"Almer's Carenderia
This is our small Carenderia, but it has a lot of delicious food.
"Bicol Express"
Bicol Express, known natively in Bikol as sinilihan. If you're here with us, this is the only place where you can taste my dad's cook at Bamboo Hills Consolacion Cebu, and our Bicol is here. It's only in the morning and bbq at night.
It's special, because it's what my dad's customers keep coming back for.
The first thing my dad does when cooking bicol express is, first wash the meat, secondly grate some ginger and saute it with garlic, onion and ginger. Third Submerge the Meat, Fourth add seasoning and cover it, Fifth simmer until the Meat is tender, taste and cover it again. After the meat has softened, put the coconut milk and a little anchovy. After waiting for the broth to thicken and hang it and it's ready our "Bicol Express ala Almer's Carenderia"

"Kinilaw"
The kinilaw is one of the foods of Filipinos and one of the most delicious seafood in our area because we cook it ourselves and that's why we call it "kinilaw" because it is a fish that is cut into small pieces. He is very popular in our area and is always sought after by our customers, then the procedure on how to prepare our "kinilaw" is first, you buy fresh fish like tuna, secondly you prepare the onion, ginger, tomato, lemon leaves then after that you add vinegar, salt it, add lemon juice then mix it all together after adding pepper, and the last thing to do is to add coconut milk then that's all, we can now display it with a delicious glow.
"Sinugba nga Baboy"
Grilled pork or let's just say "sinugba nga baboy" in Cebuano. It is one of our food in Almer's Carenderia and it is also very delicious, and this is not the same with other meat because we grilled it perfectly and not over cooked. The procedure on how to prepare this is first, wash the meat and second drained the meat, next prepare the garlic, onion, lemon grass, pepper, lemon and soy sauce. Fourth, mixed it all together and marinate in 24 hours then that's it, we can now grilled it. So yummy

Cucina in Marco Polo Ortigas Manila Offers New Filipino Boodle Fight
Cucina in Marco Polo Ortigas Manila has been one of my favorite buffet restaurants ever since the hotel opened its doors in 2014. Throughout the last ten years, the Forbes Five Star hotel has featured many different themes and events at its signature restaurants. Last year, they launched their City Zen semi buffet setup for those who want a more relaxed dining alternative during weekdays (Read: Marco Polo Ortigas Manila Launches City Zen at Cucina). This time, they are now offering new Filipino Boodle Fight sets for barkadas and groups who want to have this Pinoy dining experience inside a premiere luxury hotel.
Cucina is Marco Polo Manila’s all-day dining restaurant located on the 24th floor that is well-known for its superb international and local cuisines. Marco Polo Ortigas was one of the first hotels in the Philippines to earn the coveted Five Star rating from Forbes Travel Guide, the global authority on luxury travel since 1958. Considered as the Olympics in the hotel industry, this prestigious award giving body recognizes the most luxurious hotels, restaurants, and spas worldwide. Since getting the award in 2017, it has continued to receive this recognition for seven straight years.
Starting August 4, 2024, Cucina now offers its new Filipino Boodle Fight that can be shared by groups of two to eight persons. This is available daily at Cucina during its non-buffet hours so diners can still get a hearty smorgasbord of Filipino favorites in the afternoon.
The Filipino Boodle Fight is available in two delicious sets. The Malasa Set starts with a platter that comes with Inihaw na Pusit, Steamed Vegetable with Homemade Shrimp Paste, and Sinugba na Manok.
Together with these grilled favorites are the Inihaw na Pork Liempo and the Pina-Rilya na Pampano. These Filipino surf and turf dishes will surely make the entire table happy.
That's not all, because the Malasa set also comes with a big bowl of Oxtail Kare-Kare and Sinigang na Suahe. The Kare Kare was really creamy and goes well with the bagoong. Of course, Filipinos cannot eat without rice so the set also comes with a platter of Pandan rice.
Another option is the Malinamnam Set which has more seafood than the Malasa set. Start with the very crunchy and sinful Pork Bagnet Chicharon for appetizers, then continue with the Ensalanda, Inihaw na Tahong, and Sinugba na Kitang Fish.
There's also the Halabos na Suahe that you can pair with some Lumpiang Shanghai dipped in sweet chili sauce. Condiments are all provided to complete the festive feast.
The highlight of the Malinamnam set is actually the Bulalo Pata ng Baka with its juicy chunks of tender beef mixed with corn and vegetables in a warm clear broth. Pour some soup on your Pandan rice for a truly Filipino dining experience.

And when he gets a big money, oh boy would he personally prepare us a feast.

The late Filipino food writer Doreen Fernandez once wrote, “Chicken in Silay is always associated in my memory with inasal, the local barbecue, which used to be available at merienda time only in the market area. The chicken parts are marinated in tuba vinegar and garlic, then brushed with lard while grilling over coals…”
This is from her book “Sarap” published in 1988.
Doreen added: “Now inasal has become institutionalized, with a Manukan Country…” referring to a popular local and tourist eatery in Bacolod where the best chicken inasal is made.
Today variations of this “lechon manok” can be found, primarily marinated, grilled, and basted with calamansi and atsuete (aka annatto or Bixa orellana).
Also in “Sarap” is a glossary where she defines Inasal as: “[Ilongo] chicken barbecued on a spit.”
20 years ago today Doreen Gamboa Fernandez reached a higher plane (or plate?), leaving a legacy of Filipino food writing that continues to stir imaginations about Filipino food of the past, and rumbles our stomachs for Filipino food today and in the future.

Grilled Fish
Preheat your grill on high to help in caramelizing the fish and provide the defined grill marks that supply the immense flavor. It
will also lessen the amount of time your fish is on the grill and prevent the number one fear for fish grillers.. sticking!
Allow your fish to sit for 5-10 minutes to bring it up to room temperature before generously oiling and seasoning it prior to putting it on your cooking grates.
Be sure to stick with the general rule of thumb that allows for 8-10 minutes of grill time per inch of fish. Therefore, if your fish is an inch in thickness, grill each side for about three to four minutes. Always make sure you allow adequate time for your fish to rest after it is off the grill. 3-5 minutes is a sufficient amount of time to let the fish relax and allow for the juices to run back into your cut of fish, making it more tender.
