Day 2 - ABC
Nothing major happened today, didn't have a lot of time to walk though so that kind of sucked. Definitely tired, and I think my period might be right around the corner.
I ate decently today, not the best but not the worst. Had to catch myself before I ate too many tater tots at dinner, still ate a lot so I feel guilty.
Debating on if I should ask one of my coworkers to buy me a vape for the appetite suppression.
I fasted from 11:15pm to 4:15pm = 17 hour fast
Today's calorie details below-

2 Plain rice cakes (70 cal)
Chobani mango yogurt (130 cal)
Philly cheese steak (303 cal ish) (on a slider bun)
Tater tots (140 cal)
Coke zero (6 cal) (I need to stop having these istg)

Air popped popcorn (47 cal) (most of it was unseasoned and not buttered, had a small handful with butter so this might be a little more than what I put down)

- Carrot And Pineapple Cake -
Ingredients: 250 grams all purpose wheat flour; 2 teaspoons of baking soda; 1 teaspoon of royal yeast; 1 teaspoon of salt; 2 tablespoons of ground cinnamon; 350 grams of white sugar; 250 ml sunflower oil; 3 eggs; 1 teaspoon of vanilla extract; 3 large carrots or 4-5 small, shredded; 75 grams of shredded coconut; 100 grams of chopped walnuts; 1 can of pineapple in almond, drained and crushed; 1 pack of Philly cheese; 50 grams of butter, softened; 250 grams of powdered sugar; Preparation: 1. We preheat the oven to 180°C with top and bottom heat. We buttered and floured a 22 x 33 cm cast. To make the pie: 2. Mix flour, baking soda, yeast, salt and cinnamon in a bowl. We make a gap in the center and inside we add sugar, oil, eggs and vanilla extract. 3. Mix all the ingredients with a wooden spoon until there is a smooth mixture. We infiltrate carrots, coconut, chopped walnuts and crushed pineapple and remove everything again to fully integrate. 4. Pour the mixture into the mold that we prepared earlier and put it in the hot oven for 45 minutes, until after adding a stick, it comes out clean. 5. We'll see the downtown sink a bit, but it doesn't matter, it's normal. We pulled out the cake and let it cool on a griddle for a few minutes. Then we demolish and wait for it to be cool. While we wait we can make the frosting. To make the frosting: 6. We whip the cream cheese along with the butter with a stick bender until it is smooth. We add the sugar and beat again until it has a creamy consistency. 7. When the cake is cold (we can put it in the fridge for a while to speed up the process) we spread the icing on top and smooth it out.

Also! As someone who violently cannot eat any kind of squash raw or cooked but who loves zucchini bread, eating vegetables baked or cooked into something else is better than not eating the vegetables at all, especially if you’re making things at home where you can make substitutions to make the rest of the recipe healthier as well.
Foods with a significant veggie content that may not be the healthiest option but are infinitely healthy than not eating veggies at all:
- zucchini bread (also: honorable mention, banana bread. Bananas aren’t veggies but a lot of people, myself included, have texture issues with them and they’re a fantastic source of potassium)
- carrot cake
- literally any pasta dish with tomato sauce
- a BLT
- grilled cheese sandwich with tomatoes OR tomato soup
- a philly cheesesteak with peppers and onions
- actually literally any deli sandwich with veg on it
- sweet potato fries (my dad used to make them cut into circles and baked with copious amounts of butter and salt, they were divine)
- Mac and cheese with broccoli
- similarly, broccoli cheddar soup in a bread bowl (actually a god tier soup)
- goulash (ground beef and pasta and cheese and diced tomatoes)
Yes, these dishes have fats and carbs and things that aren’t the healthiest, but that doesn’t erase the nutritional value if the vegetables they have! And besides, eating healthier isn’t about only eating vegetables and lean protein. You literally need fats and carbs to survive! Carbs are where your body gets its energy!
Fed is best. Fed. Is. Best. People usually say that in relation to infants and breastfeeding versus formula, but it’s true for everyone. If the “unhealthy” option is the only way you’re gonna get that nutrient, then congrats, that’s the healthy option.
i mean this in the gentlest way possible: you need to eat vegetables. you need to become comfortable with doing so. i do not care if you are a picky eater because of autism (hi, i used to be this person!), you need to find at least some vegetables you can eat. find a different way to prepare them. chances are you would like a vegetable you hate if you prepared it in a stew or roasted it with seasoning or included it as an ingredient in a recipe. just. please start eating better. potatoes and corn are not sufficient vegetables for a healthy diet.

I ended up going to Philly with Alex that night. I had one beer at his dads concert and ate many peanut butter cookies during the car ride. When we got to Sophia’s, Alex ordered a pizza and I had two slices.
We went to bed around 2 am and woke up around 11. We shopped for ourselves around noon, and ate fried chicken and iced coffee for breakfast/ lunch. During the day I had two pieces of the chicken, a peanut butter cookie, a piece of cheese, and plenty of water. At Nicky’s party, we ate Pernil, a little charcuterie board with pickled okra and delicious cheese, baked ziti, cowboy caviar, and homemade bread. I had a small slice of ice cream cake for dessert. I did drink all four of the Arnold Palmer drinks that were 100 calories each. When we got back to Sophia’s we didn’t eat again but stayed up until 1:30. I know what I ate and did yesterday wasn’t the healthiest but it’s the weekend and I’ll try and make up for it this week.

3 rice cakes (100), 2/3 can tuna (50), 1 tsp philly cheese (15 cals), 2 tsp butter (70 cals), 20g shredded cheese (80), 20g feta (50), 3 slices beetroot (6 cals), garlic, parsley... (370 cals)
Total Calories = 806 cals
Comments: Spent whole day obsessing about food, calories, etc. It wasn't a fun day at all... But I did clock in under 1k so it's all good.

Pomegranate-Pistachio Van Houten Cake
Very rich, heavy chocolate cake. It was improv first time round, based on the Hershey’s choc cake basic recipe, next time I think more liquids. Just unsure what or how that will affect baking, which took 84 minutes. Crazy. Baked in two trays covered with foil, stacked atop each other, at 160C. So the temp and time would change as well. I switched the tiers every 18 or so minutes.
Requires two water-tight baking dishes - just used wax paper, no need to butter up.
Measured the mixing bowl first, then measured final batter. Subtracted bowl weight and divided by two to get the even weight for each tier.
Dry - largest bowl
1 cup wholemeal and 3/4 cup plain flour
100 g blitzed pistachio
3/4 cup cocoa powder, unsweetened. 1.5 tsp baking soda and baking powder, hefty pinch salt. I have literally no idea what I’m doing with raising agents and the recipe was too complicated to figure it out from chemical-math-scratch.
Wet - bowl. ‘Whisk’ wet into dry once mixed.
(you cannot actually whisk, way too thick)
1 egg + 1 yolk
1/2 cup olive oil
vanilla
200g warm sour cream (this should be 240g but the packet was only 200g. So.)
4-5tbsp jam - pomegranate and raspberry
6-8 tbsp pomegranate molasses
Prepare in mugs aside to pour into main batter while oven is preheating:
250g fresh pomegranate, melt in saucepan or microwave ~mins. Add 1.5 tbsp honey. Option to strain the liquid but this depends on your health & texture preferences. Felt more authentic with the full fruit. - hot
2tbsp coffee powder in 250ml of pistachio milk - hot
(Using the milk instead of boiling water makes a much thicker batter. One option is to increase the pomegranate juice proportion, as opposed to a) adding an egg white or b) adding sour cream
Next Day! Because I finished angrily checking baked-ness until 1 in the krupping morning.
Decor: Powerberry Fig Cream Cheese Filling and Pomegranate Ganche
Get your chilled tiers out.
Make your syrup.
This is 3/4 of a tiny bottle of powerberry juice reduced with 3 large, chopped dry figs. It takes around half an hour, transfer it to a glass and chill for a few minutes in freezer immediately after. There shouldn’t be any ‘liquidity’ surviving, this is the appearance:
Get half a pack of philly cream cheese (I think that’s approx 115g) to room temperature with 2-3 tablespoons of very cold full cream milk. Whip well, until fairly soft and fluffy but eh, who cares, cakes will squish it anyway. Mix 2 tbsp of the berry-fig syrup into the cheese, quick whip with hand mixer to even out. Spread across cake with dollops of more syrup atop.
I am the miracle worker that manages to choose the smaller of the baked cake halves to be on the bottom. Sigh.
Anyway, the next step is ganache which should be left to personal style. I wanted chonky.
Melted 4 tiny Green & Blacks 85% choco bars in some coconut oil, adding 1 tsp pomegranate molasses (or half? don’t know), honey (1/2 tbsp), jam (1.5tbsp), more cocoa powder (tbsp) to even out the icky sharp commercial sugar taste, and finally high quality butter 1.5 lady thumb chunk for the very best sheen and edge of flavour.
Used microwave (low) to melt it, stirring consistently in between blasts because apparently it’s more convenient to risk radiated food than to clean a pot and glass dish. Pour over cake. Jiggle to even out. This is a thick one so it wont be shiny or waterfall down the edges.
See ganache and filling width.
The cream cheese core is particularly good, so next time, if fancy enough to pipe, I would use some to decorate the top as well.

Basically any sort of panini sandwich imo because I do have a sandwich press, but also, I really enjoy pan-frying the sandwiches with a good butter as well. I think butter just adds flavor in a way that spray-on stuff doesn't do

There's these rainbow sugar cookies I make that are really good but they're damn addicting and dangerous. It's because they use almond extract in them. Ugh they're good though
