A Cuisine Under Siege
I couldn’t rescue my aunt in Gaza, but I can keep her recipes alive.
Though I’ve lived abroad most of my life, Gaza is where I call home. It's where my parents were born and raised and where I spent summers as a child. Whenever we’d return, we’d be welcomed back by our large extended family. First among them was my aunt An’am Dalloul, whom we called Khalto Um Hani: “mother of Hani,” her eldest child and my cousin. She’d always arrive bearing a bowl of sumagiyya, Gaza City’s signature meat stew with chard, sumac, and chickpeas—and my father's favorite meal. Um Hani, along with my cousins Hoda, Wafaa, and Hani, were killed in an Israeli airstrike in their residential Gaza City neighborhood in November 2023. In an instant, the household perished, my cousin Nael later told me. Only a skeleton of the building was left. He recounted the horrific scene over WhatsApp—how he gathered their remains in his arms and buried them in a mass grave under heavy Israeli bombardment, how he failed to retrieve the corpse of one of his sisters, and how his brother bled to death before paramedics could reach him. Nael, like 90 percent of Gazans at the time of writing, is displaced, fleeing with his children from one city to the next in search of shelter, food, and some semblance of safety. He has been surviving on canned beans for more than three months. Nael’s news shook me to my core. I couldn’t sleep. I couldn't eat. I was overwhelmed with a profound sense of helplessness and despair. Was it only a matter of time before the rest of my family in Gaza would perish? As I read Nael’s texts, the memories came flooding back. Of Um Hani cooking in her bright, breezy kitchen wearing the traditional white hijab and light blue jalabiya. Of the birthmark on her face and her soft olive skin. Of her husky voice and the gentle laugh that masked the fierce and determined woman underneath. Um Hani was an anchor to me, a link to the paternal grandmother I never met and to a city I often felt estranged from. She was a repository of memories, a key to the fragmented world to which I belonged as a Palestinian. She taught me to make the near-forgotten dishes my grandmother loved, the ones my father grew up eating such as adas wi batata (lentils and potatoes cooked in a clay pot with lemon and fried garlic) and samak il-armala (“widow’s fish,” or fried eggplants with chiles and ribbons of fresh basil). But as fate would have it, she never got the chance to show me how to make sumagiyya—her specialty, brimming with lamb and spiced with dill seeds and cumin.

I live in the United States now, and I’ve cooked sumagiyya more times than I can count—even if it never tastes quite like Um Hani’s. One occasion stands out. It was May 2021, and Gaza City was being pummeled in what was the fourth major assault by Israel on Gaza in 14 years. The attack coincided with Eid, and as I watched on my screen in Clarksville, Maryland horrific images of air raids and grief-stricken mothers, I suddenly felt the urge to make a pot of sumagiyya.Serving it to my family and friends that night, despite the unfolding tragedy, was unexpectedly liberating and affirming. Last month, I again found myself in tears chopping onions and chard for sumagiyya, but this time I was making it to honor Um Hani’s memory. Like in 2021, I couldn’t look away from the news: The park where I used to take my son for evening strolls, the beach promenade where I drank sage tea with my mother, the university where I gave guest lectures—they were all unrecognizable piles of overturned dirt and warped wire.

Lately, I’ve been thinking about what I would go back to, and what I would find, if I returned to Gaza. Most of the landmarks have been destroyed. Gone too are many of the people I cherished. But with Ramadan fast approaching, and with no end in sight to the bombardment, it feels like I am the torchbearer now, the family’s keeper of treasured recipes. Like Um Hani, I will cook and I will teach, connecting the next generation of Palestinians to our homeland.

Samak Chawal Kheer
This is a different kind of variety of rice that we can have during our fasting (vrat). SAMAK CHAWAL
TODAY we are going to make samak chawal KHEER. It a very popular dessert in india in festival time and fasting time so let's start….
Here we are making for 2 person..
Ingredients
50g Samak Chawal
(soaked in water for 10 to 20 min)
250ml milk
100ml water
2 crushed green cardamom
Cutted dry fruits
Sugar to taste….
Recipe
First we boil the milk with the added required water as we already show above in the ingredients.
After one boil we'll add the crushed cardamom and dry fruits so that it all softens and mixes well. Now drain the water of rice and transfer it into the boiling milk to keep the flame on low until the rice is cooked. After 15 min we will check if the rice is cooked well or not by pressing it with our finger. If there is a requirement of more time then cook it for more 10 min and then turn off the flame and add the sugar and garnish with some extra dry fruits.
Kheer is ready to serve..
Note:-
You can make more people by measuring the quantity as we make for 2 only.
Here we add water to boil milk for a good consistency otherwise the kheer will become extra thick.

Navratri Diet Plan To Lose Weight
Hi everyone
I am back with a diet plan and some Naratri Vrat recipes in the series of posts related to weight loss during Navratri. Well, I don’t believe in heavy fried foods during Navratri fasting as there is no point of fasting if you eat yourself sick and sleep every night with a heavy stomach burping and belching. Eeeks!… I hate that feeling.
Anyhow during vrat when everyone is trying to control their hunger and waiting for that one meal in the evening along with various mini meals all through the day … munching on fried peanuts, roasted makhane, dry fruits, bananas, but I am trying to stay light and healthy. So I prepared a wonderful meal for myself a day back. Take a look.
This is looking good… isn’t it? I don’t know what all you are thinking about it but let me ensure you that this was one really complete meal and kept me full whole day. Of yes, I forgot to tell you that I take my one meal during lunch in place of dinner. That keeps me light and I can go for my late night walk on a lighter stomach.
Navratri Meal Plan
Now I know all of you want me to stop blabbering and just waiting for the Navratri meal plan. So before you secide to leave the page, here is the plan.
Early Morning
Two glasses of luke warm water with either apple cider vinegar or lemon juice. Nowadays due to Covid 19 I am taking giloy swaras daily for the last one year.
Breakfast
A cup of milk with two spoon full of roasted amaranth seeds added to it. Check Recipe here
Mid Morning Snack
One orange or mosambi with a cup of black coffee with stevia after half an hour.
Lunch
My healthy meal
Vrat ka dhokla
Ingredients
Vrat ke chawal
Curd I used half kator with water but you can increase if you wish.
Spinach washed and chopped
Salt, soda bicarb or Eno fruit salt. (I prefer Eno 1 sachet, not in the picture below)
Method
Mix samak rice, salt, curd and mix well.
Add Chopped spinach.
Mix well and add some water so that the rice get soaked nicely. If using Soda Bicarb, add now.
Finally after half an hour add Eno Fruit salt and mix well. Micro high for 4-5 minutes. You can use steamer also. It will take ten- fifteen minutes to cook well in it.
Do a knife test..Poke a knife and see if it comes out clean. If yes the it’s done.
Cut in slices the way you want.
Have with Spicy pumpkin and peanut chutney.
Evening Snack
Roasted Peanuts a handful with a cup of tea without sugar. I like my tea without sugar with peanuts but if you wish you can add stevia. Aah! That reminds me, Do you buy roasted Peanuts from the market, or roast at home? I make my own salted peanuts at home. How I do it… will be in the next post. Stay connected.
Dinner
As I told you earlier, I take my full meal during lunch so during dinner I just have a glass of milk with six almonds crushed and boiled with it. It makes a great health drink after my one-hour late night walk. The peanuts in the evening actually keep me full all through.
If you like to have your full meal in the evening, then you can simply interchange lunch and dinner menu. No issues with that.
Water and Workout
Water and workouts are the most important ‘Ws’ in my Navratri fasting…. I drink minimum 15-20 glasses of water daily, but if you can’t do that at least have 6-8 glasses minimum.
The Workout is my regular Leslie Sansone’s Walk at home program in the morning 2 -3 miles and at night brisk one hour walk. Basically, I believe that burning 500 calories daily is a must. It keeps my happy hormones flowing smoothly.

In a grinding jar add 1/2 cup samak rice and 1/2 cup sago and grind it into a fine powder..
Transfer this mixture in a deep bowl, add 1/4 cup curd and all the remaining ingredients and mix well. It should form uniform loose dough..
Add water a little at a time and make a thick pouring consistency..
Heat Appe patra on a medium flame and Grease the round mould/indentations with a drop of oil or ghee..
Drop 1 tsp of the appe batter in the individual indentations with a spoon..
Now add the paneer filling in the centre and again add the batter over the paneer filling..
Cover the pan and cook it for 1-2 mins on low flame..
After few minutes, turn the appe balls over with a spoon. When you turn them, the bottom should be golden brown and crisp. Add another drop of oil or ghee on the sides of each appe ball so that they cook through and do not stick to the pan..
Once both the sides are cooked and golden, remove from the pan and serve hot with upvas chutney (made from peanuts and dahi) or plain dahi..

Add spices... Cook till oil separates... add malai... Saute.. dn add kofte... Cook for 5 mins...garnish with coriander and malai. Then serve with samak rice or kuttu puri.. enjoy😊.
