Carrodles with Spicy Cashew Sauce

If zucchini noodles are zoodles, then carrots are carrodles, right? Sweet potatoes are sweet potatodles? Or maybe just spiralized sweet potatoes. There.

Spiralize 1 large carrot. To make the sauce, scoop 1-2 tbsps of cashew butter into a bowl. Add 1 tbsp sesame oil, 1 tbsp balsamic vinegar, 1 tbsp coconut aminos, 1 tbsp maple syrup, and crushed red pepper. Sauté minced garlic and onions over medium heat. Add the carrodles and cook until tender. Add the green onions. Turn off heat. Then add the spicy cashew sauce. Mix and serve!

Paleofied Pork Belly Pinoy Adobo . . Dirk: It melts in your mouth!!! . . Pork belly (cut into cubes), 2 pcs Bay leaf, 1/2 c coconut aminos, 1/4 c vinegar, 1 c water. A dash of salt. Cook until pork is tender. Heat Coconut oil in a pan. Add minced garlic and cook until they are golden brown. Add the pork belly. Saute and coat pork in oil. Add a teaspoon of Maple syrup. I took the first pic moments ago, several hours after it was cooked vs second pic, which was immediately after. The cold weather just won’t cooperate. The fat hardened faster than I could click my camera. I went on to check the gravy in the slow cooker and the tallow rose to the surface. Frustrated, I absentmindedly scooped it out and discarded it. (You cut short my photo mini session!)Yes, I DISCARDED A LOT OF TALLOW. And after I’m done with it, I felt like SCREAMING! What have I done?! I should have saved it!
