My daughter and I had persimmons for the first time; we found them @traderjoes. She says they remind her of a peach. I put them on top of 5 cups spinach, 1 sliced beet from @lovebeets, with some of my roasted cranberries and pecans and candied walnuts. Loving the sweetness in this salad!
