Fourth of July is right around the corner and these blueberry pie pops are the perfect companion for the summer holiday! This recipe is from Williams-Sonoma.

Ingredients:

-Your favorite pie crust recipe (or store bought refrigerated pie crust)

-2 cups of blueberries

-2 tablespoons of sugar

-2 tablespoons of flour

-1 egg

-Wooden skewer sticks (submerged in water)

Steps:

-Preheat oven to 375

- Combine sugar and flour in a bowl

-Add in blueberries

-Mash up half of the blueberries

-Cut three inch circles out of pie crust

-Add blueberry mixture to center of half of the pie crust circles

-Top each with a pie crust circle. Use fork to make fluted edges.

-Add a wooden stick to each. Cut holes to vent.

-Coat each one with egg.

-Bake for 12-18 minutes

Saw this idea in a book (why didn’t I ever think of this?) and had to make them. I filled them with my homemade strawberry filling and added the crimped edges and the chocolate drizzle.
