Mushroom Broth Recipe

There's a pretty simple backstory here: I wanted to make soup, but when I went to buy groceries the store was out of both vegetable broth and bouillon, but had mushrooms on sale. I did some Internet searching and learned that making your own broth is pretty simple and easy, so I decided to try making my own mushroom broth to use as a substitute for vegetable broth in my recipes.
In my Internet searching, I also learned the actual difference between a broth and a stock. Although most people use the words interchangeably, stock is traditionally made from bones, while broth is made with meat and/or vegetables. This is kind of fun, because it means that "bone broth" is actually, by definition, bone stock, and "vegetable stock" doesn't exist.
This recipe is my own creation but it's very, very flexible. You can swap out the vegetables and herbs to suit your own tastes. If you wanted to, you could switch the brown mushrooms for a trendier medicinal mushroom, like reishi or chaga, or for whatever your grocery store has. You could also use the same method to make other homemade broths, like vegetable broth or chicken broth.
Ingredients:
One carton of brown mushrooms (these are sometimes labeled baby bella mushrooms or crimini mushrooms)
One onion, roughly chopped
[optional] One cup of dry white wine (I used chardonnay)
8 cups water
Dried thyme, to taste
Salt and pepper, to taste
Garlic powder, to taste
Olive oil or another cooking oil
Recipe:
Saute the mushrooms in olive oil over medium heat for 10 minutes.
While the mushrooms are cooking, go ahead and chop the onion. I like to leave the skin on when I'm making broth (it adds a really nice color), but you can remove it if you want.
Add the onions to the pan, and saute for another 10 minutes (or 20 minutes if you decide to skip the next step).
Add your white wine, stir everything together and let it simmer for (you guessed it!) another 10 minutes to let the alcohol cook off.
Add 8 cups of water to the pot with your mushrooms. Add the thyme, garlic powder, salt, and pepper. Turn the heat up to high.
When the water comes to a boil, turn the heat down to low and cover the pot with a lid. Let simmer for at least 2 hours.
When your broth is done simmering, use a sieve to strain out the mushroom and onion chunks and transfer the liquid to a clean container. Store the container in the fridge and use it in the same ways you would use vegetable, chicken, or beef broth when cooking.

🍄‍🟫Reishi Mushroom Marshmallow Recipe!!🍄‍🟫
—3 tablespoons of gelatin
—1/2 cup of local honey
—1/2 cup of maple syrup
—1 cup of filtered water
—1 tsp Reishi mushroom powder
—1 tsp of marshmallow root powder
—1 tablespoon of vanilla paste or extract
—Arrowroot powder for dusting
* Line a square pan with parchment paper and lightly dust with arrowroot powder to prevent sticking.
* In the bowl of your stand mixer, bloom gelatin by combining it with 1/2 cup of water and letting it sit for 10 minutes.
* In a saucepan, mix honey, maple syrup, and remaining 1/2 cup of water. Heat the mixture over medium heat, stirring continuously until it’s steaming. Mix in the Reishi powder to activate its nutrients.
* With the mixer on low speed, slowly pour the syrup into the gelatin mixture. Gradually increase the speed of your mixer to high and continue to mix until the mixture starts to thicken (usually about 5-10 mins, depending on the mixer).
* With the mixer still on high, carefully add the vanilla paste and marshmallow root powder as soon as the mixture begins to thicken. 
* Keep mixing on high until the mixture looks like marshmallow fluff (thick and fluffy).
* Pour the marshmallow mixture into the prepared pan, sprinkle the top with another light dusting of arrowroot powder, and cover with another sheet of parchment paper.
* Allow the marshmallows to set in the fridge for a few hours or overnight at room temperature. 
* Once set, cut the marshmallows into your desired shapes and sizes. Dust the marshmallows with more arrowroot powder to prevent sticking.
* Enjoy in your hot drinks or as a treat!

magick ramen
I’m going to share one of my favorite kitchen witch practices . It’s ramen. special ramen.
Like any spell or magickal working, start with your intention. Is this going to be a bowl of abundance ramen? Does it need to be healing, anti-inflammatory, anti-viral? Mood-boosting? Grounding? And what if you want weed infused ramen??
Gather basic ingredients. noodles. A base broth/powder/sauce if you have it, you can use regular ramen sauce packets and add your other ingredients too, the herbs and spices, veggies and mushrooms.
Intentional herbal ingredients
Healing/immune boost:: ginger, turmeric, black pepper, garlic, cayenne/hot peppers/tabasco sauce, astragalus, thyme, any medicinal mushrooms (i love maitake), cumin
Abundance: basil, rosemary, ginger, lemon thyme, lemongrass, oregano, dill, avocado (avocado ramen when it’s perfected is tooo good)
Grounding: any root vegetable such as carrots, Nutritive herbs like Dandelion leaf or root/burdock root, spinach, oregano, basil, parsley, red clover, nettles, raspberry leaf, oatstraw, sesame oil
Mood management: reishi, ashwagandha, lemongrass, lemon balm, basil/holy basil, ginseng
Weed ramen: All you need is a thc infused oil or butter or a dab of concentrate, depending on the potency a little usually goes a long way.
You can also make a non thc herbal butter and oil infusions for the fatty element of the soup. If you’re an egg ramen person don’t forget the egg!
For the salt element you can make an herbal infused salt by simply mixing some salt with an herb or herbs of choice.
Obviously you can apply these intentional ingredients to any meal, ramen is just so easy and versatile and fun to make. If you make your own magic ramen (yes i use magick and magic interchangeably) let me know how the process goes!

You’ll spot boletus, reishi, russulas, and toadstools just to name a few! The gingerbread is stamped and then rubbed with powdered sugar to give an aged rock feel. It’s safe to say if I could live anywhere, I’d pick this little house!
