Cheesy Black Bean Quesadilla
Chef’s Note: I made the mistake of no avocado. It just needs something added to it. Very simple, might argue too simple, but it has good ratios
Ingredients
15 ounces black beans, drained and rinsed
1/2 cup shredded Monterey jack or pepper jack cheese
1/4 cup + 1/4 cup salsa
4 medium (8-inch) whole wheat tortillas
2 tsp canola oil
1 avocado
Mexican crema or sour cream, for serving
Instructions
1. In a medium bowl, mix together black beans, cheese, and ¼ cup salsa.
2. Arrange tortillas on a work surface. Spread ~1/2 cup filling evenly on half of each tortilla.
3. Fold tortillas in half, gently pressing to flatten.
4. Heat 1 tsp oil in a large nonstick skillet over medium heat. Add 2 quesadillas and cook, turning once, until golden on both sides, about 4 minutes total. Transfer to a flat plate and cover with foil to keep warm.
5. Repeat with the remaining 1 teaspoon oil and quesadillas.
6. Serve the quesadillas with avocado, the remaining salsa, and Mexican crema/sour cream

Quick Taco Dip

Ingredients
DIP
2 block (8-oz each) cream cheese, softened
1 cup to 1 1/2 cup sour cream
4 oz diced green chilies
3 tbsp taco seasoning
1 tbsp lime juice
1 tsp garlic powder
Kosher salt
TOPPINGS
2 cup to 4 cup shredded lettuce (I did 3)
1/2 cup to 1 cup shredded cheddar
1/2 cup to 1 cup shredded Monterey jack
2 cup cherry tomatoes, quartered
1/4 white onion, finely chopped
1 cup sliced black olives (2 cans, 2.25 oz each, drained)
Tortilla chips, for serving
Instructions
1. In a large bowl, beat together cream cheese, sour cream, green chilies, taco seasoning, garlic powder, and a pinch of salt until blended.
2. Transfer mixture to a serving dish (I used an 8x11-inch baking dish/2 quart)
3. Top with lettuce, cheeses, tomatoes, onion, and olives. Serve with tortilla chips.

Baked Cottage Cheese Eggs: A Comforting Breakfast Tradition
I love this quick & easy recipe. Please verbally express something to keep getting my
Ingredients:
6 large eggs
1 cup cottage cheese
1/4 cup milk
1/4 cup shredded cheddar cheese
1/4 teaspoon salt
1/4 teaspoon black pepper
Optional add-ins: chopped vegetables (spinach, tomatoes, onions), cooked bacon or sausage, herbs
Instructions:
Preheat oven to 350°F (175°C). Grease a 9x9 inch baking dish.
In a large bowl, whisk together eggs, cottage cheese, milk, cheddar cheese, salt, and pepper.
Stir in any optional add-ins.
Pour the egg mixture into the prepared baking dish.
Bake for 25-30 minutes, or until the eggs are set.
Let cool for a few minutes before serving.
Tips and Variations:
For a richer flavor, use full-fat cottage cheese.
Add your favorite vegetables or protein sources for extra flavor and nutrition.

Beef and Cheese Empanadas Ingredients: 1 lb ground beef 1/2 cup onion (finely chopped) 2 cloves garlic (minced) 1 tsp cumin 1/2 tsp paprika 1/2 tsp chili powder 1/2 tsp salt 1/4 tsp black pepper 1/2 cup tomato sauce 1 cup shredded cheddar or Monterey Jack cheese 1 package empanada dough discs (store-bought or homemade) 1 egg (beaten, for egg wash) Oil (for frying, or baking option) Instructions: Prepare the Filling: In a skillet over medium heat, sauté onions until soft. Add garlic and cook for another minute. Add ground beef and cook until browned. Drain excess fat if needed. Stir in cumin, paprika, chili powder, salt, black pepper, and tomato sauce. Cook for 5 more minutes until well combined. Remove from heat and let cool. Once cooled, mix in shredded cheese. Assemble the Empanadas: Roll out empanada dough if necessary. Place a spoonful of filling in the center of each dough disc. Fold over to form a half-moon shape and seal the edges by pressing with a fork. Brush with egg wash for a golden finish. Cooking Options: Baking: Preheat oven to 375°F (190°C). Place empanadas on a lined baking sheet and bake for 18-20 minutes until golden brown. Frying: Heat oil in a pan to 350°F (175°C).
