The herb rub lends delicious savory flavor to the outside of your turkey, while basting keeps the meat juicy inside. Reserve the pan juices to make gravy or serve with the turkey.

Aside from obtaining these herbs and spices individually, look for bottles of poultry or beef seasoning, and other seasoning blends (Cajun, Italian, etc.) - they usually contain a variety of these herbs in one convenient container.
Allspice - prosperity, luck, healing, energy
Anise Seed - protection, happiness, enhanced psychic ability, cleansing, warding off nightmares and disturbing dreams
Basil -  love, banishing, wealth, success, sympathy, protection; dispelling confusion, fears, and weakness

Dill - prosperity, protection, luck, lust
Fennel - strength, vitality, sexual virility; prevents curses and wards off negative energy
Garlic Powder & Garlic Salt - healing, protection, banishing
Ginger - sensuality, sexuality, personal confidence, prosperity, success, health, protection, new experiences and adventures

I need someone to match my freak but my freak is being unhealthily obsessed with spices. I just made the sickest most quotable analogy I’ve ever made comparing spices to colors and I have no one who will take this as seriously as me. That mccormick garam masala blend I picked up from my dad’s spice stock randomly has forever improved my culinary skills. The cumin and cinnamon are both such strong tastes that I associate heavily with certain dishes; cumin is burger and cinnamon is snickerdoodle, but the addition of cardamom… the coolness of the cardamom balances out the spicy sweetness of the cinnamon, making it recognizable for its true flavor disassociated from the deserts it is commonly used in. And this new flavor from the balanced cinnamon balances the cumin into a basic spice. The additions of coriander and black pepper just further add to the taste. Additive spice mixing is all I’ve been using, adding thyme flavors to red pepper flavors is all I’ve known. Garlic thrown in here and there. But now… now I’ve found the truth. I must continue forth—no. reconstruct my entire understanding of spice. using this new… subtractive spice mixing. Balancing is too powerful. I’m only calling it subtractive due to the analogy to light. I’ve been playing with crayons when light was there the whole time. I only needed the geniuses of the past—entire generations of spice knowledge from different regions, cultures, individual families—to properly propel my abilities. Now I must only piece together everything the I’ve learned. All of this because I got high from sniffing too many spices because I was trying to familiarize myself with them. Holy shit. I have truly become one with the flavors. I understand. The subtle intricacies. The differences between thyme and savory. How far from thyme oregano is. The truth behind chives. Cinnamon, cumin, cardamom. These spices shall forever be a symbol in my dishes. That of my discoveries today. I must experiment. The knowledge of light supplied by those geniuses. The garam masala blend from mccormick that is probably a gross oversimplification of what garam masala blends are actually like. I am sorry to those whose cuisine mccormick has made appetizing to the white people who buy them, but this knowledge has given me enlightenment. My eyes have been opened to the extent of seasonings. Pigments only reflect the light that is shown unto them, yet the pigments also decide what light to reflect. The flavors must be combined and balanced all the same in order to achieve the best taste. My brain is moving too fast. Once I’ve written a sentence I’ve moved on so far that I’ve forgotten what the subject matter is. I think I’ve calmed down. Highly recommend sniffing spices for hours. My breath smells of cinnamon despite only having smelled it. Save me. No dont. Let. Me. Cook.

That shirt reminds me of how when I was little I thought that silica packets were like explosive or something? Like I would immediately delicately carry them as swiftly as I could to the kitchen trash can bc I thought they were SO dangerous 😅 why sgsgdgdgd
I also thought those little cartons of McCormick black pepper were like little packs of gunpowder?? Idk why especially since people would put that ON THEIR FOOD, let alone the fact that it was on the kitchen table. Like why the fuck did I think that? 😭😭 why
I think I believed that for like another year after I learned to read too. Like I just thought it was a cover sgdggdgdgdgd

what are your three favorite things to cook? (don't stress.. if 3 favorites is too hard just give me three things you like to make :)
hi grace! what a fun question!
chicken thighs - it is very important that they be bone-in and skin-on so you get the delicious crispy skin! my kid loves my cilantro-lime ones. i whack the oven up to 400F/425F, put them on a baking sheet, lots of lime juice, garlic salt, black pepper, and cilantro (dry or fresh, does not matter). you can marinate them overnight if you wanna. sometimes i stab the chicken a lil so the like juice really gets in there. my kid’s a big fan of roasted broccoli/cauliflower/carrots seasoned with mccormick montreal steak seasoning to go with it or roasted green beans or roasted (or steamed!) brussels sprouts
broccoli cauliflower soup! the cauliflower makes it so deliciously creamy 😋 sometimes i’ll add some rice and/or crispy kielbasa (skinless tastes better!) to it. nobody is gonna stop you from using pre-cut broccoli and cauliflower btw. also, a good chicken or beef broth instead of water really amps up the flavor. or you can use your own homemade broth if, unlike me, you actually take those veggies out of the freezer and turn ‘em into stock. (one time i was out of cauliflower and used a package of frozen cauliflower rice and my kid thought it was the tastiest thing ever so, ya know, do what ya want 🤷🏾‍♀️)
lamb breast! i fuckin’ LOVE cooking this! i make my own marinade (dijon mustard is the base and that is ALL i will say!), i marinate it for AT LEAST 24 hours, then i put it in the oven. i start at 300F for about 30 minutes (i don’t time anything unless i’m baking) then turn it down to 250. low and slow is best. i usually baste it a few times an hour. for this deliciousness i usually make mashed potatoes with unsweetened coconut milk, garlic salt, black pepper, dried parsley, and vegan cheddar cheese. i also do roasted broccolini drizzled with olive oil, kosher salt, black pepper and i finish it with lemon juice when it comes out of the oven

Vegetarian Chili
Given the chilly status of much of the US at this time of year, I decided to start the new year with my step-dad's chili which I have altered and perfected to become vegan friendly. My family is a huge lover of spicy, but unlike them, I like my food to not be over powered by spiciness. What this means is that yes, this chili is a bit spicy, but it is not overwhelming and it can always be tampered down with some shredded cheese (vegan or regular).
Tumblr media
INGREDIENTS
4 cans of diced tomatoes
2 cans of black beans
1 can of kidney beans
1 can of great northern beans
1 jalapeño pepper
1 poblano pepper
1 Anaheim peper
1 medium onion, diced
3 cloves of garlic, diced
1 tablespoon oil (olive or vegetable)
1/2 lime
1 cup of fresh cilantro, chopped
1 teaspoon cumin
1/4 teaspoon black pepper
1 teaspoon garlic powder
1 1/2 teaspoon paprika
1/2 teaspoon thyme
1/2 teaspoon oregano
1 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon smoked paprika (optional)
Shredded cheddar cheese (optional)
Tortilla chips (optional)
INSTRUCTIONS
Chop up the onion, poblano, and anaheim into dice sized pieces. Mince the garlic. Chop the jalapeño into small bites too.* Make sure you get rid of all the seeds from the peppers to reduce the spice level.**
Add a tablespoon of oil to a big, chili sized pot and place it over medium heat. When the oil gets less viscous (moves around the pot easier), add the onion and diced garlic. Stir every minute or so. Cook for about 3 minutes.
Add the peppers to the pot. Cook onion, garlic, and peppers together until the onions become translucent and the peppers have a slight golden brown to them. This should take about 5 minutes. Stir periodically so nothing burns.
Add the cumin, paprika, thyme, oregano, salt, pepper, and dried garlic to the pot.*** Stir it into the onion, garlic, and pepper mix. By adding this now, it adds an extra element of flavor to your chili, but you can add the spices after the tomatoes and beans have been added.
Add the black beans, kidney beans, and great northern beans along with the 4 cans of diced tomatoes to the chili pot.**** Mix everything together.
Turn up the temperature and bring the pot to a simmer.
Once it reaches a simmer, turn the temperature down to low-medium, add the juice of 1/2 a lime, stir everything together, and place a lid over your chili. Let the chili cook for about 1 hour. Stir it once or twice during that time.
After an hour, check your chili. If it looks cooked and the flavors seem to have melded together nicely, add the cup of chopped cilantro and let it cook for another 15 minutes.
Serve your chili into bowls and add shredded cheddar cheese if you want. You can also eat it with tortilla chips.
*Unless you like surprise bites of spice, I recommend chopping the jalapeño into small bits, but keep in mind that the smaller you dice the jalapeño, the spicer it will make your chili.
**It helps to wear gloves when handling the jalapeño so you don't have to worry about the chili oil clinging to your skin later. This isn't a concern with the poblano and anaheim. If you don't have gloves, you can "wash" your hands with some vegetable oil then clean off your hands with a lot of soap and water. I prefer wearing gloves.
***You can use a spice mix if you don't have all these spices on hand. This was an issue for me when I lived in a dorm my first 2 years of college. If you need to do this, I recommend McCormick Chili Seasoning Mix.
****I recommend placing your beans in a strainer and rinsing them with water before you use them, but it is up to you.

Pepper Market Trends and Opportunities: Global Outlook (2023-2032)
Tumblr media
The global demand for Pepper was valued at USD 7514.2 million in 2023 and is expected to reach USD 9804.3 million in 2032, growing at a CAGR of 3.00% between 2024 and 2032.
Pepper, often referred to as the "king of spices," is a widely used seasoning derived from the dried berries of the Piper nigrum plant. Native to the tropical regions of India and Southeast Asia, pepper has been a highly valued spice for centuries, known for its sharp, pungent flavor and versatility in cooking. The most common varieties are black, white, and green pepper, each offering distinct flavors depending on the processing method. Black pepper is produced by picking the unripe berries and drying them until they turn dark and wrinkled, while white pepper comes from fully ripe berries with the outer layer removed, resulting in a milder taste. Green pepper is harvested before ripening and is often preserved in brine or vinegar. Beyond its culinary uses, pepper has also been prized for its medicinal properties, believed to aid digestion, stimulate appetite, and possess antioxidant and anti-inflammatory benefits. Today, pepper is a staple in kitchens worldwide, enhancing the flavor of both simple and complex dishes, from soups and salads to meats and sauces.
Pepper holds a place of paramount importance in the world of spices, often earning the title "king of spices" due to its widespread use, historical significance, and versatile flavor profile. It is one of the most commonly used spices globally, integral to a wide range of cuisines across cultures. The sharp, pungent taste of black pepper, in particular, makes it an essential ingredient in both savory and some sweet dishes, enhancing flavors and adding depth to culinary creations.
Pepper's importance in spices also stems from its role as a foundational seasoning. It is one of the few spices that can be found in virtually every kitchen, often paired with salt as a basic seasoning duo. The versatility of pepper allows it to complement a variety of dishes, from meats and vegetables to soups, sauces, and marinades. Its ability to balance and intensify flavors makes it a critical component in spice blends and rubs, contributing to the complexity of flavors in regional and traditional dishes.
Historically, pepper has played a significant role in global trade and economics. During ancient times, it was highly valued and used as a form of currency in some cultures, symbolizing wealth and power. The spice trade routes, particularly those involving pepper, helped shape the history of exploration and the development of trade networks between the East and West.

Driver: The global trend towards clean-label products is driving the spices and seasonings market. Modern consumers increasingly prefer natural and wholesome ingredients, leading to a higher demand for products with natural flavors and colors. This trend offers food manufacturers opportunities to develop new formulations and products that cater to the growing demand for healthier food options.
Restraint: Excessive consumption of spices can have adverse health effects, such as heartburn, acid reflux, and acute gastritis. Spicy foods rich in capsaicin can irritate the digestive system, leading to discomfort and potential health issues, thereby limiting the use of spices among certain consumer groups.
Opportunity: Encapsulation technology in spices has witnessed higher sales growth, offering significant opportunities. Techniques like controlled-release encapsulation enhance the flavor and color of spices, making them easier to handle and more appealing. Companies like TasteTech are leading this innovation, providing improved spice products for the food and beverage industry.
Challenge: Spices and seasonings are prone to microbial contamination due to their perishable nature. The lack of adequate storage and warehousing facilities, especially in major producing countries like India, exacerbates this issue. Ensuring quality and safety remains a significant challenge for the market.

A day to bring tons of flavor to everyone’s plates, National Herbs and Spices Day brings out the best taste in a vast array of dishes. From the daily salt and pepper to the more exotic saffron or black cardamom, herbs and spices offer the essence of seasoning to everyone’s table.
And National Herbs and Spices Day is the perfect time to celebrate!
History of National Herbs and Spices Day
People have been using herbs and spices to flavor their food probably since history has been recorded. Some of the earliest ideas guess that hunters would use leaves to wrap their meat in, and discovered quite by accident that the leaves gave the meat a certain type of flavor.
As time went on, more and more plants were discovered to be aromatic and flavorful, as well as often having other beneficial properties. Spices were discovered when the roots, leaves or other parts of plants were dried, then ground and used in cooking. Spices have also been used medicinally all throughout human history.
Ancient Egyptians are recorded to have used cinnamon, poppy and mint, while some early Chinese influences also mention the use of cinnamon (cassia), nutmeg, cloves and many other types of spices. Ancient Mesopotamian sources reveal that thyme, sesame, cardamom and coriander were important.
Throughout history, spices have been considered a valuable commodity and were even used as currency during some time periods. At one time, nutmeg was worth more than its weight in gold. Cloves were often given as bonuses to London dockworkers. And peppercorns were demanded as ransom in the 410 AD capture of Rome.
Beginning in 130 BC the “Silk Road”, was an important way for spice traders to get their wares from the East into the West, particularly between Greece and China. For more than 1500 years, this network of routes contained trading posts, thoroughfares and marketplaces strategically placed for travelers and traders.
Eventually, spice companies began to develop, bringing exotic and unique herbs and spices from far off places, first for the wealthy or royalty and then, eventually, to the common person. Today, just opening a person’s kitchen cabinet can introduce a collection of fragrant and flavorful spices and herbs that likely originated from all over the world!
Enjoying these and learning more about them is the perfect way to celebrate National Herbs and Spices Day!

1500 BC Spices are used medicinally in Ancient Egypt

1773 Spices replace black tea in America
With the political problems surrounding the Boston Tea Party, Americans begin making their tea from herbs and spices like lemon balm, sage, chamomile, spearmint, sassafras, and others.
1889 McCormick and Company is founded
This Maryland based spice company starts with door-to-door sales with storage in founder Willoughby McCormick’s basement. It will go on to become the largest spice and seasoning manufacturer in the world.
1897 Bram Stoker’s Dracula is published
With 21 different mentions of garlic, this novel brings to the forefront the legend that vampires have a deep aversion to this root herb.

Check Out a New Herb or Spice
Get healthier and more adventurous when you try out some new herb flavors instead. Some of these are rather versatile while others are very specific spices that work in certain dishes:
Turmeric. Anyone who has tried cooking dishes originating from India may have experienced turmeric. Also called curcumin, this bright golden colored spice is a relative of the ginger family that can be used to add flavor to curries, relishes, soups, pilaf, vegetables and much more.
Herbs de Provence. A blend of 5-6 different dried herbs, including rosemary, thyme, basil and more. This delectable combination of herbs brings out the full flavor of meats when used as a rub and also works well on grilled vegetables or meat dishes.
White or Pink Pepper. Most Westerners are familiar with black pepper, whether whole or ground, and use it fairly regularly in their cooking. But white pepper is a spice that is traditionally used Jewish or Asian cooking, and it changes the flavor of dishes quite significantly. Pink pepper is similar, but has a slightly sweeter flavor.
Get Healthier Using Herbs and Spices
According to a 2015 study, replacing salt with herbs and spices can cut a person’s daily intake of sodium by almost 1000 mg each day. This type of dietary reduction can help to minimize certain health issues such as high blood pressure, which is a major risk factor for stroke and heart disease.
Not only does substituting herbs and spices help reduce sodium, but certain types of herbs and spices can also help to reduce inflammation and minimize damage to the cells in your body when eaten on a regular basis.
Turmeric, cardamom, cinnamon, garlic, chili peppers and cumin are a few spices to get started with incorporating into a healthy diet.

Mint. Useful in a variety of ways, mint is so prolific that many people like to grow it in containers to keep it from spreading and taking over the whole garden. With more than 600 different varieties, like peppermint, spearmint and chocolate mint, you’re sure to find one you’ll love to put in your iced tea or summer salads.
Parsley. This flat-leafed herb grows easily and is a delight to use for cooking soups and other dishes, as well as placing on dishes as a delightful garnish. Plus, even if it is grown outside it can easily be dried and kept to use over the winter months.
Rosemary. This one grows more like a shrub than a plant. It’s a woody evergreen that offers delightful aromas and loves to be in full sun. Rosemary is an herb that is also known to be healthy for the memory as well as being a mood booster.
