Dairy-free Roasted Red Pepper Soup

Anyone who reads my posts knows that on New Year’s Eve we feast on hors d’oeuvre throughout the day — no real sit-down dinner. Dessert is later in the evening.

But my cousins sleep over for a couple of days and that means real meals too.

On one of the nights they are with us I usually serve either Rack of Lamb or Rib Roast — the dinner we used to eat on New Year’s Eve long ago before we decided on the nibble fest.

For starters? This soup. Light enough to precede a heavy meat meal and colorful enough for a celebration. Bonus: you can make this a few days ahead!

ROASTED RED PEPPER SOUP

4 sweet red, orange and/or yellow bell peppers

2 tablespoons olive oil

4 medium scallions, chopped

2 carrots, chopped

1 large clove garlic, chopped

2 tablespoons chopped fresh parsley plus more for garnish if desired

1 teaspoon chopped fresh thyme leaves

6 tablespoons raw white rice

5 cups vegetable stock

1-1/2 teaspoons salt or to taste

freshly ground black pepper

3/4 to 1 cup non-dairy milk, optional

Preheat the broiler. Place the peppers under the broiler, about 4-6" away from the heat. Broil for 2-3 minutes, until the skin has blistered. Turn the peppers and repeat this process until the entire surface is blistered and lightly charred. Remove the peppers and place them in a paper bag or wrap in aluminum foil. Let rest at least 10 minutes. Remove the peppers from the bag, peel off the skin and discard the stem and the seeds. Cut the peppers into pieces and set aside. 

Heat the olive oil in a large saucepan over medium heat. Add the scallions, carrots, garlic, parsley and thyme. Cook, stirring occasionally for 3-4 minutes or until the vegetables have softened slightly. Stir in the rice. Add the peppers and stock. Season to taste with salt and pepper. Bring the mixture to a boil, lower the heat and cook at a simmer for 25 minutes. Add non-dairy milk if desired. Puree in a food processor or blender. Serve hot or chilled.

It's a little late, but I did indeed carry on my usual tradition of starting an art piece in the old year and finishing it in the new. This year, in line with my new year's resolution of taking care of myself, telling folks no when I don't have the beans to say yes, and doing just more of what I want to do.... I decided to draw what I like drawing! Furry boys in skirts being handsy with each other in tones of blue and gold. Feels good, man.

Get the guts to talk and befriend coworkers.

Give thanks to ██████ (old "boss") for everything I was given, even after leaving the family.

Do better to get closer to Hana Izanami.

Continue to keep protecting the dumbass Maki. 

Earn enough to not live off every paycheck.

Take motorbike on more rides.

Rip everyone down, especially the stupid-ass farmer Asato Rikiya in order to win the D.R.B.

Get closer to younger rival teams.

Don't have a panic attack or at least cope with anxieties better.

Visit another country to study the history and culture.

Try to get in touch with more teachers who are similarly in the D.R.B. (Rosho Tsutsujimori, Sendai team, Kawanoe Ming, etc.).

Do better in either shogi or acting by getting a more important ranking/role.

Fight for an increase in funding to keep different educational programs up to date with the times.

Bring the heartless woman who left home back down to our level.

Do better to keep siblings out of business.

Help all police and law related coworkers reach their goals.

Get the cheaters and players in the competition to forfeit through whatever means.

Bribe Kaoru Shinozaki to make more illegal toys to zap "bad guys" with.

Try and chat with mom at least once this year for sisters' sake.

Convince Ryuko his tastes in magical girl anime is trash.

Figure out what to do about "them".

ECO BooN New Year's Resolutions

Make friends with a plant breeder to get closer to watermelon breeding efforts.

Set up a new fence to keep that lone wolf out of property.

Try and be more sociable with other people.

Repay Luis Kōkyū sometime for all the discounts he keeps giving the family. Especially for gramma since she keeps taking advantage of it.

Learn more about mother, father, and most importantly Fusao who seems to be completely erased from the family.

Continue to watch and learn from all the rival team leaders to do better at leading own team.

Try to get Yano and Kensaku to stop acting so strange and help them with their very obvious issues.

Travel to a foreign place for an art tour/exhibit.

Make up to Riyeko, Ramudas, and ████████ for all they’ve done.

Try to make proper contact with the Fling Posse leader Ramuda Amemura and apologize.

Get Asato to emote something other than “hungry,” “excitement,” and “murder.”

Keep meeting and befriending all the famous people to gain more attention for work.

Figure “a way out” by any means necessary, even if it means “they” find out.

Caution Warn Alert Communicate to Kensaku anything and everything I know.

Remember the gap of memory that’s been lost.

Get Jakurai Jinguji to loosen up more.

Keep bringing smiles and laughter to all customers he’s in contact with.

Make a decision on what blend of coffee is truly the best.

Sort out whether it’s just being friendly or something more with a person.

Visit Hayato and his family especially Shoko! more often.

Get that Ota inspector to laugh to win that bet!
