Still looking for the perfect vegan matzah brie? Try making it in the oven! Taking some inspo from farfal, I tossed the broken matzah with some oil and toasted it in the oven before adding any liquid. I kept the mix simple with some soy milk (or almond if you need kitnyot free) and a touch of vanilla extract. Toss in some dried or fried onions at your leisure, and then bake, stirring occasionally until the milk is absorbed and some bits are getting brown and crusty. I top my brie with some démarrera sugar and cinnamon. How do you “brie”? Here’s a quick nibble that’s easy to make, kosher for Passover and with ingredients you probably have in your Passover pantry (if you don’t have dried cranberries, use raisins). Also a most delicious combo of matzo and chocolate. When I was a kid I thought it was totally weird that my mother packed my lunchbox with a MATZAH SANDWICH during Passover. Boy was that silly! I’m not sure who brought the sniffles to the family Seder, but most of us came home with it. Feeling a little better, but still needing a pick-me-up, I decided to make up for missed enjoyment with an extra cup of #matzahchallenge matzah ball soup. Perhaps the best perk of living in NYC is the accessibility of Jewish comfort food year-round. Is it vegan like @soynadine’s, highly doubtful as I see the bits of chicken floating in it, but it’s here at the @busstopdinernyc and hits the spot.
