Tomato Feta Bean Pasta Bake

Easy baby with lots of flavor...that's how I like to cook and this one is another in that category. While the feta and tomatoes are baking in the oven until the toms split I'm boiling water to cook the pasta, heat the beans to have them meet in a generous serving dish to top with fresh basil ribbons. Oh yeah...now there's a great flavorful meal...nutritious into the bargain. See what you think...

1 - 24 oz. pkg. cherry tomatoes, whole, multi-color if possible

1 - 8 oz. pkg. (or 2 c. crumbled) feta cheese

oil

dash pepper/garlic powder/chili flakes

1 c. dry whole wheat rotini

1 - 15 oz. can great northern beans, drained

2 - 3 T. capers, drained

3 - 4 T. basil, ribbon cut using kitchen scissors to speed process

Preheat oven to 400 degrees. In a large baking dish, place feta cut into thirds lengthwise pour in cherry tomatoes, drizzle with oil over toms. Season with dash pepper, garlic powder and chili flakes but go easy with these. Bake uncovered until tomatoes split open when pierced with a knife. In a sauce pan of boiling water, add rotini pasta cooking until just tender. Drain off excess water, add beans and capers stirring in to pasta to just heat through. Add pasta/bean mixture to tomatoes/feta - toss together. Top with basil to then dish up and enjoy!

Indulge in tender beef tenderloin steaks topped with a savory mushroom wine sauce for an elegant and satisfying meal. Perfect for a special occasion or a gourmet dinner at home.

Ingredients: 4 beef tenderloin steaks about 6 ounces each. Salt and pepper to taste. 2 tablespoons olive oil. 2 tablespoons butter. 8 ounces mushrooms, sliced. 2 cloves garlic, minced. 1/2 cup dry red wine. 1/2 cup beef broth. 2 tablespoons chopped fresh parsley.

Instructions: Salt and pepper both sides of the beef tenderloin steaks. In a pan, heat the olive oil over medium-high heat. Put the steaks in the pan and cook them for 4 to 5 minutes on each side for medium-rare, or until they're done the way you like them. Take it out of the pan and set it aside to rest. Over medium heat, melt the butter in the same pan. After you add the garlic and sliced mushrooms, cook for about 5 minutes, or until the mushrooms are soft. Add the red wine and beef broth, making sure to scrape the pan's bottom to get rid of any browned bits. It should take about 5 to 7 minutes for the sauce to reduce and get a little thicker. Put the beef tenderloin steaks back in the pan and cover them with the mushroom wine sauce. Before you serve, sprinkle with chopped parsley.

Artichoke Tomato Bruschetta Pasta

Artichokes...tomatoes...pasta...what a combination...what a great side dish...and it fits as part of my healthy diet plan. Just toss some whole wheat pasta into boiling water. While that's cooking, heat the sauce in a small pan. When the pasta is tender, drain it and add the bruschetta to the pasta tossing well to coat all. Serve this with a roast chicken breast and green salad on the side. Now that's a fine dinner fixed fast...nice!
