#perlesaerie It’s the last day for a freebee at Penzy’s Spices in Homewood. (Coupon - pic 4). So after watching Today and Sunday Morning, I turned to the Sunday marathon of NCIS on ION. I’ve seen them all, so I don’t have to give my complete attention. Meanwhile I’ve emptied my spice, etc cabinet to see what spices I actually need. Going to need the new ladder to reach the top and the back of these deep cabinets. It’s a beautiful day. So. A perfect day for a trip to Penzy’s and then stroll around Homewood and popping into some of the stores. Also need to pick up a book I’ve been waiting for at the Library. Book 4 in a favorite series. Might even pick up lunch. Then maybe not. I just ate leftover pizza from Saturday, and I still have leftover @publix fried chicken and a fresh spinach salad from Friday I’ll save for late lunch or dinner. I’ll lunch out for next week when I go new iPhone shopping at the Summit. Yup. It’s time. #perleskitchen Another salad night. Took my favorite @publix spinach salad. Chopped all the toppers and half the spinach. Tossed in a balsamic vinaigrette. Made a well in the center for a cup of thawed cooked shrimp I’d misted with malt vinegar I keep in a small spray bottle. Some cocktail sauce w sriracha to dip the shrimp in. And garlic toast because I love garlic toast with everything. Yum. Watching an end of the world asteroid movie. #perleskitchen My favorite @publix is the spinach. I use it as a base for lunch or dinner. Mainly because it has a variety of veggies that if I bought separately would probably go bad before I could eat them all. Red, yellow and green bell peppers, carrots, radishes, grape tomatoes, mushrooms, cucumbers… I only use half the spinach. The rest finds its way into other dishes including omelette or frittata. I do chop the veggies into smaller pieces. And tonight I added a boiled egg from Tuesday, and diced chicken breast - the last of Monday’s Publix fried chicken. And I always need bread, so I stuffed a small tortilla stuffed with some of the chicken n salad for an impromptu taco. #perleskitchen At $6 a dozen that’s 50¢ apiece. So a 2 eggs = $1 n whole grain toast is also about 50¢ a slice. So brunch this noon was an egg sandy for $2. So. Eggs are still a bargain in my book. I usually boil up to 6 because I’ll always eat one or two right away. The rest peeled and stored in one of my favorite fat little @ballcanning jars on top of a folded paper towel. These will find their way into salads. Sometimes simply cut in half, spread w a little mayo, salt n cayenne rejoined and eaten as a mini sandwich. #perleskitchen Frittata. It’s what’s for Brunch or almost lunch. One @johnsonville Brat, cut n browned in oven; minced green onion tops; generous pinch of grated pepper jack; dash of Worcestershire, splash of milk or water; salt n pepper. Poured into my smallest CIS (cast iron skillet) heated and oiled w bacon grease. In to oven at 350° for about 15 minutes. Served with buttered toast. Couldn’t eat it all. Eyes too big for my stomach. #perleskitchen Getting a head start in tonight’s dinner: Eggroll in a bowl. (Recipe in comments) The meat takes the longest to cook. The rest is slaw. I’m doing green and red cabbage and some carrot for more color. I don’t usually add the egg as I cook enough for leftovers and eggs don’t do well. Wednesdays are still hard. #perleskitchen Getting my turnip greens ready for the pot. It’s a process. First wash, remove stems, into colander/strainer to drain, then onto towel. Very little sand in these beautiful bunches as you can see. But I will rinse a second time. Got them for $1.25 @walmart yesterday. Leaving them in cold water bath until I get the pot ready for them later today. I’ll start the blackeyed peas in the crockpot around 4 on low, the greens around 6ish. Later, I’ll chop the mirepoix with added garlic and set aside covered. The smoked ham hock is ready to go as is. I always have my first bowl minutes after midnight with my champagne. By then I’ll be in my second bottle. Supper will be a charcuterie board with caviar, cheeses, olives, shrimp, etc…. #perlesjournal So Solstice Eve, I came down w a cold. Although mild, it played havoc with my appetite and taste buds (everything tasted like metal including my coffee), not to mention my will to cook anything at all. Living in what is labeled an #ingredienthousehold, there was nothing to heat n eat nor even the fixings for a quick sandwich. The holidays loomed and I’d be on my own. So. That Tuesday morning, I bundled up and went out on that -5° WC day to get some prefab food. So Progresso soup Wednesday, chili Mac Thursday. I did find 3 baby back ribs to heat up as I was trying to stash my quick foods. Warmed up as juicy as fresh that Friday; Chinese Xmas Eve, Marie Callander Turkey Dinner (turkey, potatoes, gravy - ok. The stuffing is inedible glue). Today. Cold is gone. ##perleskitchen Breakfast ready for the oven just nestled an egg into last night’s leftovers of of chili w beans over my special rice topped w a slice of Swiss. Just couldn’t eat it all and I’ll add egg to almost anything and call it breakfast. Pic 2 n 3 are what’s waiting in the wings for oven (a butternut and spaghetti squash which I’ll bake whole @ 350° for about 60-90 minutes) and about 4 pounds of apples destined to inaugurate my as yet virgin Instant pot. #perleskitchen Lunch is an @yourtaylorfarms salad slaw kit (broccoli, cauliflower, red kanbage, carrots, sunflower seeds, cranberries n bacon bits) I tossed the overly sweet dressing and used my own balsamic vinaigrette. The red in top of the boiled egg is cayenne, the toast is leftover garlic toast from yesterday. I’m in love w these kits, if not always the dressings. When you’re cooking for one, it’s hard to have and keep all the ingredients on hand and fresh. I get about 3 -4 servings per kit. #perleskitchen I really need to invest in one of those rolling butcher block kitchen islands. As my kitchen has on small sideboard 24”x 34”, and a third of it is occupied by toaster, coffee pot and produce basket I improvise. When I need extra surface I have a 30”20” piece of plywood I prop from my kitchen marble bistro and a wooden barstool. Actually just laid this out for tomorrow morning: 4lbs. of lemons to squeeze, zest n freeze; potatoes to bake, dice and freeze for quick sides; turnips to slice up and quick pickle. But first, I cleaned out the fridge which left me with a sink full of empty containers and 2 bags of dead leftovers, condiments and veggies. Note to self STOP cooking large quantities for a while. In way back from dumpster noticed buds in the barren fig tree and tiny yellow blooms in the holly. It’s #momsdayout so need to wrap it up, shower and dress to pick her up around 10. #perlesjournal It really is the incredible, edible egg. I boiled a half dozen last week at mom’s. Ate 2; took 2 home; and left 2 in fridge. So this after spending the night there, I took a chance and cracked and peeled one for a quick breakfast. Mostly I just salt n cayenne n eat. Sometimes I put a smear of mayo first. But it was 10:30 and a realtor would be showing the house at 11:00. So glad that the boiled egg was still perfect - no ugly gray ring. I swear by my process: boil for 3 minutes; take off the heat; put a lid on pot; let sit for 10 minutes; immerse in iced water. I usually crack n peel a few while they’re still warm and serve on toast. Then store the rest in the fridge for later. Think I’ll boil a dozen for the weekend. #perleskitchen Still doing easy convenience meals. But Healthy. Friday I could only eat one piece of the Fried chicken and all of the Chocobites. So last night I put the Tabatchnick Lentil Soup in the crockpot along with half the @Publix spinach salad chiffonaded a half gifted yellow squash diced and turned it in high. Served w a quick garlic bread made in toaster. My poor toaster. No pix - brown stuff never looks appetizing. Today I chopped up the rest of the salad which has some gorgeous red and yellow bells, cakes, radishes, green onions, added pickled beets on the side. Along with chopped up leftover fried chicken. #perlesjournal Yesterday I pulled out some Kibbeh Mom and I had made a month ago from the freezer for dinner. She always does a double recipe so can freeze half. We decided fried as patties was better than plain baked - fried anything is always better. And we made a quick Tabouli salad on the side. #perleskitchen The incredible egg. Such a simple, quick n easy late supper. Turned on the oven to preheat around 6 and put a cast iron skillet on a high flame to preheat as well w a liberal amount of bacon fat w bacon bits in it. Peeled a small potato and tossed in the grease and shoved in oven for about 30 minutes. I like them crispy. Then I just scrambled 2 eggs w 3 tablespoons of Paces hot sauce and poured into the skillet on top of a spoon of butter and put back in oven for 10 minutes. Voila potatoes n eggs.
