Wash cauliflower florets and dry well. Grate cauliflower florets in a bowl and add all ingredients then mix well. Do not add any water because cauliflower has lots of their own water so mix well until it becomes like a soft dough..
Grease your hands with oil and make 12 equal sized balls then set a side. Take a nonstick pan, add oil and shallow fry all balls till nice and golden brown on all sides. 🌻Meatballs: Combine all meatballs ingredients in a food processor and process to combine for about few minutes or just until mixed.
Using a bit of oil to grease your hands, form into meatballs about 1 ½ inch in diameter. It should make around 20-25 meatballs. Set aside..
🌻Curry: Rinse your food processor Then use the pulse function to chop the onion. Remove and set aside. Then chop the tomatoes and green chili Set aside.
Heat a large, heavy bottomed pan over high heat. Add the oil and whole spices, and allow them to sizzle for a few seconds. Then add the chopped onion and sauté, stirring often, for 7-8 minutes, or until golden. Lower the heat to medium-high. Add the garlic and ginger & sauté another 2 minutes, until the onions have deepened even more in color..
Add the tomatoes and green chili mixture, followed by the yogurt, spices and salt. Sauté for 4-5 minutes or until the oil starts to separate from the mixture..
Add 2 cups water and raise the heat to bring to a boil. When the water comes to a boil, lower the heat to the lowest setting. Once it has stopped boiling, arrange the kofte in a single layer..
Raise the heat to medium, cover and allow it to cook for 10 minutes. Uncover and gently stir the kofte. Lower the heat to low-medium. Cover and allow it to simmer for another 35 minutes, stirring once in between, until cooked through. Boiled eggs and set a side..
Sauté to evaporate water to make the kofte to desired consistency. Taste and add salt, if needed. Peeled eggs and arrange in pan Sprinkle in garam masala and cilantro. Serve hot with roti, naan or boiled steamed rice. Enjoy !!!.

“Eid ho, Holi ho ya Diwali… (Be it Eid, Holi or Diwali) we work on all festivals,” begins 41-year-old Syed Gulab. “These poor folk outside hospitals should’ve been celebrating Eid with their families too but here they sit… waiting for their loved ones,” he adds. Having cared for the attendants and relatives of the hospitalised for almost four years now, Gulab is used to feeding nearly 300 people, two meals a day in Bengaluru. And this Eid, he says, he is going to prepare a meal for approximately 250 people. The menu is carefully thought out. “We will probably make egg curry, a vegetable pulav, and a mithai — maybe Kheer Seviyan which we serve at home. For the kids, we take bananas and biscuits,” he says.
While Gulab’s own Eid will probably not be that extravagant an affair owing to the lockdown, the father of three says, “Namaz will be read at home as we can’t gather at mosques. My kids will want to wear something new, so I will see what I can do… sirf bacho ke liye (only for the kids).”
Syed Gulab
Gulab began the Roti Charity Trust NGO in 2016 when after visiting his friend’s daughter in the hospital he saw those who couldn’t afford meals, as they were paying for the treatment of their loved ones. A former spray painter working in the Gulf, he began cooking food for nearly 200 people himself and would distribute it every Sunday at the junction of four hospitals in Bengaluru — Enhanced Health Care, Indira Gandhi Institute Of Child Health, SDS Tuberculosis Research Center & Rajiv Gandhi Institute of Chest Diseases and Sanjay Gandhi Institute of Trauma & Orthopaedics. Within six months, his feat became a daily affair as he began to serve the people breakfast along with lunch, and thereafter he registered his NGO with the city’s municipal corporation.
When the coronavirus pandemic hit, Gulab says the NGO’s funds dried up as “donors stopped funding”. “Migrant workers used to call me saying they don’t have food. Even the association for labourers here asked me to help out. So, we began making ration kits of dal, rice and atta for them. So far, we have distributed 8,000 ration kits,” he says, adding that he has raised over ₹72 lakhs in less than a month, through a fundraiser with Milaap, a crowdfunding platform. It was Milaap that had got in touch with Gulab two years ago. “Some of our users had pointed out media coverage about his initiative and asked for a way to help him. So, we reached out to him and helped him start a fundraiser,” says a Milaap spokesperson. The goal of the fundraiser is to raise ₹10,000,000 to feed daily wage earners in Bengaluru but Gulab adds, “Upar wale ki marzi ho toh hum pure India ki seva kar sakte hain (God willing, we will one day be able to serve all Indians not just Bengaloreans)”.
Ask him how he managed to get supplies during the 60-day lockdown and he says, “When the lockdown began, we had a month’s worth of vegetables with us. But mirchi (chillies), onions, potatoes were not available. We had to apply for an NGO pass to travel around the city to get these vegetables. Every morning, the vendors would sell their produce from 8am to 9am. So, we stalked our freezer with a week’s ration.” He further adds, “At the hospitals, we spoke to the people and asked them to maintain social distancing but as soon as we brought out the food, crowds would gather. So now we distribute parcels.”
But is he scared of the coronavirus? “I’m always scared but if we NGO people don’t do anything then how will it work? Sirf upar wale ki rehm hai aur logo ki dua hai (By God’s grace and the prayers of the people I feed, I am surviving),” he concludes.

Dals or lentils are one of the main source of proteins and micronutrients for the vegetarians. In India Dal is a basically a soup or stew made with lentils with any kind of lentils with or without vegetables. Palak is Spinach one of the low calorie superfood loaded with nutrient like calcium, iron, and vitamins. Lehsun is Garlic and Lehsuni refers to a the strong garlic flavour in any dish. Dal Palak Lehsuni is a dal/lentils and spinach cooked in onion tomato masala strongly flavoured with garlic. It is one of the wholesome food that provides all the vital nutrients. For Indians Dal forms an integral part of their lunch/ dinner menu along with rice and chapatis. Various lentils are also used to prepare a variety of snack and dishes.
Dal Palak Lehsuni Main Ingredients and benefits
Different varieties of moong dal like Dhuli Moong(Split Moong with skin), Chilka Moong(Split Moong with skin) are commonly used to make Dal Palak. I use any of the Dal that is available with me but my kids like it more when made with Dhuli Moong( Split Moong without skin) more than the Chilka Moong(Split Moong with skin) . In this recipe I have used Dhuli Moong/Split Moong Without Skin. Moong lentils or Moong Dal is rich in antioxidants, proteins, minerals, folate. It is very light on stomach and easily digestible and is used in ayurveda for detox and curing various ailments.
Spinach is in season now along with the other winter greens and I make a good use of this seasonal green. Check out Palak Paneer, Palak aur Kabuli Chane Ka Pulao, Palak Paneer Parantha, Sarson Ka Saag and many other recipes where I use a Palak or Spinach.
Many people like to add a rich tempering of garlic along with hing/asafoetida and those who avoid garlic in their food make it without it. In winters I prefer a rich tempering of garlic with red chilli powder in desi ghee as garlic because of it immunity, antifungal and antibacterial properties. Elders in family always stressed on adding garlic in food especially in winters. In summers we limit the use of garlic due to its heat generating properties.
How I make this fingerlicking and so flavourful Dal Palak Lehsuni..
Making Dal Palak Lehsuni is very easy and simple. I used to cook the dal in pressure cooker, now since I have got Instant Pot, I make full use of it. The recipe below, includes the steps to cook dal in stove-top pressure cooker and Instant Pot also. The recipe also has separate steps to make onion-tomato masala/bhuna masala and tempering.
Dal Palak Lehsuni
Split Moong (Dhuli Moong) cooked with Spinach(Palak) in onion tomato masala flavoured with garlic and garam masala. A light and nutritious Lentils and Spinach curry/ soup flavoured with garlic and garam masala. Stove-top Pressure cooker and Instant Pot recipes included.
1 Cup Dhuli Moong / Split Moong without skin
1 small bag Fresh Spinach leaves (approx. 250 g)
1 Medium Onion
2 Tomatoes(Medium)
5-6 Garlic Cloves
1" Ginger Piece
1/2 tsp Turmeric Powder
1 -2 tsp Garam Masala Powder (as required)
1/2 tsp Red Chilli Powder
1/4 tsp Hing/Asafoetida (pls see notes)
1-2 tbsp Desi Ghee
Salt to taste
1 tsp Cumin Seeds
1 tbsp Kasuri Methi/Dried Fenugreek Leaves (optional)
Wash the lentils/dal and soak for 10-15 minutes.
Wash spinach leaves nicely in water. Drain the extra water, and chop the leaves.
Finely chop, onion, tomatoes, garlic and ginger. Keep half of the garlic aside, to use in tempering the before serving.
Stove-top Pressure cooker Method
In a pressure cooker, add dal and water. .Water should be around 2 cups. Switch on the stove-top to medium flame and let dal come to boil. Discard the froth that accumulates on the top.
Add turmeric powder, finely chopped spinach leaves and salt. Close the lid and cook till 2-3 whistles. Switch off the flame and let the pressure release on it’s own.
Meanwhile prepare the onion tomato masala. Add masala and mix well, once the pressure releases. Temper the dal with cumin seeds ,red chilli and some more garlic before serving.
Instant Pot Method
Add soaked lentils in inner pot of Instant Pot along with 1 and 1/2 cups of water. Switch on the Instant Pot to saute mode and set the timer for 5 mins.
Let the lentils boil, discard the froth that accumulates on the top. Prepare the onion and tomato masala when the lentils are boiling. Making the masala takes only 5 minutes. It will be ready by the time lentils boil.
After discarding the froth add turmeric powder , salt and spinach leaves and onion tomato masala.
Cancel the saute mode, close the lid of Instant Pot , set the pressure cooker mode on high, with the timer for 5 minutes.
After the timer goes off, release the pressure and mash the dal a bit. Adjust the consistency of dal by adding more water if required or cook the dal on saute mode for another 2-3 minutes for a little thicker consistency. Close the lid and keep it till the serving time.
Temper the Dal before serving.
For Onion Tomato Masala(also known as bhuna masala)
In a pan, add ghee/oil, when hot add cumin seeds, once the seeds crackle, add ginger and garlic and saute till the raw smell of garlic goes away.
Add finely chopped onions and saute till light brown.
Add chopped tomatoes and cook till soft and mushy.
Add garam masala and cook for another 1-2 minutes. The masala is cooked when it starts giving the aroma.
Add to the Dal Palak , once the pressure released in stove-top pressure cooker or along with the other ingredients in Instant Pot.
To prepare Desi Ghee tempering
In a small pan, add ghee/oil, 1/4 tsp of cumin seeds, once the seeds crackle, add the garlic that we kept aside. Saute till the garlic is brown in color, add red chilli powder and add to dal palak.
Serve hot with rice or rotis.
Tempering enhances the taste and aroma of Dal Palak, skip if you don’t want. Add all the garlic while making the bhuna masala(onion-garlic masala).
While making in Instant pot, I add the bhuna masala, after removing the froth from the lentils, in case you don’t want to prepare the bhuna masala separately, make masala in Instant Pot on saute mode, then add the lentils and spinach and pressure cook the dal. Steps for making bhuna masala remain the same in instant pot also.
I use desi ghee for making masala and tempering for lentils, vegans or those who avoid ghee in their diet can use any oil they prefer.
Those on gluten-free diets, avoid hing/asafoetida.
Those who have Gluten allergies can skip hing/asafoetida.
The dish is vegan friendly , can be consumed by those on low cholesterol diet or are diabetic. For the no-onion no garlic or satvik version skip, onion and garlic.
The dal is suitable for feeding to toddlers omit garam masala and garlic and chilli and temper the dal with cumin and garlic( 1 clove in winters) in very little oil.
Do make this my version of Dal Palak Lehsuni, it is rich and nutritious and it is full in flavours too. My kids like to have it with steamed rice. It can be equally enjoyed with hot chapatis and veggies like Aloo Gobhi or Gajar Matar or even Jeera Aloo.

This dal is one of my favorite. I love having it with plain white rice or roti. This dal is so delicious, it has a spicy flavour. The seasoning has to be done in ghee which gives pure aroma and taste to it. You can enjoy this dal as it is too.

2)Add in chopped tomato, onion ,garlic and ginger
4)Add in turmeric powder
5)Pressure cook for 5 to 6 whistle till chana dal is cooked completely
