Eating to lower A1C, maintain a healthy weight, and have glowing skin on a vegan diet
Fats. I put that on everything!
Lowering your A1C is much easier when you focus on protein, fiber, and mono- and polyunsaturated fats. Opt preferably for expeller/mechanically pressed, UNREFINED oils and fats. You want to avoid oxidative damage, and refining fats increases their oxidative properties, as well as reduces their health benefits.
Nuts are super nutrient dense, and have mostly fat (but cashews are the highest carb/most hydrated nut, as evidenced by their very creamy texture). Nuts are also excellent sources of protein, fiber, and micronutrients.
In studies, people who include nuts in their diets have lower BMIs. Caveat: fats have the most calories per serving. As long as you don't exceed your caloric requirements, go nuts on nuts and put fat in foods!
My Favorite Proteins:
🌱Almonds
🌱Cashews
🌱Mushrooms (Favorite shroom recipe: thinly chopped portobellos. Sauté garlic in a bit of avocado and a generous amount of toasted sesame oil. You want the avocado oil as it helps prevent sticking to the pan. Once the oil gets some browning of the garlic, add in minced ginger. You may need to add more avocado oil and toasted sesame oil, as you will want to cook a very large volume of shrooms, which love soaking up the oil, and shrink considerably in the cooking process. Usually, I buy a 5-pack of portobello caps and chop them very thinly myself. Or the pre-chopped and cut them thinner. Keep mixing the shrooms around in the oils. Once they are coated, add minced basil. Keep cooking until you get their juices free. Once soft/to desired texture, turn the heat up and keep mixing them around to cook the water off. Do a nice mild char on the mushrooms. Turn off heat and add just a small amount of Kikkoman Teriyaki Baste and Glaze. Eat over black rice, farro, brown rice pasta, quinoa, whole wheat pasta, even on a vegetarian sandwhich!)
🌱Pecans
🌱Peanuts
🌱Pine nuts
🌱Pistachios
🌱Tofu (Preferably superfirm, as this texture has the highest amount of protein per serving.
Tofu scrambles are a good idea for on the go protein. Easier to use extra firm tofu for scrambles.)
🌱Walnuts (best nut for omega-3)
Try purchasing different cuts of nuts (I love Trader Joe's for nut shopping) softening slivered almonds, cashews, pine nuts, peanuts by placing them in a bowl of boiled water for 15 minutes or more, and add to stirfried vegetables, rice, gluten-free pastas, salads.
"Protein load." This is where you pair everything, including snacks, with a protein option.
Protein increases your response to insulin without raising your blood glucose. ⬅️ ✅️ This is what you want to do to help lower A1C.
Eat more seeds! But preferably GROUND and/or HULLED. Your body can't access the omega-3 inside the seed if it is not opened first. Good for regulation of bowel movements, though. 💩
Seeds are wicked nutrient dense, and also contain healthy polyunsaturated fats, PROTEIN, and fiber.
Fat, protein, and fiber are the nutrients you want to focus on to lower your A1C and maintain a healthy weight. These 3 nutrients slow how fast glucose is released into your bloodstream, and help you feel full! Poly fats are even BETTER than monos at lowering A1C, and they maintain brain health and skin integrity.
🌱Chia (Look into making chia seed "pudding," as the recipe is extremely versatile. I love it with soy-free vanilla flavored Silk, or Almond Breeze's chocolate almond beverage. NEVER eat them raw/without letting them take on fluid first if you want to eat them whole/unground, as they can absorb fluid in the GI tract and cause a blockage. 😱)
🌱Flax (I put this ground in almost all my smoothies, and in oatmeal. 1-2Tbsp at a time.)
🌱Hemp seeds (Whole Foods has hulled hemp seed. Looks weird, but nice in smoothies and oatmeal. You might even want to experiment with putting it in rice. 1Tbsp at a time, as these ones might make you go more. 💩 Great for constipation management, especially when paired with plenty of water and physical activity.)
🌱Sunflower KERNELS ONLY. NEVER eat the husks of sunflower seeds (probably any seed, honestly), as these are causal in phytobezoar formation. Every piece of evidence I have found on phytobezoars happened to involve ingestion of the husks of sunflower seeds. For eating more volume, I recommend unsalted sunflower kernels. They're good on salads.
Avoid baked goods, candy, sugar sweetened beverages, and opt for fruit instead. Even artificial sweeteners harm the microbiome. 🚫👎🏾🧫
Craving sweet? Use juices that have no added sugar, and preferably not from concentrate. Trader Joe's has a unique selection. Some of my go to smoothies that I pair with nuts for a busy day, and also add ground flax and/or hulled hemp seeds to:
Tropical smoothie ⛱️🌊:
🍎Pineapple juice (4oz)
🍏Mango juice (4oz)
🍎Kale
🍏Frozen banana
🍎A small apple (or 1/2 a medium)
🍏Ground flax and/or hulled hemp seed (1-2Tbsp of each)
Brain smoothie 🧠👁:
🫐Pomegranate juice (bitter, so cut with a sweeter fruit/aged frozen banana)
🍒Blueberries
🫐Blackberries
🍒Raspberries
🫐Banana
🍒Ground flax and/or hemp seed (1-2 Tbsp of each)
Juices. Eat a fat with these 100%, as fat will help you absorb the fat-soluble vitamins in beta-carotene-containing/fat-soluble-vitamin-containing fruits/produce, giving you that skin glow 💋:
🥕Carrots
🍊Oranges/clementines
🥕Mango (fresh blended mango, or the juice)
🍊Turmeric (fresh. For a single serving of juice, you don't need even a full shot worth of turmeric juice. It's *powerful* and may override the taste. You may even get away with just 1/4 shot turmeric juice per 16oz serving of juice. Add a tiny bit of ground black pepper to potentiate any added herbs or spices!)
🥕Lemon (1 lemon worth of juice or so per 16oz serving of juice)
I haven't tried this yet, but would love to juice a cantaloupe as well for this recipe.
OR, if you don't have a juicer/don't want to get one, TJ's has an awesome carrot turmeric juice that tastes really good!
Complex carbs I go for frequently, but try to limit to about 1/2-1cup serving size (about 2oz serving for pastas), and ALWAYS add Earth or Smart Balance to your complex carb. Smart Balance tastes more buttery than Earth Balance, so I would use less if you try it. Smart also has your fat-soluble vitamins, A, D, E, and K:
🌱Banza (more fiber here, so I sometimes eat half a box, especially on more active days. But chickpeas can be bloating, so careful with them. Drink a few cups of water beforehand.)
🍚Black rice
🥣Bob's Red Mill Organic Oats (I usually avoid regular oats/oatmeals. Glyphosate is generally recognized as safe, and is found in almost all oats. They use it to help release the oat during harvesting. Some people think glyphosate is harmful. Wouldn't suprise me if it is. Nutrigenomics is interesting, and what you eat even affects the expression of your genes, which differs by individual. Caveat: organic does not mean "pesticide free." If you want an oatMEAL using Bob's brand, grind the oats in a food processor before adding water, pop them in the microwave, or cook on the stovetop.)
🍚Brown rice
🍝Brown rice pasta
🍞Dave's Killer Bread (Try doing it with tofu scramble, and maybe even add the sautéed portobellos!)
🌾Farro
🥣Quinoa
🍝Whole wheat pasta (love this with Smart Balance, salt, minced basil)
Other protein sources, but these also have more carbs than nuts or tofu. Pair well with your complex carbs:
🌱Black beans (try doing a salsa salad with this. Add your choice of salsa and vegan cheese, pair with a Southwest style kale)
🌱Bush's Vegetarian Baked Beans
🌱Chickpeas (Bloat city, though! Eat more rarely. Pair with lots of water drinking before consuming to deal with the fiber and prevent gas.)
🌱Kidney beans (dark red kidney beans pair well with salads, or on their own!)
🌱Lentils

10 Most Insanely Good Filipino Merienda
Sweets produce “happiness hormones.” In fact having that sweet dessert after a hearty feast is the most satisfying part of the meal.
Filipinos typically prepare delicious treats that the whole family will enjoy using tropical ingredients like coconuts and fruits. Rice, particularly sticky rice and even glutinous rice, is a common ingredient used in merienda recipes like the famous sapin-sapin and palitaw.
The sweet treats you hear about such as a special Halo-halo are just a tiny portion of the fantastic merienda that Filipinos enjoy! Anyone can have a taste of these authentic Filipino recipes at the Manila Food Mart ,Lake Forest, Orange County.
Let’s see how much you know about some yummy Filipino merienda favorites! Read on!
#1 Buko Pandan
Talking about a crowd pleaser during gatherings, Buko Pandan is one of them. There are three main ingredients in this sweet and cooling Filipino treat: Sweetened cream, gelatin laced with pandan, and coconut.
Is it difficult to prepare? All you need to do is combine all the ingredients with the right proportion, then refrigerate it. A bowl of joy is in your hands after a few hours! Buko Pandan is aromatic and coconutty. This dessert is truly tropical and no wonder, a winner at every birthday party or during simple warm midday.
#2 Cassava Cake
Gluten-free diet? Good news for you!
The name Cassava Cake refers to a classic Filipino cake made with grated cassava and coconut milk coated with molten custard at the top. Its texture is interestingly firm but also soft and just a little chewy. The ingredients used are absolutely gluten-free!
The extra ingredients from making the cake itself also work perfectly as toppings! The most well-liked ones include Macapuno, a sweet type of Filipino coconut, and light cheddar cheese shreds to balance everything. Yum!
#3 Turon
Thought you could never be satisfied with Lumpiang Shanghai? Wait until you try Turon!
Falling in the category of widely consumed lumpia dishes, Turon is one of its sweet varieties. Made with Saba banana and jackfruit wrapped in a thin wheat wrapper, you can never miss this famous Filipino treat hitting the street when it’s Merienda time! Fried to a golden crisp, turon can be drizzled with caramel or dusted with roasted sesame seeds.
#4 Biko
Feel the love of a family member preparing that famous Biko. This tasty merienda favorite demands time and patience to perfect! It involves stirring the sticky rice consistently to prevent it from sticking to the pot and preparing another recipe for the top layer known as Latik. It somehow resembles cassava cake in appearance given that Biko is also a type of rice cake.
This delicious dessert commonly prepared on birthdays, holidays, and special occasions, is sticky, fragrant, and nutty sweet! Why not welcome Biko in your next gathering?
#5 Puto
Despite its neutral flavor, Puto is a favorite rice cake especially when it is served with a tasty dinuguan.
A wide variety of Puto with variations in consistency, form, size, color, and flavor is a product of the playful Pinoy taste bud. Some Puto are cooked with a delicious pork filling while some have variations in flavor like the Ube Puto. Others would rather stick to the usual strip of cheese and salted egg at the top.
Puto is equally as versatile as the Filipinos themselves!
#6 Kutsinta
This orange variant of the traditional Filipino steamed rice cake is just as well-liked and delectable!
Kutsinta has the same fundamental ingredients as most rice cakes, but the presence of food-grade lye produces a thick and chewy texture. Also, brown sugar and annatto seeds are what give it a hint of orange color. It is commonly sold together with Puto, and Filipinos love to eat them together too! Why not give this nostalgic combination a try!
#7 Leche Flan
Leche Flan has that sweet, creamy flavor that nearly no one could possibly resist!
Leche flan may look familiar because it is similar to Creme Caramel. It is a pudding that the Filipinos steam cook with milk, sugar, eggs, and vanilla flavoring. It is so delicious that it smoothly and slowly melts in your mouth!
A perfectly cooked Leche flan has achieved a silky soft texture and is typically oval-shaped for using tin molds called ‘llaneras‘ to prepare.
Serve this simple yet luscious dessert chilled and drizzled with caramel syrup for the perfect indulgence!
#8 Halo-halo
Halo-halo means “mix-mix or “assorted,” and it perfectly describes the dish’s technique and style! Discover why it’s worthwhile to try this festive Filipino dish that you’ve probably heard about on social media a lot!
Bananas, sweet potatoes, jackfruit, and red mongo beans are among the most commonly used ingredients in this fruit and bean combination summer snack. But do you still remember Leche Flan? It is also one of the more appealing ingredients to add along with various colorful cubes of fruit jellies. It is then finished off with finely crushed ice, milk, and a scoop of Ube ice cream at the top!
Let this combination of various sweet delights and superb eye-pleasing cold dessert comfort you! Visit Manila Food Mart and be ready for a great serving of an authentic Halo-halo.
But wait, a photo of this fresh Halo-halo will surely be great for your next Instagram post!
#9 Taho
Tahooooo?! Anyone?
For many Filipinos, this traditional dessert Taho evokes flashbacks of their youth in the Philippines.
Identical desserts may be found in many Asian countries, especially the silkiest tofu variety. Similar practices apply to Pinoy Taho, but Filipinos prefer a sweet arnibal syrup with tiny sago pearls in their hot Taho.
Early in the morning, street vendors routinely sell this very affordable, tasty, high-protein breakfast item. A cup of Taho is every kid’s favorite treat! How about reliving the nostalgia?
#10 Ube Halaya
There are a lot of tasty desserts and merienda to try in the Philippines. Pinoys love to play around with different sweet treats to find the right balance of taste. Ube Halaya is one of these deliciously well-balanced desserts. It has a soft, creamy consistency and a mildly sweet taste.
Ube Halaya is one of these deliciously well-balanced desserts. Patiently cook a perfect purple yam or Ube with some milk and sugar. Mix to get that sticky, smooth texture and you will have that heavenly Halaya.
Dig in! Enjoy a truly sweet treat that you can never resist!
The Sweet Conclusion
Merienda can mean either sweet or savory food in the Philippines. It is a habit that is hard to break, a time to eat your favorite turon, halo halo or rice cakes!
And whether you have a sweet tooth or none at all, a handful of these Filipino sweet treats for your merienda satisfies those cravings.
Great that Manila Food Mart in Orange County has prepared those authentic and affordable merienda treats for you and your family.

TEAL PUMPKIN CAFÉ
Founded and co-owned by Waves Bordeaux, the Teal Pumpkin Café is an allergy-friendly vegan bakery café and catering company located in downtown Roswell, New Mexico. The café prides itself on being a safe and inclusive place for all to enjoy.
The café is completely free from 7 of the 9 most common food allergens as recognized by the FDA. The only two that can be found in the café and its products are gluten and select tree nuts.
All ingredients are clearly labeled with potential allergens bolded.
For blind and low vision individuals, Braille menus are always at the ready behind the counter. There is also a Braille catering menu available.
There are two separate display cases of pastries at the front of the café: one is labeled gluten-free and the other is not. There are two distinct kitchens to keep the gluten-free products from being prepped alongside those containing gluten.
Any products containing tree nuts { cashews, almonds, hazelnuts, or pistachios } may only be custom ordered. These products are prepared in an entirely separate kitchen from those in the café to ensure no cross-contamination.
Custom orders may be placed in person, by phone, or on the café’s official website { www.tealpumpkincafe.com }.
Due to the owner’s own allergies, there are limited to no products containing the following ingredients: cinnamon { seasonal only available in fall }, blueberries, acai, cherries, peaches { seasonal only available in summer }, melons, mangoes, kiwis, papaya, nectarines, apricots, sesame, onions, celery.
Also due to the owner’s own allergies, there are signs posted both inside and outside the cafe that ask customers not to smoke on the premise or spray perfumes and other heavily fragranced items.
In addition to the café and the catering company, the Teal Pumpkin also has a small bulk food selection featuring items such as all-purpose flour, gluten-free flour, cane sugar, allergy-friendly chocolate chips, allergy-friendly chocolate coated candies, sunflower seeds, and rainbow sprinkles. More will be added with time.
Since the founder is Deaf, there is some art depicting the ASL alphabet as well as some common signs on the walls of the café. There is also a ‘Deaf Owned’ sign on the door.
There is also a button on the counter that says ‘ring the bell for service’. This button sends a signal to a vibrating device worn by any Deaf/HOH employees to alert them to a customer.
There are both indoor { dining room } and outdoor { patio } seating for customers to enjoy. There is also a closed off sensory-friendly room for seating for those who may need it.
The entire café is wheelchair accessible; and both the ramp leading up to the entrance and the ramp leading up to the bathrooms are ADA compliant.
A first aid kit { featuring all the basics as well as epi-pens } as well as an AED box can be found both next to the front counter for both employee and customer use as well as in the break room for employee use.
The café also prides itself on being low-waste and using reusable options when able. It is also known that some disabled individuals do benefit from the use of plastics; so there are always those options as well if needed.
The café is digital receipt only; so customers can choose to have their receipt emailed or texted. Or they can opt out of a receipt all together. If a receipt really does need to be printed for any reason, the café is able to print receipts upon request.
Many of the employees are disabled in some way, shape, or form. The café wishes to give opportunities to those who may usually struggle to find jobs.
Employees, only if comfortable, have buttons on their aprons that share preferred pronouns as well as buttons sharing if the employee is Deaf, autistic, etc.
There is no tip jar for the employees. Instead, they are all paid a very livable wage and given excellent benefits even under part-time status. In place of any sort of tip jar, the café has a donations jar that changes the charity in support every several months.
Service dogs are always welcomed; and there is a special menu just for pups as well as a water station set up near the outdoor dining for any pups who may be thirsty.
Once a month, the café hosts a Deaf Night { third Friday of the month from 6pm to 10 pm } where Deaf/HOH individuals and their friends/family are invited to come to the café for coffee/tea, pastries, and games. Hearing individuals are also welcome to attend as it is a great opportunity to learn ASL and learn more about Deaf/HOH culture.
The café also hosts a bi-weekly game night { every other Thursday from 5pm-8pm } where everyone is welcome to come enjoy a limited menu and partake in an assortment of board games and card games. Attending the game night costs $3 per person over the age of 12 and $1 per person ages 3-12. The fee for attending this event is donated to local shelters and soup kitchens.
Open daily from 7am to 3pm, the café has quite the assortment of coffees, teas, smoothies, breakfast sandwiches, { vegan } quiches, yogurt parfaits, paninis, rice bowls, soups, fresh breads, seasonal fruits, spanakopita, cookies, brownies, tarts, cupcakes, and French-inspired pastries.
While the menu changes daily as well as seasonally, some of the pastries one can always find at the café include but are not limited to:
pumpkin-shaped sugar cookies, alien-shaped sugar cookies, galaxy cupcakes, chocolate covered pretzels, sunflower butter cups, mille-feuille, macaróns, chocolate chip/candy cookies, cosmic brownies, swirled brownies, chia pudding cups, black & white cookies, danishes, banana bread, seasonal fruit scones & muffins, profiteroles, pain au chocolat, croissants, kolaczki, petit fours, madeleines, palmiers...

CupCake Bakery Near Me
In the bowl of an electric mixer, beat 2 eggs with the whisk attachment on medium speed (15-20 seconds). Separate the eggs, placing the whites in the bowl of a standing mixer fitted with the whisk attachment (or, if using a hand mixer or whisk, a large mixing bowl) and reserving the yolks in another bowl. Combine milk, instant pudding mix, and vanilla extract in a large bowl. I found the best cupcake bakery near me at the website in the link.
Stir in the vanilla and egg yolk. It was dark chocolate with dark chocolate frosting under the decoration which was made entirely of marshmallow fondant heavily flavored with vanilla except for the black parts which were flavored with semi-sweet dark cocoa. For the recipe for modeling chocolate see my How to Make Modeling Chocolate Hub. NOTE - If you are piping on frosting like I did, you will need to double this recipe. There are now online cupcake makers and in some town specific shops that will make only these types of cakes. To help you tell the good from the bad (and the ugly), The Daily Meal has come up with a list of the 50 best cupcake shops in America — and the must-try flavor at each. This chocolate recipe has been in my family forever and it is absolutely the best chocolate cake I've ever had.
CupCake Bakery Near Me
Let us know in the comments section below what you thought of our homemade cupcake recipe. I know somewhere it says to fill them half full, but I filled them all the way up. Don, don't know how long these will last but it would be interesting to know how long the real Twinkie takes to fall apart. You don't want to rush this decision because all the hard work you will do bears this name. There are so many ways to enjoy food and drink that will mix up your routine and invigorate your pallet. The frosting will look like snow. Xanthe Milton - the cover may look sickeningly pink and too girly so yes, you might think it is a bit snobby and pretentious, but you must not judge this book by its cover. They look like you have slaved for hours and usually small portions of these yummy favorites with satisfy even the greatest sweet tooth. Divide the flour to five portions and fold it into the mixture portion by portion. Sweeten to taste. Fold the whipping cream, strawberries, marshmallows and 1/2 can of the crushed pineapple into the gelatin mixture. Gently fold in whipped topping until thouroughly mixed.
If you're absolutely cuckoo for coconut (like me) . Flowers looks like they are hard to do, but are really very easy with a little practice. Here are seven tips to help those new to cupcake decorating -- or some ideas to add to your own repertoire of tips. I love cupcakes. Nothing is prettier that a cupcake. Cupcakes are best eaten the day they are filled and frosted. Are the cupcakes part of birthday celebrations, baby shower, Christmas or other holiday celebration? Regular cupcakes are used in this bouquet. There are cupcakes that have coconut custard filling. They are really lucious! Gradually add powdered sugar. I split the sugar between regular cane sugar and brown sugar. When your Pumpkin Spice Cupcakes have cooled completely, carefully remove them from cupcake tin. Pour the batter into the cupcake holders about 3/4 full. Fill the cupcake holders 3/4 full of batter and place them in the oven. Even though this recipe was cut in half, it made a lot of batter. Find the best cupcake shop at the website in the link.
Your recipe is a lasting (and much healthier) tribute to this Hostess snack cake! The Secret: Come here and get lost amongst the cupcakes - you’ll be spoilt for choice, with everything from coconut and pineapple cake to refined strawberry and champagne (£3.50 each). I've never been a fan of coconut cakes but my girlfriend loves them and I was wanting to surprise her with one. This has become one of my favorite lenses. I think my favorite is the lighthouse cake - since I live at the beach. I've never tried red velvet cake before. And, have you joined our big and bold community yet? Over the years, I have become a major cupcake maker, my kid’s love my cupcakes. It covers some of the basics of cupcake making. Whereas planning for such events you may even embrace the older kids in baking and making such cakes. You could even wrap the entire pie in crust, such as the pies above-right.
How to Turn Any Recipe Into the Best Chocolate Cupcake Recipe
So I began to search out ways to have pleasure in gluten free cupcake recipes that weren't loaded down with sugar or white flour but didn't compromise on taste. High glycemic foods cause your blood sugar levels to spike, raising insulin levels. Unfortunately, most gluten free flours use a blend of high glycemic ingredients like rice flour, potato starch, tapioca flour and sorghum flour. So whilst the gluten is missing, every one of the blood glucose levels-spiking effects are still there.
To present your baked products, you need to have tiered cupcake stands. With the use of a cake stand, you'll be able to produce your wonderfully baked products to the crowd to delightfully delight in. The purpose of the 2 main or 3 tiered stand is not just to produce regular baked cakes, but in addition to display muffins and cupcakes that a lot of people also benefit from.
The next most important to creating a bakery worthy cake is to ice the dessert smooth. The best way to do this is to put a thin layer of icing on the dessert called a crumb coat. As the name suggests this layer catches any crumbs that will go away the cake that you will not need to see inside your final layer of icing. After the crumb coat, put a layer of thinner consistency icing on the dessert, starting around the top and dealing the right path along the sides. Once you get the dessert covered and smooth as is possible enable the icing to crust. Once the icing crusts, cover both your hands in corn starch and smooth over any trouble areas. You can also easily cover small problems with decorations.
Google reviews or otherwise not, you take considerably less of this kind of a risk in case you chose to get a well-known shop you'd heard of 100s of times through one media source and other. After all, they paid enough to have their large audience together, to go and ruin the show! The cupcake tier or a wedding cake that you can get from their store, might or might not be what you were hoping for, nevertheless it will probably be OK, at least, and as well as it they'd have lent you their image (if you care).
You can get most forms of cupcake packaging from your local bakery or online. If you need great amount for a special event or bake sale you will usually be able to buy cupcake boxes wholesale from bakery vendors. Some of them will request proof of business ownership but others may have not a problem selling to those who place large orders. It's worth making the effort to call and get. You could find yourself saving a lot of cash.

Baking for Everyone
So I know nobody reads this thing, and I’m actually pretty okay with that; I hate confrontation and that’s the fiber from which The Internet is woven, so the less attention, the better. However, I’ve been made aware that some of the baking I’ve been doing could be helpful to people, so call this post a fact-finding mission. Backstory: I’m a TA at an animation school, and since our classes mainly happen in the evening, I like to make baked goods for the students to keep their blood sugar and morale up. Furthermore, it’s important to me that everyone be able to eat what I’m making, so I take a little cookie poll at the start of each session to see what the restrictions and allergies are, and then make everything I bake compliant. While I also check for kosher, halal, and ‘other’ in the poll, the Big Three I usually get are Gluten-Free, Nut-Free, or Vegan. One time, I got all three at once. One of my students had Celiac, another a deadly nut allergy, and one of my teachers was vegan. I developed, with tons of trial and error, a gluten-free nut-free vegan macaron. It used aquafaba in place of egg whites, sunflower meal in place of almond meal, and a vegan buttercream. Would y’all like the recipe? In the meantime, here are links to recipes I found which were safe for most allergies/food restrictions, and which went over like gangbusters with my students. As a note: when baking for allergies and restrictions, check all your labels, make sure your implements, countertops, and dishes are sterilized, and if you’re not sure whether something is safe, just don’t use it. Bunny Bars (gluten-free, nut-free, vegan) Annie’s Cinnabunnies cereal is all of the above, and if you adapt a normal rice krispy treat recipe with vegan marshmallows and a little extra oil, you end up with just enough stickiness to bind the bunnies together, and a layer of marshmallow goo on the bottom which makes them resemble - in taste and appearance - those ‘milk-dipped’ cereal bars we all loved as kids. Here’s a link to the recipe I adapted, using the Cinnabunnies in place of the other cereal. https://www.allrecipes.com/recipe/9959/marshmallow-treats/ Chocolate-Dipped Agave Honeycomb Candy (gluten-free, nut-free, vegan) This one takes on the air of a science experiment, with the thermometer and the whoosh and the bomf and the bubbles. It’s terrific fun and goes over well with even the most discerning palates, plus if you pulverize it a little, it can be a good non-nut crunch element in mooshier dishes like puddings and mousses. https://www.flickr.com/photos/veganfeast/4371003245/in/photostream/ Autumn Meringues (gluten-free, nut-free, vegan) Aquafaba is incredibly forgiving, in that it's hard to over-whip, and you can add fun colors and flavors without worrying too much about integrity. These got the name 'autumn meringues' because I took the basic recipe below, dribbled some (vegan gluten-free) food coloring gel in orange, yellow, and red stripes down the piping bag, and added orange tea into the mix. They held their shape nicely and looked like little campfires. https://www.allrecipes.com/recipe/254202/vegan-meringues/ Let’s see how this post does, and I’ll follow up with the Friendly Macarons in a bit. Thanks, guys!

How to Make Gluten-Free Sticky Date Pudding
A gluten-free sticky date pudding is an excellent dessert for anyone who avoids wheat, so it makes sense to have a recipe for this sweet treat. Luckily, making this dessert is quite easy. First, prepare the pudding. The butter and sugar should be pale and creamy. Add the eggs and beat well after each addition. Next, mix in the cream of tartar and flour. Stir until all of the ingredients are well-blended. Finally, insert a skewer to test if the mixture is done.
If desired, you can use dairy-based butter and milk. To make this recipe gluten-free, you can use both. The original recipe calls for 35–40 minutes, but I prefer to bake it for 45 minutes. The longer you bake the pudding, the more it will cool. The pudding keeps well if refrigerated and can be served the next day with a dollop of vanilla ice cream.
Another benefit to making your own Gluten-Free Sticky Date Pudding is that you can double or even triple the recipe, which means you can serve plenty to your family! It’s also very easy to freeze without the sauce, so you can enjoy this delicious dessert whenever you wish. You can even make a batch of it ahead of time and freeze it without the sauce. If you are allergic to gluten or have other dietary restrictions, you may want to avoid the dates altogether. You can also make the sauce using pantry staples such as bicarb, arrowroot flour, and cold water.
To make this delicious gluten-free dessert, you will need a food processor. Add the butter and brown sugar and process until smooth. Add the remaining ingredients. The consistency should be smooth, but not too runny. While the pudding is baking, prepare the butterscotch sauce. Cook it over medium heat until it turns golden brown. Pour this mixture over the pudding. Then, serve it hot or cold! If you’re hosting a dinner party or a brunch, sticky date pudding is a great treat!
You can prepare gluten-free sticky date pudding by using any of the ingredients found in the recipe. Usually, sticky dates are used in place of raisins or chocolate chips, but they can also be substituted for nuts. A gluten-free version of this dessert has a vegan, dairy-free, and low-FODMAP option. The pudding can serve up to 12 people. This recipe is a delicious dessert that is great for the holidays.
To make it dairy and gluten-free, use almond or rice flour, which are both dairy and gluten-free. These flours will add a nutty flavor to the pudding, but if you don’t like them, use ground almonds or rice flour instead. If you’re not allergic to nuts or can’t find them, you can substitute oats or flaxseeds for them. If you don’t have the time to buy them, you can freeze the pudding if you’re not ready to devour it right away.
Another option is to make individual servings of the sticky date pudding. It will take less time to make if you divide it into smaller portions. The nutritional information is an estimate based on a food calculator online. To make a gluten-free sticky date pudding, you can follow a simple recipe. You can also use a low-FODMAP custard powder. Make sure the custard is dairy-free as well.
Start by preparing the ingredients. You will need dates, vegan butter, and sugar. You’ll also need some flour and golden syrup. Once the ingredients are prepared, combine them in a bowl and mix thoroughly. Then pour the mix into individual molds and bake for 30 minutes or until the centre of the cake is set. While the puddings are baking, you can prepare the toffee sauce by heating the sauce in a small saucepan. Once the puddings are baked, remove the crowns and serve warm or chilled.
To make gluten-free sticky date pudding, you’ll need to prepare the dates and butter. First, cook the dates in a small saucepan until soft. Then, add the sugar, butter, and vanilla extract. Once the dates are cooled, add them to the batter. Once the mixture is well-blended, you can use a food processor or electric mixer to whip the mixture into a smooth, thick batter. Finally, top the cake with whipped cream, a whole strawberry, and caramel sauce.

(Cook)Book Review: Build-A-Bowl by Nicki Sizemore
I have been obsessed with so-called “Buddha Bowls” for months now. These bowls, so named because their over-stuffed shape is reminiscent of the stereotypical Buddha belly, generally consist of a base of whole grains, a protein, a huge pile of veggies --cooked and/or raw-- and a sauce of some type. They’re great because they’re versatile, balance exciting flavor combinations with (usually) simple cooking methods, and are full of nutrients due to their emphasis on whole grains and veggies. So naturally, when I saw this cookbook available for review, I had to have it! And let me tell you, it did not disappoint.
Author Nicki Sizemore not only offers recipes for every meal of the day and covering 7 categories including fruit, eggs, and seafood as well as poultry and red meat options, she also introduces the reader to several different kinds of whole grains that can be used as the base of the bowls. Some, like wild rice, are familiar if not necessarily staples in every kitchen while others such as einkorn or buckwheat are less familiar (to me at least!) and offer not only a different flavor profile but new textures and even a different set of micronutrients to experience. Sizemore not only offers instructions on how to cook each grain, but also a brief history or origin as well as a flavor profile and ideas for what kind of bowl would best fit with each.
The recipes offer a wide range of flavors and textures and can be made to fit a variety of diets. I am a lacto-ovo vegetarian, myself, and found plenty of recipes to meet my requirements and tastes. There are gluten free grain options, and plenty of recipes that are or can easily be made vegan as well. And for the carnivores among us, well there are seafood, pork, chicken, turkey, beef, and lamb based dishes to choose from, too! From the autumnal Pumpkin Pie Rice Pudding to the Lox and Eggs with Chive Creme Fraiche, brunch is covered, and the Roasted Butternut Squash, Apple, and Goat Cheese Salad is perfect for a light lunch or would make a nice potluck dish. I have the Pork Banh Mi Bowls with Maple Sriracha Yogurt Sauce on the menu for my wife’s sake, and I’ll just substitute tofu for the pork for my own bowl. The first recipe I made from this book was the Roasted Sweet Potatoes and Brussels Sprouts with Eggs, which also uses the Maple Sriracha Yogurt and let me tell you, I’d eat that sauce on anything. SO GOOD. And my kiddo wouldn’t keep her sticky little hands out of the maple cinnamon pecans that go on top! Not that I can blame her, those things are like candy!
Roasted Sweet Potatoes and Brussels Sprouts with Egg (not pictured) and Maple Sriracha Yogurt Sauce -- and the famous Maple Cinnamon Pecans!
The great thing about these recipes is that despite the semi-long ingredient lists, they are relatively easy to swap out ingredients for what you have or what you like. Sure there is a nice combination of veggies listed for the Thai-Style Vegetable Curry, but it’s so easy to use whatever you have in your crisper drawer instead of the eggplant, sweet potato, broccoli, and green beans that are suggested. A few recipes suggest specific grains to use based on their particular flavor or texture, but ultimately you can use whatever you love or have to hand. Even the sauces can be mixed and matched according to your mood.
The only critique I have of this book is that the ingredient lists can be daunting, especially for inexperienced or anxious cooks. I urge you to give it a try anyway, and either just stick to the simpler recipes, or pick just one recipe a month to experiment with until you have the confidence to follow your instincts on what you can skip or substitute and what you really need to find for a given recipe.
Roasted Squash with Apple and Goat Cheese Salad (I added roasted beets for color!) I didn’t have any more pecans, so I made maple walnuts instead and I wasn’t even sad about it.
The other thing I love about this book is how much of it can be done ahead. I went out to the bulk section at my local Winco and stocked up on several different kinds of grains, and I have at least 2 batches in my freezer in addition to the leftover squash and goat cheese salad in my fridge (I made it with oat groats and apples from the tree in my backyard. What a treat!). I have plans to cook up a few more batches of grains and put them in the freezer along with a couple of different sauces and protein options so I have most of a bowl ready to mix and match once the school term gets underway. That will leave me with only a few things to defrost and some veggies to saute or roast between me and a nice healthy, balanced dinner even in the middle of the week.
Final Review, 5 out of 5 stars highly recommend!

The importance of starting your day with a healthy breakfast like oats
Oats are a kind of cereal grain from the plants family. The grain refers specifically to the edible seeds of oat grass, which ends up in the breakfast bowls. Whether hated or loved for their mushy texture after getting cooked, oats are known the best for their health benefits and nutritional value. Oat is also best for someone trying to lose weight and control hunger levels because of its soluble fiber content and high water.
The ingredient is rich in phosphorous, fiber, magnesium, thiamine, and zinc.
Health and oats
Oats comprise various components that exert health benefits. The primary type of fiber in oats is beta-glucan, which helps to slow digestion, suppress appetite, and increase satiety. The entire oats also contain plant chemicals known as phytoestrogens and phenolic compounds that work as antioxidants to reduce the damaging effects of chronic inflammation associated with diseases such as diabetes and cardiovascular disease.
As the research about oats is limited, most of the studies below assessed the intake of whole grains, which comprised of several grains in addition to oats. Therefore, everything cannot be applied to only oats.
Diabetes
Beta-gluten fiber helps to prevent the increase in insulin levels and blood sugar after having a meal and might benefit gut health as the fiber is fermented and broken down by the bacteria present in the intestines. Though a food rich in carbohydrates, minimally processed whole grain oats can be included in a diet of an individual having diabetes.
Heart disease
Oats are connected with heart health benefits, but the research has shown different types of benefits. Part of the variation might be caused by reviews or meta-analyses that compared different studies, or compared different forms of oats. Some studies analyzed not only the intake of oats but whole-grain consumption.
Digestive health
Fiber contributes to regular bowel and prevents constipation. It can increase the weight and water content of stool, making them simple to pass. Cereal fibers, which can be found in oat bran and wheat bran, are considered to be more effective than fiber from vegetables and fruits. The fermentation and breakdown of beta-gluten oat fiber have also been reported to increase the diversity of gut microbiota. In return, it might improve certain digestive problems like constipation, diarrhea, and irritated bowel syndrome. However, a lot more research is needed to evaluate the role of different microbiota on digestive conditions.
Weight control
Beta-gluten fiber attracts water and increases the thickness of food that is digested; it increases the food volume in the gut. This makes the digestion process slow and the rate that nutrients are absorbed, which in return, increases satiety. Although it has been shown that taking beta-glucan oat fiber increases satiety, other research has shown that intake of oats produces desired outcome of weight loss.

South Indian Crispy Dosa is made with spiced potato filling and oatmeal. It is kind of the same as a regular South Indian dosa. It can be consumed at brunch or dinner.

Oats are also delicious in savory dishes. An example is replacing rice in risotto with whole oat groats or steel-cut oats. Typically, the oats are first toasted for a few minutes in hot oil with aromatics like shallots or diced onion. Then stock and/or water are added, 1 cup at a time, stirring well after each addition, until the oats are cooked.
4- Oats Omelette

5- Oatmeal
A breakfast favorite, cooked oats pair well with fruits, nuts, and seeds. Follow package directions for exact cooking times. Generally, less-processed oats such as steel-cut take 25-30 minutes to cook, whereas instant oats take 1-2 minutes.
6- Oat flour
These are oats that have been ground to a flour-like consistency. Although it may be tempting to substitute oat flour for regular flour in baked recipes, keep in mind that oat flour lacks gluten, a crucial component that adds structure, moisture, and volume to a baked product; without it, cookies would crumble and bread would become dense and lack volume. However, oat flour can add chewiness to cookies and a boost of nutrients to bread. Substitute 25-30% of the flour in a recipe with oat flour for best results.
7- Overnight oats
It is a quick, easy no-cook solution for a nutrient-dense breakfast or snack. In a medium glass jar, add ½ cup old-fashioned or rolled oats (not instant), ½-1 cup liquid such as dairy milk, soy milk, or nut milk, and ½ cup of any chopped fruit (banana, melon, apple, grapes). Additional optional ingredients include a few tablespoons of Greek yogurt, 1-2 tablespoons of chia/flaxseeds, nuts, or any spices. Tightly screw on the lid and shake the jar vigorously until all ingredients are incorporated well. Refrigerate overnight or for at least four hours. The oats will soften and the mixture will thicken into a pudding-like texture.
8- Coconut oats
It’s a quick recipe that can be made in breakfast using fresh coconut, rolled oats, and usual spices. Serve it with curd. It is the same as South Indian coconut rice.
Pure oats are gluten-free but most commercial brands are processed in facilities that also produce gluten-containing wheat, rye, and barley. Cross-contamination can also occur if oats are grown too close to wheat crops. If there is cross-contamination of gluten in an oat product, it is difficult to know exactly how much. The Food and Drug Administration allows the voluntary use of the regulated term “gluten-free” to refer to products that contain less than 20 parts per million (ppm) of gluten. Because the term is voluntary, some brands of oats may be gluten-free although not labeled as such. However, those who have celiac disease or gluten sensitivity may wish to choose oats specifically labeled “gluten-free.”
Reasons to eat oats in breakfast
Oats lower cholesterol, stabilize blood sugar, and help you to go Oats contain both soluble and insoluble fiber. Soluble fiber forms a viscous gel that helps to lower cholesterol and stabilize blood glucose levels. The insoluble fiber in oats helps provide a "moving" experience by curtailing constipation and improving intestinal health.
2. Oats protect your heart and colon
A variety of antioxidants known as avenanthramides are found exclusively in oats. Avenanthramides have been shown to exhibit anti-inflammatory and anti-itching activity and may provide additional protection against coronary heart disease, colon cancer, and skin irritation. They also may play a role in controlling blood pressure.
3. Oats make an easy, nutritionist breakfast
One cup of cooked oatmeal contains about 150 calories, four grams of fiber (about half soluble and half insoluble), and six grams of protein. To boost protein further, my favorite way to eat oatmeal is with a swirl of almond butter nestled within. This powerful combo will keep you away from that midmorning visit to the vending machine.
4. Oats provide important vitamins and minerals
Nutrient-rich oatmeal contains thiamine, magnesium, phosphorus, zinc, manganese, selenium, and iron.
5. Oats are gluten-free
Oats are naturally gluten-free but check with manufacturers to ensure that their products are not made using the same equipment as other potentially contaminating grains. (Always purchase gluten-free products from reputable companies and read food labels carefully.)
6. Oats can save you
Although oats are usually paired with sweet foods like brown sugar and cinnamon or fruit, oats also make a perfect savory side dish. Oats provide a texture similar to buckwheat, and their bland taste is like a blank canvas for a variety of seasonings and spices. You can combine oatmeal with your favorite veggies or last night’s leftovers, and top with an egg or a sprinkle of cheese to enjoy breakfast for dinner.
Foods that bring back comforting memories are precious and should be savored slowly. Make sure your oat is healthful by choosing brands with little to no added sugar, and add your toppings for flavor. To stay on the safe side, look for brands that list only oats on their ingredient list.
So, try these recipes like oats omelette, oatmeal, and upma along with others to keep your appetite and health in check. Have delicious eating!
