Cheesy Black Bean Quesadilla
Chef’s Note: I made the mistake of no avocado. It just needs something added to it. Very simple, might argue too simple, but it has good ratios
Ingredients
15 ounces black beans, drained and rinsed
1/2 cup shredded Monterey jack or pepper jack cheese
1/4 cup + 1/4 cup salsa
4 medium (8-inch) whole wheat tortillas
2 tsp canola oil
1 avocado
Mexican crema or sour cream, for serving
Instructions
1. In a medium bowl, mix together black beans, cheese, and ¼ cup salsa.
2. Arrange tortillas on a work surface. Spread ~1/2 cup filling evenly on half of each tortilla.
3. Fold tortillas in half, gently pressing to flatten.
4. Heat 1 tsp oil in a large nonstick skillet over medium heat. Add 2 quesadillas and cook, turning once, until golden on both sides, about 4 minutes total. Transfer to a flat plate and cover with foil to keep warm.
5. Repeat with the remaining 1 teaspoon oil and quesadillas.
6. Serve the quesadillas with avocado, the remaining salsa, and Mexican crema/sour cream

California Breakfast Skillet
Chef’s Note: You should halve this if you’re doing it in a 10” skillet. Not saying it won't work, but it’s going to be a tight fit.

Ingredients
2 tbsp extra-virgin olive oil
3 russet potatoes, peeled and chopped into small cubes
1/3 cup water
1/2 tsp garlic powder
1/2 tsp smoked paprika
10 large eggs
1/4 cup milk
1/4 cup red onion, finely chopped
1 cup shredded Monterey Jack
1 cup chopped cherry tomatoes
2 tbsp finely chopped chives (plus more for garnish)
1 avocado, chopped
(opt.) Corn tortillas, warmed, for serving
hot sauce, for serving
Instructions
1. In a large skillet over medium heat, heat olive oil
2. Add potatoes in single layer. Add water then cover the skillet with a tight-fitting lid. Cook until potatoes are tender, 15 to 20 minutes, stirring occasionally.
3. Meanwhile, whisk together eggs and milk.
4. When potatoes are tender, season them with paprika and garlic powder. Mix to coat. Push potatoes to one side of the pan.
5. Add the egg mixture and red onions to the skillet and let set for about 1 minute, until the edges of the eggs start to set.
6. Using a spatula, drag the eggs to create curds. When the scrambled eggs are almost set, toss them with the potatoes.
7. Add cheese, cherry tomatoes, and chives, then season with salt and pepper. Toss until cheese has melted
8. Remove from heat and top with avocado and more chives.
9. Serve immediately, with hot sauce (a little or a lot, depending on personal heat tolerance). Optional: Can also warm tortillas to make tacos.

Baked Cottage Cheese Eggs: A Comforting Breakfast Tradition

Ingredients:
6 large eggs
1 cup cottage cheese
1/4 cup milk
1/4 cup shredded cheddar cheese
1/4 teaspoon salt
1/4 teaspoon black pepper
Optional add-ins: chopped vegetables (spinach, tomatoes, onions), cooked bacon or sausage, herbs
Instructions:
Preheat oven to 350°F (175°C). Grease a 9x9 inch baking dish.
In a large bowl, whisk together eggs, cottage cheese, milk, cheddar cheese, salt, and pepper.
Stir in any optional add-ins.
Pour the egg mixture into the prepared baking dish.
Bake for 25-30 minutes, or until the eggs are set.

Beef and Cheese Empanadas Ingredients: 1 lb ground beef 1/2 cup onion (finely chopped) 2 cloves garlic (minced) 1 tsp cumin 1/2 tsp paprika 1/2 tsp chili powder 1/2 tsp salt 1/4 tsp black pepper 1/2 cup tomato sauce 1 cup shredded cheddar or Monterey Jack cheese 1 package empanada dough discs (store-bought or homemade) 1 egg (beaten, for egg wash) Oil (for frying, or baking option) Instructions: Prepare the Filling: In a skillet over medium heat, sauté onions until soft. Add garlic and cook for another minute. Add ground beef and cook until browned. Drain excess fat if needed. Stir in cumin, paprika, chili powder, salt, black pepper, and tomato sauce. Cook for 5 more minutes until well combined. Remove from heat and let cool. Once cooled, mix in shredded cheese. Assemble the Empanadas: Roll out empanada dough if necessary. Place a spoonful of filling in the center of each dough disc. Fold over to form a half-moon shape and seal the edges by pressing with a fork. Brush with egg wash for a golden finish. Ingredients:
1.5 lbs flank steak
2 tbsp olive oil
2 cloves garlic, minced
1 tbsp Italian seasoning
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
For the Garlic Butter Honey BBQ Sauce:
4 tbsp butter
3 cloves garlic, minced
1/4 cup honey
1/4 cup BBQ sauce (your favorite brand)
1 tbsp apple cider vinegar
1/2 tsp red pepper flakes (optional)
For the Tacos:
12 small corn tortillas
1/2 cup shredded Monterey Jack cheese
1/4 cup chopped red onion
1/4 cup chopped fresh cilantro
1 avocado, diced
Directions:
Prepare the Beef: In a bowl, whisk together olive oil, minced garlic, Italian seasoning, smoked paprika, salt, and pepper.
Cook the Beef: Heat a grill or cast-iron skillet over medium-high heat. Cook the flank steak for about 4-5 minutes per side for medium-rare, or longer depending on your desired doneness.
