Happy Pancake Day!! Gluten Free 'Savoury Sprouted Buckwheat Pancakes' for breakfast today?! Yes please!! 😝🤘🏻🌟 So easy to make!! You'll need the following to make 5 delicious pancakes: • 165g Spouted Buckwheat Flour (I used @reallyhealthyfoods) • 1tsp salt (I used @avogel_health Herbamare) • 1/3tsp each of ground ginger, turmeric & cinnamon • 175ml water • 1 egg or vegan equivalent (2tsp milled flaxseed/linseed is a good vegan option) • 1/4 Avocado • Oil of choice for pan • A aprinkle of pumpkin & chia seeds • Fresh lime & extra virgin olive oil Mix dry ingredients together in a large bowl. Stir in a little water at a time until you have a smooth pancake batter. Add the egg (or vegan equivalent) and stir until smooth. Add a little oil to a pan and heat on low light. When pan is hot add a thin layer of batter to pan and cook until lightly browned and flip if you're feeling the Pancake Day magic 🎉✨ if not, use a spatula instead. When lightly browned transfer to plate and add lime, avocado and pumpkin seeds. Sprinkle chia seeds and drizzle extra virgin oil. Now go for it - taste that pancake goodness!! Why is Buckwheat Considered as a Superfood?
The definition of "superfood" is a food that contains impressive amounts of nutrients with little or no calories so they are extremely helpful to fight diseases including cancer, Alzheimer's disease, heart disease, diabetes. Sprouted buckwheat has been used in Asia for nutrition and health benefits since long ago.
Sprouted buckwheat is low in calories and can be used as a side dish or as a substitute for carbs. One cup of cooked buckwheat has just under 200 calories, almost all from complex carbohydrates. Carbohydrates supply the body with energy through glucose which is the source of fuel for every cell in the body including the brain and muscles. Buckwheat contains 16 amino acids which are called the building blocks of protein. Apart from that, buckwheat is a good source of phosphorous and magnesium which are important for bone health because its structure contains manganese and iron that can prevent osteoporosis. Buckwheat also contains vitamin C to help absorb other nutrients.
