Mushroom oat soup You can add spices and vegetables to this versatile oat soup. You should use 2 cups of broth for 1 cup of oat but I like mine a bit runny. I would have added broccoli or spinach but I didn’t have any also it would be delicious if you can use fresh mushroom. This recipe is oil free. You can add oil when cooking the onion if you like. 1 onion chopped 2 cloves of garlic minced 1 small can mushroom 1 cup oats 3 cups of broth Salt, pepper, oregano, paprika to taste White cheese and parsley to finish the soup. In a small pot on a medium high heat cook the onion garlic and mushroom. Add the oats and cook for a minute then add the broth and spices.
