicken pieces on one of the pizzas
7. Add some more cheese on the top of the toppings
8. Add some olive oil over the top of pizzas
9. Pre-Heat the oven to 350 F and then place both the pizzas in the oven and bake for about 15 to 20 mins (depending on your oven settings)
10. Take out and top up with some dried herbs like oregano or basil and olive oil for added flavours
11. Veggie and Chicken Naan (Flatbread) Pizzas are ready!

Kashmiri Hindi Rogan Josh | Hindi Rogan Josh | Wazwan Series
Kashmiri Hindi Rogan Josh is a delicious lamb or mutton dish and is part of Kashmiri cuisine Wazwan and should not be confused with the regular Rogan Josh. That’s because Hindi Rogan Josh is milder than the original Rogan Josh but having said it has its own distinct taste and aroma and is very flavor full & is equally delicious. Recipe
Ingredients:
1. Mutton/Lamb – 2 lb
2. Garlic – 3-4 Cloves –
3. Clarified Butter/Ghee – 4 tbsp
4. Mustard Oil – 4 tbsp
5. Salt to taste
6. Onions – 1
7. Turmeric Powder – 1 tsp
8. Ginger Garlic Paste
9. Kashmiri Red Chili Powder – 2 tsp
10. Garam Masala Powder – 2 tsp
11. Saffron (Soaked in water)
12. Ginger Powder – 1 tsp
13. Fennel Powder – 1tbsp
14. Coriander Powder – 1 tsp
15. Yogurt – 500 gm - Churned
16. Hing – 1 tsp
17. Zeera – 2 tbsp
18. Cinnamon – 1 stick
19. Green cardamom – 3-4
20. Water – 2 cups
21. Dry crushed Pudina leaves
Method:
1. Pressure cook the meat for 4-5 whistles
2. Drain out all the water and soak the meat in 100 gm of yogurt and garam masala and keep aside for an hour
3. Heat mustard oil and ghee and fry onions until golden brown
4. Now add meat to it and Sauté for 4-5 mins
5. Add all spices and garlic and ginger garlic paste and sauté for 2-3 mins
6. Add salt and water and cook for about 10 mins on low flame
7. Add rest of the churned yogurt and zeera on top and mix well
8. Cook for 20 to 30 mins until meat is tender (Until 1 cup water is reduced)
9. Sprinkle some dry crushed pudina (mint) leaves

Kashmiri Tchate Haakh | Kashmiri Saag | Collard Greens Stew
Haakh in Kashmiri is also Collard Greens in English or Saag in Urdu/Hindi, belongs to the Brassica family and is THE MOST favorite vegetable of Kashmiris. No its not an over-statement. Haakh is so synonymous with Kashmiri life style that if someone asks a person if he is doing ok in life, the reply would ALWAYS be "Khewaan Panun Haakh Baati" which roughly translates into "earning enough to have Haakh and bowl of rice on the dinner table". If any Kashmiri says he doesn't like Haakh then he is not a true Kashmiri. Period.
Haakh is prepared in various ways in Kashmir, the most common is 'Haakh ti Maaz' (Collard Greens cooked with meat), 'Tchamen ti Haakh' (cooked with Cottage cheese), 'Haakh to Gaadi' (Cooked with Fish), 'Haakh ti thool' (cooked with eggs). The most basic way to cook Kashmiri Haakh is Tchate Haakh (Collard Greens Stew) and is considered the healthiest version. Haakh is also an important part of the Kashmiri royal cuisine Wazwan and is prepared in slightly different way in it.
For this video we present the most basic version of preparing haakh commonly called as Tchate Haakh or Collard Green Stew for which very few ingredients are needed. The recipe is very basic and simple but seldom do people get it right. If you cook Haakh regularly at home do let us know in comments if this was worth an effort. At least we tried our best :) Enjoy!
Recipe:
Ingredients:
1. Haakh (Collard Greens) - 1 Bunch
2. Whole Green Chilies - 3-4
3. Onion- 1 medium - Sliced finely
4. Whole dried red chilies - 3-4
5. Salt - According to taste
6. Hing (Asafetida ) - 1/2 tsp (Optional)
7. Garlic Cloves - 3-4
8. Oil - 3-4 tbsp
9. Water - 2 cups
Method:
1. Cut collard greens (haakh) leaves into half if too big and wash thoroughly in running water and keep aside.
2. Heat oil in a deep vessel and fry onions until golden brown
3. Now add water and let it boil
4. Add haakh and add all the ingredients
5. Cook uncovered on medium heat until haakh is tender or 1 cup water reduces.
Note: If your haakh is too hard then transfer to a pressure cooker and cook until 2-3 whistles.
The Tchate Haakh (Collard Green Stew) is ready and can be served with hot rice. ENJOY!!!

Tehri or Tehar (As called in local language),also called as Turmeric or Yellow rice is a ubiquitous traditional Kashmiri dish & is an important part of Kashmiri Cuisine. If you are walking around the streets of Srinagar or taking a walk in the countryside chances are that you'll find someone standing distributing a bucket of Tehri whether its a summer day or a chilly cold winter morning. In Kashmir Tehri has become associated with some event or ritual and is generally prepared during some religious occasion. For us Tehar is a sort of comfort food which is easy to make and it serves as a Saturday Brunch for us sometimes. Now a days various variations have been introduced in Tehri preparation like adding chicken/meat to it but for this video we have stuck to the basics and presented the authentic method followed. Kashmiri Palak Chicken | Chicken Spinach Curry | Palak Ti Kokur |
Palak Chicken (Murg Palak) is go to chicken recipe cooked regularly in a Kashmiri household in day to day cooking. The method of cooking may vary a little bit however the end result is almost similar. The process involves blanching spinach and then cooking fried chicken in the mashed spinach on low heat, thus keeping all the nutrients intact although some people like to make puree out of spinach, but we like to keep it coarsely mashed. This healthy recipe is ideal for kids (who otherwise throw tantrums for eating greens). Follow this quick and easy to follow recipe and enjoy the goodness of Palak Chicken combo. Recipe:
Ingredients:
1. Full Chicken - 1 (Cut into medium pieces)
2. Spinach Bunch - 1 (~700 gm) 2. Oil - Enough for deep frying chicken
3. Onion - 2 Small (Finely Chopped)
4. Oil - 5-6 tbsp (For Curry
5. Salt - 2 tsp or According to taste
6. Black Cardamom - 2
7. Cloves - 5-6
8. Garlic - 4-5
9. Whole Black Pepper - 4-5
10. Turmeric Powder - 1/2 tsp
11. Ginger Powder - 1 tsp
12. Fennel Powder - 1 tbsp
13. Red Chili Powder - 1 tsp
14. Some fried onions and Sesame seeds for garnishing
Method:
1. Boil spinach in water and blanch under cold water
2. Mash spinach coarsely with hand or using a spatula and keep aside
3. Deep fry chicken in hot oil until golden brown and keep aside
4. Fry onions on medium to low heat until light brown and add all whole spices and saute for a min or two
5. Add mashed spinach and add little bit water (1-2 tbsp) to soften the onions
6. Add red chili powder and garlic and saute for a min
7. Add water and bring it to a boil
8. Cover and cook until 1/2 cup water disappears or until chicken is tender
9. Kashmiri style Palak Chicken is ready! Serve with Rice or roti ENJOY!!!

Daniwal/Dhaniwal Korma is an integral part of traditional Kashmiri Cuisine 'Wazwan'. Dhaniwal Korma is easy to make, the process involves braising meat with yogurt and stock and thereby infusing the coriander flavors and aroma into the gravy and meat. The rest of the flavors are based on the mixture of spices like cumin, cardamom, cinnamon, garlic etc. Daniwal Korma is similar to 'Yogurt Yakhni' in many ways but the only difference is that we add a hint of turmeric powder in Daniwal Korma and also use Coriander leaves to infuse the aroma instead of the mint leaves (which are used in the Yakhni).
