James moved to the back of the store, changing the music that had been playing over the speaker. “You can complain all you want but every other store is playing Christmas music. This is a music store. We can do better.”

Chiara had forgotten how beautiful Christmas time was here in Baberton. The markets. The lights. London had been beautiful as well, but it didn’t have the charm that her old hometown had around this time. Honestly she never thought she would be back, yet here she was. At least she got to enjoy her favorite time of year here as her first celebration of returning. Walking through the market she glanced at all the little trinkets and ornaments for sale. She kept her eyes peeled for anyone she may recognize but it had been some time. Most everyone she probably knew was long gone or didn’t remember her. Still she looked around, deciding to stop and admire some of the ornaments when out of the corner of her eye she spotted something. Or someone. She turned, looking around as she tried to figure out who or what she had just seen.

“Do you need me to come get you. I can be there in 10 minutes.” Bethany said running her fingers through her hair sounding frazzled. “Lay down and just focus on your breathing.” she hung up as she sighed. She’d blown off the last four appointments with her fertility doctor but it wasn’t like she could drop being a mom and she doubted Maggie could get to her phone. She just quickly shot a text to her wife about their kid being sick at school. She was rushing out of the doctor’s office trying to keep people from getting any look at her. She wasn’t popular anymore but she still lived in this town her whole life and she didn’t need word getting back to her wife. Not until she had more information.

I’m missing Summer back home at the moment so am sat here reminiscing those rare childhood picnics we had in Phoenix park and feeding the ducks in Stephen’s Green with my grandparents. Winter in Summer months does not make sense! - Australia get your seasons sorted, please. 

Love me a traditional deep fried spring roll normally but rice paper rolls are much lighter & fresher and just as yummy. They’re perfect for Summer parties or lunch boxes and really fun to make! You can basically fill them with anything but I’ll just share with you guys what I put in mine.

Summer Rolls

rice paper, black fungus (soaked overnight & prepped), red pepper, snow peas, bean sprouts, coriander & fresh lime, fish sauce, clean tea towel, 

Prep and cut the vegetables and black fungus into fine stripes. Put them all in a mixing bowl, squeeze the juice of the lime in, add a dash of fish sauce and toss. 

Now comes the fun messy part! Fill a shallow dish with warm water. Soak a rice paper sheet in it until it becomes just soft. Usually takes about 10-15 seconds. (Be careful not to over soak and make it too soft or it’ll just break apart when you’re trying to roll.) Place it on the clean tea towel and arrange some of the filling on the bottom third of the rice paper in a long ways. Fold the bottom third of the rice paper over the filling, then fold in the two side while at the same time keeping the filling tight. Roll it up firmly but gently to enclose all the filling. The rice paper will seal itself on the end. Repeat this for the rest of your filling. 

I like mine with my homemade Thai salad dipping sauce (same recipe I used for the Namaste Green Mango Salad) but most people serve them with hoisin or satay sauce. Each to their own!

Tips: I put some olive oil on the serving plate to keep the rolls from sticking.
