Low-key kind of back to tumblr. My level of focus when it comes to fun things isn't fully back, obviously I still need time. I've been dissociating a lot. Or crying. But also laughing with my family; we looked thru old photos yesterday evening which was nice.
The funeral services were beautiful, despite the downpour of rain. A close friend of mine played a farewell song on their violin at the cemetery. I'm blessed to be surrounded by my family and friends. I miss him so much.
Thank you everyone who wrote caring messages on my post, they helped me get through this week. ❤️🫂

October 14th - quicksilver (smut)
Pairing : peter maximoff x reader
Warnings : MDNI!! DO NOT READ IF YOUR BELOW THE AGE OF 18!!
P in v, unprotected sex, peter talking you through it, no aftercare, human vibrator
A/n: im actually really struggling to write the rest of the fics, this is literally meant to be out tomorrow at the time of writing
DO NOT BLAME ME FOR WHAT YOU CHOSE TO CONSUME, ITS YOUR FAULT IF YOU READ FURTHER
Peters room was the go to hangout area for the two of you. It was usually the right temperature, he'd have a stash of snacks (of which were mainly twinkies), a few warm blankets for those cold nights you stayed over. It was always perfect.
That leads you to this night. Peters head was resting on your lower stomach as both of you were watching some crappy movie, mindlessly playing with the hem of your shorts.
You could feel his shoulder pressing against the one spot that had been aching for him all day. Every shuffle from him, you have to stop yourself from squirming, trying to get more pleasure from it. Surely he doesn't feel the same way.. Right?
"hey, you ok?" you hear peter ask you, your head giving a small nod, adjusting your position. Thats all you needed for a small whine to slip past your lips.
That stupid damn smirk. Of course he has that stupid damn smirk after hearing that.
"what was that noise?" he scoots up, his elbows proping him up so now his face is mere inches away from yours. His stomach putting pressure on the area you needed him to, causing you to squirm slightly.
"..nothing..?" you knew he wouldn't let it slide. His warm breath was hitting your face, his lips oh so close to touching yours.
"bullshit" before you even registered it, his lips were on yours. You couldn't help but kiss back, your hands going to his hair and pulling him closer.
✭✭✭✭✭✭✭✭✭✭✭✭✭✭✭✭✭✭✭✭✭✭
After a few minuets of making out, he begins to slip your shorts down your legs, kissing your thighs as he did so.
"god... Your gorgeous.." he groans, not waiting a second to rip his sweatpants off. He was so hard it looked painful, it looked like he would rip open his boxers.
With a blur, he's alright inside of you, his lips against your forehead.
"someones excited huh?"
"cant help it that ive waited this long" he chuckles, pressing his lips against yours once more but this time hes slower, beginning to thrust.
He starts of by being gentle, not wanting to use his mutation to its fullest extent just yet. He was pepering you with kisses anywhere he could reach, nuzzling his face between your breasts.
"you dont have to go soft on me, y'know? I can take it" you huff, getting a bit frustrated at the lack of speed from the guy that is literally known for speed.
"sorry princess" he chuckles "just dont wanna hurt ya'"
With that, he begins to speed up, his hands massaging your hips and thighs.
Not even a few minutes later, hes going x10 faster, his face burried in the crook of your neck. You had never thought he'd be the typa guy to whimper but he is definitely disproving you now.
His hips move in a blur, bringing you to the edge way faster than you'd thought.
"... Ugh... Keep doin' that... Please.." you whine, hands pulling his hair and your lips leaving sloppy kisses on his shoulder.
"wasnt plannin' on stoppin'.. M' pretty girl" his nails dig into your hips, his cock twitching against your walls as they begin to close in on him.
"AHG! Fuck... Shit" he grunts, his seed painting your walls white. His thumb sneaks down and rubs your clit, sending you over the edge and cumming around him.
"... Holy shit..." he huffs, his sweaty body collapsing onto yours.
"... That was amazing.." you tell him, only to realise hes fallen asleep cuding you.
A/n : sorry for how rushed and poorly written this is! Jaytober is kinda making me loose motivation especially since i dont have much free time to do it anymore and my mental health just loves to take a head first dive into depression
Thank you so much for reading! <3

what recipe are you making that calls for coconut oil roasted lemons :o that sounds delectable
lemon and rosemary chicken with roasted carrots and parsnips :) it turned out really well, except it looked bad on my plate, so here's the leftovers lakjfdlakj
i get it from a little app i pay for, so umm. free recipe:
8 medium carrots (i used a full bag and still feel it wasn't enough. ymmv)
4 parsnips (ditto)
1.5lbs boneless skinless chicken breasts
1 pkg fresh rosemary
2 lemons
1tsp black pepper
1tsp salt
2tbsp extra virgin olive oil
2tbsp honey
4tbsp virgin coconut oil
heat oven to 450f
trim and discard the stem ends and peel the carrots + turnips; quarter lengthwise into wedges and transfer to a baking sheet. for larger carrots/parsnips, you may have to cut into further wedges until they're all uniform.
remove leaves from the rosemary, discard the stems, and roughly chop the leaves.
sprinkle half of the rosemary over the vegetables (save the rest for the chicken).
drizzle the vegetables with 2tbsp olive oil and 2tbsp honey, and season with 1/2tsp salt and 1/2tsp black pepper (their measurements. i probably used more of all these ingredients, but i never measure anything so again, ymmv)
spread the vegetables in an even layer and place the sheet in the oven. roast, stirring once halfway through the cooking time, until browned and tender, 15-20 minutes.
cut the chicken horizontally to form thin fillets.
season the chicken with 1/2tsp salt 1/2 black peper
heat a skillet over medium heat
add 2tbsp coconut oil to the skillet and swirl to coat the bottom
place the chicken in the skillet and cook until browned and cooked through, 3-4 min per side. transfer to a plate
zest and juice one of the lemons into a small bowl and then add the remaining rosemary. thinly slice the other lemon into rounds.
add an additional 2tbsp of coconut oil to the pan, and then add the lemon slices to the skillet. cook, turning once, until lemon is lightly browned (2-3 minutes)
return the chicken to the skillet and pour in the lemon-rosemary sauce. turn the chicken over a few times to coat it in the sauce. cook until the juices are reduced, 1-2 minuites
divide the chicken and lemon slices between plates and add veggies to the side. you're done <3

It's September. 15th of this month we, Mexicans, celebrate Independence Day. The whole month, most of the households would prepare traditional food. One of the most delicious and expensive dishes we make is Chiles en Nogada. Mexico has many types of food; the most common is baroque food. Baroque food was created by mixing ingredients brought by colonisers and traditional ingredients. The purpose of Baroque food is to NOT PERCEIVE the ingredients; every bite must generate an explosion of well-balanced flavours in the mouth. This dish is one of those.
Chiles en Nogada is a complex dish; most people would buy it. No, let me correct that; not many people even from here have tasted it because it's expensive af, and the ones who have the means would buy it because it is a pain in the ass to make.
Now, if you want to impress your locals, seduce a Mexican, or challenge your culinary skills this is for you.
The recipe might vary from household to household. This was passed on by my granny, and this is her granny's recipe. SO.
LET'S BEGIN!!
Ingredients!
(I don't care if you don't like x or y, or if you have an allergy or are on a diet, if you can't eat one of these, don't fucking disgrace this legendary recipe.)
150mL of canola oil.
4 finely minced garlic cloves
1 big ass onion finely minced
500g of grounded beef meat
500g of grounded pork meat
2.5 tablespoons of salt
10 red tomatoes
250mL of chicken broth
250g of peeled almonds (preferably minced or sliced, by peeled I mean without the brown cover.)
100g of raisins (finely minced.)
2 Plantanes (NOT BANANA, PLANTANE!)
250g of pine seeds
5 cloves
1 Stick of cinnamon (I used 5cm in length)
1/2 tablespoon of grounded black pepper.
1/2 tablespoon of oregano
Thyme (I don't know how much, in grams this is, be generous.)
2 Minced and peeled peaches
1 Minced pear
1 Minced apple
1 Minced acitrón (I couldn't find it. Acitrón is cristalized maguey. I substituted it with 300g of: Approx 100g of crystallized sweet potato, 100g of crystallized chilacayote, and 100g of crystallized pumpkin).
15 Fresh Poblano Chilipepers (These ARE NOT BELL PEPERS, THESE ARE POBLANO PEPERS, they are spicy.)
1/2 L of milk (cow fresh pasteurized milk, the fresher the better, do not use light milk, we need the fat to mix with the fats of the cheese and the nuts)
250g of goat cheese.
Seeds of 3 pomegranates.
1/2 Kg of peeled fresh Castilian nuts (Juglans regia, the 1/2kg must be nuts without the hardcover).
METODOLOGY!!
Roast, peel, and devein the Chiles. To roast, put them directly on fire until the peel turns black. They are easy to peel when they are hot, so once they are out of the fire, take off the peel (yup, we do this with our bare hands). If you are weak, save the roasted chiles on a cloth and put them inside a plastic bag to "steam." Once cold, you can also peel them; this method works, but it's time-consuming. We also devein the chiles with our hands; if you are weak, use gloves. Please take a moment to appreciate my mom taking off the veins and seeds. She is so talented!
2. Fry the onion in the canola oil until brown. Add the garlic and fry until brown. Add the meat and let it cook on low heat for 20min.
3. Mince the plantains and fry them, use as much oil as you need. Now, I don't care what you believe, the plantains need to have black areas, the blacker the better! They are FINE! I promise. Fry until they look like that:
4. Put water to boil, and let the tomatoes rest/cook? for one minute, then take them out of the boiling water and take off the peel. Put them in the mixer, add the chicken broth, and blend.
5. Add the blended tomatoes and the plantains to the big ass pan where the meat is. This isn't going to look pretty but trust the process!
6. Add the almonds, raisins, pine seeds to the big ass pan.
To show off your wealth and look generous to the people you are sharing this dish with add extra pine seeds.✨
7. Add the oregano, cloves, cinnamon, thyme, pepper, and salt, and mix until all that is well integrated.
Place the thyme, the cloves and the cinnamon on top. We are going to take these out, so make sure you can remove them.
8. Do not cover the pan, let it cook low-heat until it dehydrates. I let this cook for 40min. Once it is dehydrated, remove the cloves, cinnamon, and thyme, add the peaches, the pears, apple, and acitrón (or if you fail getting the acitrón, like I did, use the crystallized fruits).
Mix all that and let it cook low-heat for 20min. This is how it should look like:
9. Now… (🔥laughs) It's time to peel the nuts!! Put water to boil, add the nuts and let them there for ONE minute, take them out of the boiling water and peel that thin dark layer. This is painfully exhausting and BORING, BUT NECESSARY!! You must do it! Otherwhise the final taste will be bitter.
10. NOW, Time to make the Nogada!!! Blend the milk, the nuts, the goat cheese with half a tablespoon of sugar (regular) and salt to taste. The cheese I used had salt, so I didn't use any.
FINALLY, FUCKING FINALLY!! 🔥
11. Fill the cold chiles with that glorious mix we made in our big ass pan, pour some Nogada on top, decorate with pomegranate seeds and parsley. Eat it with rice.
#mexican food#chiles en nogada#recipes#grandmacore#fairy cottage#lmao#I should go to sleep; I'm so tired

Just discovered that Einstein and Bronya (my new Psittacosaurus) both like bell pepers thats a win, but what the lil ones we cant ride do as a helper?
all smol dinos too small to be ridden have "tender" and "discoverer" skills. tender allows them to plant crops for you, as well as harvest and water them. at one point one NPC will have 3 quests for you - in first one he gives you a seed hub, aka bowl in which you can put seeds and to which you can assign little dinos to plant; second quest gives you a basket for dinos to harvest crops and third one is a water bowl that allows the smols to water the crops too. I haven't tried the discoverer skill yet but it's basically taking small dinos on a walk to find things like dreamstones for you
#cloud has been asked#tbh i prefer dinos with waterer skill like gallimimus to that water bowl#smol dinos water it bit too slow and i ended up having many crops wither#theres a cool story as to why that npc has all those bowls. he's got 10 smol dinos btw#Paleo Pines rambling

Let’s do another how Vinnie’s friends might react/respond to: opening up his closet just to see all their clothes he has taken inside. The idea is from @leffee :3
Zoe: “I’ve been looking for this shirt! And this one, too! Vinnie, I’m taking this, but you can keep the rest. It’s so last week, after all!”
Pepper: “How much do I leave here? Meh, I’ll just wear one of yours. Gimme this—it's got Pepper written all over it!”
Russell: “Vinnie, why? Please tell me they’re being washed! You know how long I’ve been missing some of these??”
Penny: “Awe, Vinnie, I remember how cute you looked in this! Oh, and I thought this got lost. I’m glad someone’s getting some good use out of this old thing. Do you want some more?”
Sunil: “Vinnie, why is 90% of your wardrobe my wardrobe? I’m beginning to think I need to check your closet more often...”
Minka: “Oh my gosh, you do it too?! I’ll trade you a Penny shirt for a Pepper hoodie! Sound like a deal?”
I'm glad you tagged me in an ask that is sent for me aha
He would. Let me do some double responses to each of those
With Zoeeey:
Vinnie: "Wait, really? Oh, okay, yipeee :D".
Fr he would be so happy she's just leaving some of those with him. He was probably expecting backlash but she's just like "meh, they're so unfashionable now anyway, just keep em, you small dirty man."
With Peper:
Vinnie: "Ahaha yeah, you left it all here ahah for suuuure. Yeah, sure, take whatever, just leave all your stuff here pls."
Yeah, those two have the same fashion sense in some way, mainly wearing stupid shirts so she would take it. On one hand might be too small for her on the other she's not that much taller or anything, plus Vinnie likes oversized/baggy clothes so I think she's safe
With llessuR:
Vinnie: "WaSheD?? For what? To lose your scent? Nuh-uh! Look, if you don't like it just leave them with me a little longer ^^."
Russell is left disgusted but also kinda intrigued
With lucky penny:
Vinnie: ":3333 :DDDD yes yes pls gib more grrr"
He would be so happy frrr. Not only does she not mind and thinks he looks cute in her clothes but she also wants to bring him more. Might exploit that ngl
With Senile:
Vinnie: "Why is my wardrobe your wardrobe? Wellll obviously cause you're a true fashion icon and I'm trying to learn from u."
Yeah he's buttering him up, I don't think Sunil believes him tho. Nah, I love that “Vinnie, why is 90% of your wardrobe my wardrobe?" line so much, it sounds so real
W/ Minka. Not even a joke with her name cause I repect her reply too much:
Vinnie: ":O. Yes1! A shirt for a hoodie? Always. Deal!"
Penny will bring him more of her clothes anyway. He'd be so happy, yipee someone to share his passion with :]]][ who also doesn't think it's weird and they can trade more.
Gosh I love those so much why is he so cute

Spirit Pot Update #2
One week later and some actual observations to be made! A couple of the pots I'm pretty excited about, but I'll get to those.
As for the sigils themselves, despite having been perpetually soaked and burried in the soil none of them have actually started breaking down yet because I was dumb and used the thickest paper possible. Great advertisement for the sketchpad I used I guess.
Onto the subjects:
Happy blueberry bush is still happy. Nothing crazy here, no sudden bursts of growth or sudden downturns.
The baby pawpaw had taken a turn for the worse right before I started this experiment and appeared to be declining rapidly, but the decline appears to have stopped, or at least slowed aignificantly. The leaves that were already affected continued to brown and fall off, but it didn't spread any further.
The herb pot has begun germinating, but nothing all that unexpected except perhaps a higher germination rate than I expected. Also that the basil next to the sigil germinated much more quickly than the chives that were farthest away, as in my experience chives are usually fastest (oregano, also next to the sigil, was still slow tho). This is the pot directly above that miner's lettuce pot that germinated stupid quick though (I looked it up, and apparently the absolute minimum germination time in ideal conditions is 4 days, which is already uncommon as it's usually at least a week. Mine germinated in 3 days). I'm making a bit more note of that now because:
CAPSICUM!! FLEXUOSUM!! I'm super excited about this one because wild peper seeds tend to take months to germinate (so far it's been 1), and I'm excited about these plants in general. I did soak the seeds in peroxide solution before sowing which probably helped a bit, but I just used normal potting soil as my medium so I still didn't expect such quick germination. I only have 1 seedling so far, but notice that out of my big ol' tray with ~30 seeders active, it happens to be directly next to the sigil. COINCIDENCE!? Maybe but I choose to believe NOT!! I'm specifically noting that things next to the sigil but not directly with the sigil for both seedling sigils seem to be germinating exceptionally quickly.
Empty mushroom pot. You're doing great honey.

Unexpected guest
Fandom:DSAF; Dayshift at Freddy's
Pairing: None
FNAF x DSAF
(This is an old story that I made long ago before I had Tumblr, probably two years ago. It was my favorite to write so I decided to rewrite it! This thing had three parts btw; Testing out first pov again)
~~~~~~~~~~~~~~~~~~~~~~
Take place in DSAF 3
Jack's POV:
"Another day, another dollar.." Scott sighed and fixed his tie. At least he's prepared for another day of work.
The tycoon passed rather quickly as not much adjustment can be made and nothing could be added to my restaurant. Besides upgrading the security office, I also upgraded the stage and fixed the light in the women's restroom. I had about six complaints before I actually fix it. At first, I didn't really care but the complaints were annoying so I had to.
These past few days wasn't as bad as I thought it'll be. Being the 'orange maniac' that 'revived bear worshipping pizza cult isn't easy, that's for sure. Managing this damned restaurant was already hard and stressful enough, but there's a double standards to everything and everyone.
Scott has been a great help around the place, considering everything. Managing customers and my taxes, looking after little brats that runs around the restaurant was also hard so I appreciate all the help I could get.
Walking around the hallway, I quickly spotted an off-looking door to my right. Although it looked and felt like any other doors in the hallway, this one seems to have its own uniqueness that made it stand out more than the rest. The vibe I was getting from it didn't sit right, either.
The door was almost covered in stickers, crayon drawing and such at a child's like height. A single color pencil drawing on a rather crumbled paper was taped to the door, further up than the rest. It showed a poorly drawn little girl in a pink dress, two boys that looked awfully like Mike and Mike. Jr, a woman with reddish orange hair in a teal colored dress and a man in a purple uniform. It was similar to Dave's uniform back in Colorado and Bakersfield, but not completely.
There was a silver plate above the door, pepered with flower stickers and colorful makers. Upon closer examination, I realized that there was a name craved into the plate.
"❁Elizabeth❁"
Being as curious as any normal person would be, I grabbed the door knob, inhaled deeply before exhaling sharply. My musckes tensed a bit but I pushed on and twisted the knob, letting myself into the room behind this mysterious door.
Behind it was a child's room, specifically made for a girl. A pink bed sat quietly in the middle of the room with a red clock positioned right above it. Cream coloured floors with white walls covered the room, giving it a more cozy atmosphere. A toy box sat in the lower right corner of the room, filled with dolls, some with their heads popped off and stuffed animals that looked more intact. Poorly drawn pictures were pinned to a small bulletin board that hangs over a little study table.
The pencil at the edge of said table looks like it'll be ready to roll off any moment but didn't. Blank, crumbled papers and some broken crayons were scattered over the surface, making it look like the little girl who stays here had a fit of some sort.
I quietly and quickly backed up against the door and twisted the knob, hoping to be brought back to my accursed restaurant than to stay a moment longer in this place. It's nit like I'm afraind of children, but intruding a child's bedroom is something else.
Unfortunately, as soon as the door was open, I stood in the middle of a hall lined with rooms, all with a silver plates with craved names on them rather than my pizzeria. I tried and gathered the courage to look over the railings of the stairs before quietly making my way down.
The house didn't have much to offer. The living room looked almost identical to Peter's house, except the little toy box filled with plushies of the animatronics like Foxy and what not. The little Golden Freddy plush scares me though.
The kitchen is literally the copy of mine, with the same fridge color, almost identical table set up and everything. The table had a little vase on top with wilted flowers inside. There was no water in the vase to keep it alive for any longer. Somehow, my thoughts wandered and somehow got the idea to go outside this house to search for some roses to replace it.
"Who are you?" A high pitched voice rang up from behind me, snapping me out of the weird thoughts in my head.
I turned my head around to see the similar little girl from the drawing that I saw on the door. Green eyes stared back into my glowing white pupils. Except for a pink dress, she has a magenta button up on with a blue skirt that was just a little above her knee. Her hair is a reddish orange color with a bow that had the matching color of her shirt.
Her stares were long and unsettling, her hand clutches onto a teddy bear's arm and a smile tugged at her lips. I stared back, not knowing whether to say hello to her or to tell her to keep that mouth shut.
"Mommy!" She shouted loudly, now smiling a lottle wider than before. That caused me to freak out and speed pass her on instinct to avoid any possible troubles.
Before I knew it, a voice of an older woman responded to the little girl's call and for sure, she'll rat me out like all kids do.
I eventually found a staircase that leads down below the house, nowhere near the staircase I previously walked down. With not much of a choice, I rushed down the stairs, tripping up against the steps but I regained my balance quickly. The voices from above fainted away slowly with a final yell from the woman that sounds like warning. Or maybe it's not, i really don't care.
When I hit the floor below, I stopped and panted quietly. Out of breath, I leaned against the walk and follow its lining. This was pobably the basement, I presume. A doorless basement, not like I'm in any kind position to complain or judge.
I slowly gain my vision in the dark and spotted an area that was dimly lit with whatever light source that was down here. I slowly approached it and finally reached where the lights were. The first thing I spotted was a figure of a man, evenly trimmed hair with a purple uniform, like Dave's. His black tie was placed neatly on the table, where pieces of scrap metal and aninatronics parts was laid, looking cold like a face thay doesn't pay taxes.
I froze in place and hold my breath, afraid that I might get his attention even with a small sigh. The noise of pencil scribbling on to a paper neatly clipped to a clipboard send some shivers down my spine.
"I wasn't expecting anyone, you know." He said in a low, almost silent tone. He stopped writing and placed the pencil and the clipboard down with an audible 'click'.
My nerves clutch together and my limps goes numb. He knew I was there, but refused to make it obvious until it was the right time.
"You caused a lot of trouble, if you must know." His voice had a tint of humor as he crossed his arms and tapped his shoe against the concrete floor. Sounded like he was a boss talking to their employee.
"Chris, bring him back up for Elizabeth and I'll come later." He asked, walking over to a little hallway on the right that I wasn't able to spot. How did I missed that?
Before I could make a move, a high pitched giggle came from behind me and I was knocked out cold. The only thing I saw before falling unconscious was a little boy, dressed in a similar manner like Mike. Jr back in Bakersfield. Back when me and Dave rigged Balloon Boy to be able to bite down.
Just where the fuck am I?
~~~~~~~~~~~~~~~~~~~~~~~
If you did read everything I posted on my blog, you could tell the writing style is kind of off. I apologize because it had been a while since I wrote 1st POV and this was also from 2022.

okay fun fact if you put 6 scotch bonnets in a small-medium pan of lentil soup (4-6 servings) it's really fucking spicy. And then when you get an eyelash off your eyeball it hurts a lot even though I washed my hands so much goddamn chillies.
(3 onions 4-6 scotch bonnets fry in 2tbsp of oil for 5-10m, add water, 2tsp of swiss vegetable boulion and half a bowl of washed red split lentils, liquid aminos vegetarian worcester sauce, paprika and mixed herbs to taste, black peper and whole mustard seeds to taste, add 1'3 tube of tomato paste, boil til lentils soften, top with mature cheddar cheese to taste, serve with microwave naan bread optional)

Went to the cemetery with my mom this morning to drop off flowers and clean the headstone where my Memere, Pepere, Uncle and Nana are all buried. No one else ever goes to drop flowers, we do because it was SO important to my Nana and we’d take her every year to drop the flowers for the 3 that were already there. Now that she joined them in 2019 no one ever goes. They just aren’t “cemetery people”, neither am I but I know HOW much it meant to my Nana and doing this for her helps me feel connected to them all still. And scrubbing the lichen off the headstone and engravings is extremely satisfying to me.
Plus I get to hear stories of family I never got to meet as my mother reminisces reading all the names of family that are buried there.
#cemeteries aren’t my thing either but it is something I can do even though they’re gone#for the record I’ll be cremated I don’t want to spend eternity in a box#plus going there and reading the dates of death reminds me that you need to live when you’re alive because you never know when it’s the end

Vegetarian Chili
Given the chilly status of much of the US at this time of year, I decided to start the new year with my step-dad's chili which I have altered and perfected to become vegan friendly. My family is a huge lover of spicy, but unlike them, I like my food to not be over powered by spiciness. What this means is that yes, this chili is a bit spicy, but it is not overwhelming and it can always be tampered down with some shredded cheese (vegan or regular).
INGREDIENTS
4 cans of diced tomatoes
2 cans of black beans
1 can of kidney beans
1 can of great northern beans
1 jalapeño pepper
1 poblano pepper
1 Anaheim peper
1 medium onion, diced
3 cloves of garlic, diced
1 tablespoon oil (olive or vegetable)
1/2 lime
1 cup of fresh cilantro, chopped
1 teaspoon cumin
1/4 teaspoon black pepper
1 teaspoon garlic powder
1 1/2 teaspoon paprika
1/2 teaspoon thyme
1/2 teaspoon oregano
1 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon smoked paprika (optional)
Shredded cheddar cheese (optional)
Tortilla chips (optional)
INSTRUCTIONS
Chop up the onion, poblano, and anaheim into dice sized pieces. Mince the garlic. Chop the jalapeño into small bites too.* Make sure you get rid of all the seeds from the peppers to reduce the spice level.**
Add a tablespoon of oil to a big, chili sized pot and place it over medium heat. When the oil gets less viscous (moves around the pot easier), add the onion and diced garlic. Stir every minute or so. Cook for about 3 minutes.
Add the peppers to the pot. Cook onion, garlic, and peppers together until the onions become translucent and the peppers have a slight golden brown to them. This should take about 5 minutes. Stir periodically so nothing burns.
Add the cumin, paprika, thyme, oregano, salt, pepper, and dried garlic to the pot.*** Stir it into the onion, garlic, and pepper mix. By adding this now, it adds an extra element of flavor to your chili, but you can add the spices after the tomatoes and beans have been added.
Add the black beans, kidney beans, and great northern beans along with the 4 cans of diced tomatoes to the chili pot.**** Mix everything together.
Turn up the temperature and bring the pot to a simmer.
Once it reaches a simmer, turn the temperature down to low-medium, add the juice of 1/2 a lime, stir everything together, and place a lid over your chili. Let the chili cook for about 1 hour. Stir it once or twice during that time.
After an hour, check your chili. If it looks cooked and the flavors seem to have melded together nicely, add the cup of chopped cilantro and let it cook for another 15 minutes.
Serve your chili into bowls and add shredded cheddar cheese if you want. You can also eat it with tortilla chips.
*Unless you like surprise bites of spice, I recommend chopping the jalapeño into small bits, but keep in mind that the smaller you dice the jalapeño, the spicer it will make your chili.
**It helps to wear gloves when handling the jalapeño so you don't have to worry about the chili oil clinging to your skin later. This isn't a concern with the poblano and anaheim. If you don't have gloves, you can "wash" your hands with some vegetable oil then clean off your hands with a lot of soap and water. I prefer wearing gloves.
***You can use a spice mix if you don't have all these spices on hand. This was an issue for me when I lived in a dorm my first 2 years of college. If you need to do this, I recommend McCormick Chili Seasoning Mix.
****I recommend placing your beans in a strainer and rinsing them with water before you use them, but it is up to you.
