So I got some requests here and there on how to make the #beefnoodlesoup since I posted mine few days ago. So I decided to share my #recipe here 😊 . . Ingredients, 1. #Beefshank (preferably more #tendon). 2. #Oxtail (important: shave off all the excessive fat before cooking). 3. #Tomato (I like mixture of fresh tomato and canned ones, and I take out all the skins) . 4. Few slices of ginger. 5. One #onion, chopped. 6. #Staranise, #sichuanpeppercorn, #blackpepper, #whitepepper, #bayleaves, #cinnamon, #garlic & #clove. 7. #SoySauce, #oystersauce, #redwine & #blackvinegar. 8. Chili sauce, I used 5-7 kinds each time such as black bean chili, garlic chili pretty much anything/ flavors you like would be good. 9. Sugar. . How to, Start w/ a hot pot then put in sesame oil and ginger slices till the ginger turned almost black w/ awesome fragrant. . Put in the shank and tail then put in the chili sauce/ paste you like to use when the meat starting to show some charred markings. . Once meat and tail are almost cooked, time to put in the tomatoes and add the soy sauce, oyster sauce and vinegar. . You can add some water after the wine cuz you’d know how much water you need to cover all the ingredients. . Slow simmer for 3-4 hours the shut off the stove. . Let it sit over night(This is the most important process that will ensure the meat is fully soaked in the soup for flavors and meat texture will become tender and more buttery). . #Garnish, chopped #cilantro #scallion & #greedgarlic are my fav! .
