Et si le meilleur pâte en croûte de l’univers était bourguignon ? Trois de ses représentants, installés à Beaune, Saulieu et Fuissé, vont en tout cas se battre pour cela, lors de la finale mondiale de la gourmande discipline. Rendez-vous le 3 décembre.

“Honni soit celui qui sans pâté-croûte prétend servir table loyale.” Telle est la devise de la Confrérie du Pâté-Croûte, créée en 2009 par une grappe d’amis gastronomes. Gilles Demange (président), Arnaud Bernollin (trésorier) et Audrey Merle (secrétaire générale) forment le bureau de cette association peu commune, sous la supervision du chef lyonnais Christophe Marguin. Un championnat mondial est né de leur initiative. Il a acquis en peu de temps une belle notoriété. Cela se comprend : le mets en question est une institution de la cuisine française. Les Lyonnais, pour ne citer qu’eux, n’en perdent jamais une miette.
Le 8 novembre dernier se déroulaient les sélections Europe du fameux championnat. Une vingtaine de chefs, MOF, charcutiers et journalistes ont dégusté 19 pièces et ont désigné neuf lauréats pour la grande finale, prévue le 3 décembre entre les murs bachiques de la vénérable maison Chapoutier à Tain-l’Hermitage. Parmi eux, trois Bourguignons !

Ces candidats rejoignent trois autres participants, issus des épreuves Asie et Amérique : Keiichi Tokita (Shinagawa Prince Hotel à Tokyo), Timothy Foley (Le District à New York) et Antoine Corriveau (Ateliers et Saveurs à Montréal).

Comme en 2014 ?
La 10e édition du concours sacrera peut-être un de nos ressortissants, comme ce fut le cas en 2014. Le Japonais Hideyuki Kawamura, de la maison Lameloise, avait impressionné le jury. Un jury dont fait régulièrement partie Dominique Loiseau, elle-même membre de cette croustillante confrérie. En 2013, c’était au tour de Keishi Sugimura d’être propulsé parmi les meilleurs faiseurs de pâté en croûte : le chef du Benaton à Beaune, reconnu pour sa grande précision et ses dressages impeccables, terminera vice-champion. Cette remarquable présence nippone sur les tables françaises se vérifie régulièrement. La preuve, le tenant du titre est… Chikara Yoshitomi (L’Ambroisie à Paris). Pierrick Bougerolle, charcutier-traiteur installé à Saulieu avec son épouse Sabine, se verrait bien le détrôner. À moins que ce ne soit la prometteuse Margaux Moisière, chef de partie de L’O des Vignes (Fuissé), arrivée quatrième ex aequo l’an passé avec une réalisation à base de pigeon et caille au foie gras et cèpes. Et pourquoi pas Toru Kawamura ? Au Benaton depuis l’été dernier, après des passages au Pré aux Clercs à Dijon et au Château de Beaulieu (Pas-de-Calais) où il eut pour collègue le gagnant de Top Chef 2018 Camille Delcroix, le voici dans les pas de son nouveau mentor et compatriote. Bref, cette année, c’est sûr, le meilleur pâté en croute de la planète sera bourguignon ! Honni soit celui qui dit non.
  La Bourgogne championne du monde de pâté en croûte ? Et si le meilleur pâte en croûte de l'univers était bourguignon ? Trois de ses représentants, installés à Beaune, Saulieu et Fuissé, vont en tout cas se battre pour cela, lors de la finale mondiale de la gourmande discipline.
