We went to the pumpkin patch today, so it's time to make my favorite fall soup, winter squash chowder!

First we chop some onions (supposed to use leeks, but our small town grocery store doesn't sell leeks so we're making due with onions tonight) and cube 2-3 varieties of squash or pumpkin (tonight we're using lakota and tetsukabuto...and like five pieces of kai kai, but it's about as tasty as a jackolantern pumpkin, do not recommend) and two large redskin potatoes.

Then we fry some bacon to render the fat. And put the bacon aside to use as a garnish.

Saute the onions until tender, then add the squash and potatoes (i forgot to take a picture of that one) and cook about 5 minutes.

Add 4 cups of chicken broth and bring to a boil, then cover and reduce heat, simmering until vegetables are tender, about30-40 minutes. I also added salt, pepper, garlic powder, and smoked paprika at this point. Next up, cream, sage, and parsley!
In fact, I need to go pick the sage now while I'm waiting on the vegetables to cook.

Got permission from Lewis to miss class for my oldest's IEP meeting for her speech therapy.
Will have to 'teach'my spef the lab for next week as well as find a day to make up the lab quiz that wil lbe on the controls of for temp (what we learned last week and what I would've been quited on today)
Went with the hubby to drop the kids at school
Went to wlamart to do a return on a shirt I bought him but he didn't lien how i5 hugged his torso
Went to breakfast at denny's (he had an everyday slam, I had the Beetlegeuse 'say it three times' slam)
While in denny's, go a text from mother in law that hubby's uncle (motheri in law's older brother) is in thr hospital with heart failure and something wrong with his lungs.
Went to Martin's for flowers and dollar store for some snacks/a balloon/a card
Spent 2 hours with him so he wasn't alone whike his wife was ruiing errands
Came home and had a simple lunch of hot dogs and beans
Submitted my assignments (have to do so on due date or online e teachers thin you 'rush it' (Digital Citize ship Trianing and a Padlet post about my 'favorite' Digital Citizenship resource, both due in Ed Tech)
Crocheted a bit and had a power nap before it was time to go get the girls
Dinner was baked chicken tenderloins with spinach and roasted redskinned potatoes
No pudding tonight since the youngest barely ate and the oldest was 'stuffed up' by dinner

I work hard, I got paid, I decided I wanted a steak so I did that and I'm gonna probably be full for the rest of my life but man, nothing beats a steak when it's something ya really want. I made mashed potatoes from redskin potatoes and had gravy and sautéed some onions and there's also like, baked yellow squash (had bacon grease and garlic and pepper). And hawaiian rolls, gotta have bread.
I'm gonna sleep like a champ here in about...27 minutes.
