Whew! Voting done!
I ended up having breakfast (not just feeding the animals) I woke up early and realized if I was feeling that edgy being hungry wouldn't help. So I fixed myself an omelette*. I figured doing something “special” with several steps would help calm me down.
Why was I edgy? Because I’m me! LOL It wasn’t just worrying about results, it was worrying about the process of voting. I always worry about the rules, even things like where to park. But weirdly the big thing was where I had to vote. It was the auditorium of my old school, a place tangled up with a hell of a lot of anxiety.
As it turned out, it was the easiest voting ever. There wasn’t even a line, the only wait being for the workers to do their steps with the ID check and so forth.
Wanna know what was awkward? At the edge of the campaigning zone two candidates had set up shop, like they do. They were competing for school board***, and I had to walk right by the, with no one else coming along for a buffer.
This is of those local races where everyone knows everyone. With one they were like, “Oh, I remember your parents!”, the next was “Hello Stephanie!” (his relative helped care of my great grandma when I was little and he was a teen), and the candidate not there worked with Mom in the post office (as had his father) and is one of the about five Christmas cards I get. So while I had one I was voting for I absolutely didn’t want to snub any of them.
But I did fine. I’m good at being friendly with folks no matter no matter our differences, a skill perfected by a lifetime being a liberal in a rural, southern, microscopic town. I don’t think it is purely a pragmatic matter of survival, to keep hostility down. It’s also the recognition that people can be good and horrible at the same time, that they can be incredibly kind in the tiny scale of individual interactions yet utterly heartless when dealing on the grand scale of groups of people. I guess boils down to the fact people “see” those close to them but everyone else is just hypothetical.
Or maybe humanity is just a load of idiots deserving the benevolent pity and patience of a pet owner. “Aww, sweetie, the UPS driver isn’t gonna hurt you, but biting your own tail might.” The pooch isn’t gonna understand your words, but yelling will just make things worse. You have to accept changing them will take a lot of time, done with the combo of kindness and firmness.. Always be friendly and polite, but never, ever yield your own will. That’s my philosophy for human interactions! LOL

Now to go off to the woods, as a treat to myself post voting. I am soooo going to try not to think about the election for a while. Fingers crossed I can avoid watching results roll in tonight. I don’t need more stress! LOL
**Two eggs, apple, mushroom, cheese, garam masala, turmeric, and salt on my homemade bread, whole wheat this time. I even used some butter, and I am having to ration it now.

Not to keep reminiscing about when I was more abled but man what I'd give to be thinly slicing garlic, onion, tomatoes, throw them in a pot with ghee on medium-high until the onions are translucent and yellowed but not caramelized, and chop some carrots, cauliflower, potatoes, mushrooms, throw them in with some peas and corn and let those cook, mince a green chili pepper, cilantro, and ginger and lime zest, add bit of tomato sauce, then about 4 cups of stock and simmer it on low adding lime juice, a couple of prunes (trust me on this), seasoning it with cumin, cardamom, salt, cinnamon, clove, turmeric, curry powder (most of these spices are in curry powder it's more of a ratio thing), and peppercorn, and then let that bitch simmer for an hour or two until I have curry and throw some naan in a pan with butter, maybe pan fry some okra and make a side of chana masala or dal. No pre packaged meal beats that yknow?

Made teriyaki and tikka masala chicken last week, seperate days, tasted bad. Well not bad but off, not quite right. I had ten pounds of chicken in my freezer. Decided since that chicken tasted old and burned it was time to toss it even though I'd only had it two weeks. Got some unfrozen tenders, separated them into bags and froze em. cost a little more than just buying frozen breasts and breaking them down myself but they were fresh.
Unthawed one today, tossed butter in a pan, sauteed a yellow onion and some good brown mushrooms. diced up five tenders, tossed it into the pan and let it cook. covered in nice panda express teriyaki sauce.
Yeap, it was definitely that chicken, this new chicken is so succulent and tasty. I love it. Got some jasmine rice cooking in my rice cooker. Soon as that's done I'm gonna chow down and have enough for about four meals.

Ooh great question!
Honestly depends on where they go to eat but their go to places are the local pizza place or the Indian restaurant.
Lucy is a bit of a picky eater so she goes with what the most 'basic' options are, so here they would be a good old margherita pizza with garlic bread on the side, and chicken tikka masala with plain naan and onion bhaji respectively. And she would only order a lemony drink, like a lemonade or nimbu paani. She has not changed these orders in 10 years and she will never change them ever, they're perfect meals. Do not try to make her eat something new.
Adam eats anything that's got like a salty sweet thing or spicy sweet thing going on, so for pizza's he'd probably get a meaty spicy pizza and then ask them to add capers and golden raisins on top + he'd get a tiramisu dessert, and his Indian food order would be lamb kofta curry at the highest spice level with garlic paratha and then a giant glass of sweet lassi.
Harsha is like a big sweet tooth that his friends kind of hate, he orders a big dessert portion and then orders a savoury main. like he'll order 2 chocolate lava cakes first and then order a plate of lasagna. He eats the lava cake first and then eats cold lasagna, we hate him for it. and at the Indian restaurant he'd order chapati with mango shrikhand, and then get 2 sides of prawn fry and chicken 65.
Naz is vegetarian by choice cause the smell of meat makes him feel rather ill, but he'll order anything that's really eggy or dairy cause he loves eggs and milk. at the Italian place he'd get a florentine pizza and ask for an extra egg, and then order a vanilla panna cotta. At the Indian place he'd get egg biryani with mint cucumber raita, and then wash it down with a mango lassi extra thick.
Shaz is down to eat anything tbf as long as it's halal, so most of the time she just orders the dishes of the day and then a random side and a drink. she's not really into sweet stuff. Her go to sides at the italian place are the dough balls with marinara sauce and garlic butter though, and she gets an orange soda. at the indian place she orders gobi manchuri and rose milk with less sugar.
Daniel is vegan and also born in hyderabad, moved to england when he was 9 cause his dad got transferred by his IT company. He loves to eat food that's in pockets or something and is very carby. His italian order is usually a vegan mushroom aubergine tomato calzone, dough balls with marinara sauce, and a limeade to wash it all down. His indian order is usually palak paneer with aloo paratha, and a dabeli as a side, with nimbu pani. if he's feeling fancy he'll get a dessert but that depends on his mood.
Abigail is the one with the most unpredictable tastes because she isn't picky and wants to try something new every time, she doesn't really have any preference lol but she doesn't like eating the same thing in a row. So she just randomly orders dishes, but the one thing she does have a preference for is the dessert, she hates chocolate things so she usually orders a vanilla cheesecake at the Italian place, or a gulab jamun with ice cream at the Indian place. She's really hard to order for lmao.

Bengali-inspired Methi Mushroom Curry

1 tbsp butter-flavoured coconut oil 1 white onion, peeled and chopped
1 tbsp panch phoran (Bengali 5-Spice) 1 tsp garlic paste
4 cups roughly chopped fresh methi (fenugreek) leaves 4 cups chopped white mushrooms a small handful of fresh curry leaves
1 can (400 ml) coconut milk 1 cup vegetable bouillon 1 tsp cumin powder 1 tsp coriander powder 1 tsp chili paste 1/2 tsp turmeric powder
1 block extra-firm tofu, diced 1 tbsp cilantro paste 1 tbsp pure maple syrup 1 tsp garam masala 1 tsp amchur (green mango) powder 1 tsp sea salt 1/4 tsp black pepper 1/8 tsp hing (asafeotida)
1/2 cup chopped roasted cashews
Heat oil in a large saucepan over medium-low heat. Sauté onion for several minutes. Stir in the panch phoran and garlic paste and cook for a few more minutes, stirring frequently.
Stir in the methi leaves, mushrooms and curry leaves and cook for another few minutes.
Stir in the; coconut milk, vegetable bouillon, cumin, coriander, chili paste, and turmeric. Turn heat to high and cover the pot. As soon as stew comes to a boil, reduce to low and simmer for about 8 minutes, stirring occasionally.
Stir in the diced tofu and continue to cook for another two minutes. Turn heat off.
Stir in the; cilantro paste, maple syrup, garam masala, amchur, sea salt, black pepper, and hing. Fold in the cashews.
Ideal served over Turmeric Rice.
Turmeric Rice
1 tbsp butter-flavoured coconut oil 1 small white onion, peeled and diced
1 tsp garlic paste
2 cups basmati rice 1/2 tsp sea salt 1/2 tsp turmeric 4 cups water
Heat olive oil in a medium-sized saucepan over low heat. Sauté onion for several minutes. Add the garlic and sauté for another minute or two. Turn heat off.
Stir in the; white rice, sea salt, turmeric, and water. Transfer to rice cooker and cook according to directions on your rice cooker.

Food Diary Sep 18th - 24th
Last week I had also done a food diary, but I gave up taking pictures by the end because I felt like I strayed too much from my original goal, which was to eat less carbs. So this week I'm trying again:
18th - Groceries EUR 21.79 (lowest in a very, very long time... because I got smart and bulk bought last week :P)
Wed. 18th
Lunch - miso-braised pork with salad and Japanese sesame dressing
Dinner - stir-fried tofu with minced meat (and corn), mushroom soup
(I have to say, it was a shame I didn't eat the tofu with rice.)
Thur. 19th
Breakfast - overnight oats* and masala chai I made last night
4PM Snack - Carpaccio Tapenade, cookie (not pictured)
Dinner - guacamole and tortilla chips* (it looks unappealing but it was really good!)
Fri. 20th
Breakfast - red bean paste mooncake* and mushroom soup
Lunch - banana (not pictured) and sandwich* with brie, walnuts, lettuce, and honey
Snack - two cream puffs and one donut from classmates (not pictured)*
Dinner - pan-fried tofu, zucchini scrambled eggs, chips* (forgot to take pictures)

Lunch - scrambled eggs with minced meat and hot chocolate
Snack - instant tomato soup, applesauce with cinnamon, pineapple cakes, chips (not pictured)
Dinner - tomato and vegetable soup with bread*, baked mushrooms
Sun. 22nd
Breakfast - toast* with tuna mayo salad, hot chocolate
Lunch - apple slices with peanut butter
Snack - cured meat, kroketbroodje*
Dinner - omelette with vegetables, cheese, and chicken
Mon. 23rd
Breakfast - PB&J sandwich*, half an avocado, yuzu tea
Lunch - blanched broccoli with Japanese sesame sauce, stir-fry tofu
Dinner - baked vegetables
Tue. 24th
Breakfast - sunny-side-up (failed) and one avocado + instant matcha latte
Lunch - yogurt with cruesli and sunflower seeds
Dinner - carrot scrambled egg + stir-fried tofu with minced meat
And we're done! After two weeks of effort and one week of actually carrying out the plan of limiting carbs, I feel very accomplished :). Not sure if it's just a placebo effect but I did feel like my pants/rings got a little looser (?). I'm also not as hungry as I would usually be, and my digestion is really good. Overall it was a good experience, and if it helps lower the grocery bill I'm happy to keep doing it. That said, I will start adding carbs back in my life because I've missed them.
