Today is another simple easy salad with 1/2 cup fresh pineapple salsa from @dierbergs, 1 avocado, and 1/2 cup cherry tomatoes, 1 tablespoon hemp hearts over 4 cups spinach. It's my birthday week (yes, that's a thing!) so I decided to "treat myself" to some of my usual favorite fast food... which was a terrible idea and honestly just left me feeling blaaaaaaaahhhhhh and my tummy 😠😕😭. So to course-correct I made a super yummy salad with baby spring mix, walnuts, blue/goat cheese, dried cranberries, crisp apples🍏, diced chicken🐔, drizzled (ok, drowned) with balsamic vinaigrette. And it was so good! 😄 Happy tummy! 🌞 I'm not gonna lie and pretend salad is my favorite thing because it isn't (I'm much more partial to croissants, tbh). I'm the one who has to be forced to eat one while everyone else in my family scarfs them down like there's something wrong with ME for not liking so much lettuce 😝 (can I just have toppings and dressing????). My daughter and I had persimmons for the first time; we found them @traderjoes. She says they remind her of a peach. I put them on top of 5 cups spinach, 1 sliced beet from @lovebeets, with some of my roasted cranberries and pecans and candied walnuts. Loving the sweetness in this salad!
