Chilli Did you know that chilli seeds love hot weather? In fact several hot chilli varieties grow best under cover as this helps develop the intense heat, taste and flavour. The heat of chillies is caused by naturally occurring ingredients called capsaicins and is measured on the Scoville scale. The scale ranges from zero (capsicums/bell peppers) to 16,000,000 (pure capsaicin). It's not possible to assign an accurate Scoville unit amount to a plant because the heat will vary with the weather, the age of the plant, the soil and how the plant feels on any given day. After chopping fresh chillies, make sure you scrub your hands well. Don't touch your skin and especially your eyes!
