Do you throw away your sourdough starter discard when you feed the baby* every day? Sometimes I use starter discard for pizza crust or biscuits, but I don't always have the time (or appetite) to make something that needs multiple steps or time to rise ... so we just toss it. . Yesterday, an article popped up in my feed that said you could make a fast fried bread with discard. Whaaaat?! . Making sourdough fry bread is as simple as heating up your favorite oil (I used avocado) to a high medium heat. I'm sure I broke some really smart rule by adding my seasoning directly to the oil, but since I'm obviously no chef, that's exactly what I did, and you can see how it scattered! It still works! 😂 But anyway, you can throw in whatever seasoning you like; I went with some salt, pepper, Italian herbs, and a few sesame seeds along with my usual amount of discard (today it was about a cup). . When the oil is hot enough to slightly bubble, you can take your discard straight from your starter jar (no need to dirty another dish) into the seasoned oil and cook it for about 4-5 minutes on each side. The fry bread will cook similarly to how a pancake does with bubbles rising on the uncooked side before it gets flipped. The bread will get this gorgeous golden tone when it's done. . When the fry bread has finished cooking, I set it on a paper towel to catch any loose oil, and then we eat it hot. The texture is slightly chewy (the interior looks bubbly, like an English muffin), and the taste is perfectly seasoned and sour. Its hard to explain, but if you love sourdough and that SOUR flavor, it's delicious just like this! .
