I’ve FINALLY gotten through the HUMUNGOUS stock of 2 minutes noodles we had. . . I’ve been working towards only a couple of packets of them on hand for Tanny or the odd special packet for me. . . Mostly because they are really not healthy and honestly as cheap as they used to be, they are really expensive now. What I have found though are the packets of several serves of plain noodles meant for stir frying. So I have been getting those. . . As some of you may be aware, food is a very integral part of Thailand. You can't walk more than a 50 in any town or city without finding a tiny restaurant, mall food court or street vendors hawking their goods. Actually, "goods" may be too soft a term. "Greats" would be more appropriate. One would be hard-pressed to find some sort of dish or snack they won't enjoy. Barely a week into our trip, Mandi & I have eaten everything from pad thai to noodle soups to grilled chicken and wontons on skewers. A couple of our favorite dishes have been pad see ew, a wide noodle stir fry with egg and chicken, and khao soi, a Northern Thailand egg noodle curry dish generally served with chicken. Another delicious snack we found was from an Indian lady on the street preparing what looked to be herbed tater tots. She then poured a wonderful sweet-spicy sauce over them and sprinkled green onion and freshly crushed red pepper over them. I never found out what they were called but I certainly hope I see them again! Another Thai staple we tried are called "boat noodles". These are, simply put, noodles in broth, generally including a type of meat and some vegetables. They gained the name from the days where vendors would float down the canals through Bangkok, serving up bowls of noodles to those along the shore. They are simple, tasty and very filling! The beauty of Thai cuisine is how accessible it is. Most any dish can be purchased from the street vendors for little more than a dollar or two, and sidewalk restaurants pop up everywhere in the mornings and evenings. Unlike many western countries, the same dishes can be (and often are) eaten regardless of the time of day. While we have certainly found some excellent western-style breakfasts, there is something so satisfying about a plate of spicy fried noodles to start the day. Fortunately for us, there are still plenty of Thai dishes we have yet to try, and plenty of time left to do it!

My mornings aren’t the same without something substantial and nutrient dense to get me going. . . So I foraged through the fridge and freezer for random veg. I found a few trimmed green beans, radishes, the last quarter of a stick of celery, a half dead carrot, a few leftover frozen chopped leeks in the darkest corner in a baggy, a few bits of frozen corn and the last packet of 2 minute noodles. . . A quick stirfry and a bit of hot water to cook the noodles and yum!!! . . We aren’t shopping for the next couple of weeks as we are getting ready for our new fridge to arrive. Tanny had Special Chow Mien last night for dinner. As he always does he ate all the bits out of it and left pretty much all the noodles lol. . . I tend to find chow mien really tasteless for the most part so I remade his leftover noodles into a stirfry noodles with vegetables for me for breakfast. . . I added Green Beans, Snap Peas, Mange-tout, Baby Corn and Spring Onions, Mini Peppers, Padron Peppers, Celery, Peanut Butter with Marmite and some Dark Soy Sauce and honestly LUSH!!! . . I have never understood how some takeaways cook the flavour out of vegetables. Especially in cuisines that are vegetable heavy. . . Anywhoo it’s getting cold and I want my brekky. Brekky clean up !!! Lots of bits and pieces to use up in the bottom dark corners of the fridge. Then of course I had to add Jimmy’s and Peanut Butter because it’s a day ending in Y 😂😂😂 . . So to this one I added a handful of shredded cabbage, 5 cherry tomatoes quartered, a handful of sprouting broccoli from the garden, a quarter of a cucumber cut into logs. . . They got sautéd off. I added the noodles and water, then 2 Tablespoons of Peanut Butter and 1 Tablespoon of Jimmy’s. Then cooked it all off until the sauce thickened up. . . Ok guys you know the drill Go make your own!!! Ah Saturday!!! Not that you’re any different to any other day round here but welcome all the same. . . Today started much like other days with a stir fry noodle soup. I used the last of the Citrus Cured Salmon in this one. We’re down to the last of our fridge things cos it’s fridge cleaning day 🤢 not my favourite job but it has to be done. . . I finally found us an affordable compost bin too so we decided to go grab that before anything else today. . . Anyway I better get on lots to do today.
