National Noodle Ring Day
#NoodleRings are typically made with pasta, eggs, cheese, flour, and other seasonings. You can also add mushrooms, Worcestershire sauce or ketchup.
Noodle rings are baked in an 8 or 9-inch ring mold or bundt pan.
Noodle rings are a striking sight and have been a dinner party favorite for generations.
Noodle rings can be a great treat for vegetarians, but they also work well with chicken and sauce.
The oldest known recipe for a #NoodleRing is from the Pennsylvania Dutch in 1936.

I LIKE BIG BUNDTS AND I CANNOT LIE!
Happy National Bundt Day!
As usual, I waited until the last minute to choose a Bundt, thus was limited in both time and ingredients. Also as usual, I waited until the last minute to post this, thus this (gestures at the mediocrity).
I wanted to make this Gingerbread Cake, but it calls for stout, and we don't use alcohol, so I altered it based on one of the comments, and made a Pumpkin Gingerbread Cake instead.
I (as usual) adjusted the ingredients and their amounts, based on what I had on hand…
(listed in the order I added them to the bowl):
2 cups (11 oz) unbleached all-purpose flour
1.5 teaspoons baking powder
2 Tablespoons ground ginger
1 Tablespoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cardamom
6 Tablespoons vegan butter
3 large equivalent vegan eggs
1/2 cup (4.6 oz) granulated white sugar
1/2 cup (3.6 oz) packed light brown sugar
1 cup (10 oz) packed pumpkin purée
1 cup (12 oz) molasses
The directions call for boiling the stout and molasses with baking soda, but since I wasn't using stout, and several commenters mentioned issues with the soda, I omitted that as well. They also mentioned issues with the cake sticking to the pan, so I greased it with two whole Tablespoons of vegan butter, then coated that with granulated sugar.
It only stuck a tiny bit, but I think that had more to do with my 20-plus-year-old pan than a lack of grease. (Those remnants were chewy.)
The resulting cake is moist, chewy, and very gingery. The pumpkin doesn't stand out as much as I had hoped it would - it's more of a hint of pumpkin flavor. Maybe a bit like eating gingerbread after eating a piece of pumpkin pie.
I didn't have my usual eggnog bath this time, but I did have pumpkin spice-flavored cream, and that was just as good.

I LIKE BIG BUNDTS AND I CANNOT LIE!
Happy National Bundt Day!
I love this holiday. I really do. My body, however, couldn’t care less about the date. It’s been messing with me for the past week, taunting me: Oh, you thought you were going to bake a fancy cake? HA! We’ll see about that!
*sigh*
I looked for the easiest cake I could make with my current limited mobility and limited energy, both physical and mental. A doctored boxed cake it was. I almost always keep at least one box of spice cake mix laying around, so 'twas a Spiced Pumpkin Bundt Cake made with a box of spice cake mix, a can of pumpkin purée, two eggs, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, and 1/4 teaspoon each of ground cloves and allspice. I spooned the thick batter into the Party Bundt pan I received for Hanukkah two years ago and baked at 350ºF for 35 minutes.
I suppose I could call it Pumpkin Spice, but I made a Pumpkin Spice Bundt two years ago and it was horrible, so I don’t want to associate this yummy Bundt to that tasteless dish sponge. Plus, I mixed the spices with the pumpkin before I added the cake mix to the bowl, so it’s literally spiced pumpkin.
This is lightly sweetened, more like a pumpkin bread than a dessert cake, and has the airiness I tend to associate with boxed mixes. I favor dense cakes but this is a nice change. It would pair well with some milky tea, perhaps buttered [the cake, not the tea, though I can’t tell you what to do -- if people can butter beer, I’m sure one could butter their tea as well], or with my go-to eggnog bath. Maybe after my nap I'll try some with a very thin layer of the apple cider-flavored frosting my mother gifted me. One of the things I like about Bundts is that you can do whatever you want with them -- you don't always have to frost them, ice them, dust them with powdered sugar -- you can eat them in any way you desire, even if that's just cutting a hunk off and eating it with your hands [which happens to be my preferred way of eating a Bundt].
P.s. My good camera is on the fritz, so apologies for the poor-quality cell phone photos [though I have a new phone this year so at least the crappy phone photos aren’t as crappy as usual].
