Take a bowl, add maida (all purpose flour), salt, baking powder, baking soda, sugar, oil, yogurt/curd and gently mix it together. 2. Add little warm water at a time to get the right consistency. Knead to dough. 3. After kneading , apply oil on the dough. Let it sit for 3 hours. 4. Take a big size dough & roll it out. Apply water on one side. 5. Place it on hot tawa wet side down. Turn off the stove once you see bubbles. 6. Cook other side on grill. 7. Finish it off with butter on the top. 8. Garnish it with sesame seeds & coriander leaves. 9. Serve it with Dhaba Style Chicken Curry or Dhaba Style Paneer Masala of your choice. Enjoy the home-made Naan (without yeast & tandoor). Dhaba Style Chicken Curry Ingredients For Marination Chicken - 1 kg Turmeric powder - 1/4 tsp Salt to taste Ginger garlic paste - 1 & 1/2 tsp Juice of 1 no. Lemon Yogurt/Curd - 1 cup Whole spices (Bay leaf, Cinnamon, Clove, Green Cardamom & Black Cardamom) Butter - 2 Tbsp Onion - 3 nos finely chopped Kashmiri Red chili powder - 2 tsp Cumin powder - 1 tsp Coriander powder - 1 tsp Tomato - 4 nos grated Salt to taste Green chili - 2 nos slit Water Garam Masala powder - 1 & 1/2 tsp Besan/Gram flour - 2 tsp Few Kasuri methi Few chopped Coriander leaves Method: 1. Take a bowl, add chicken, turmeric , salt, ginger garlic paste, lemon juice, yogurt and mix it all together. Let it marinate for 30 minutes. 2. Roast Bay leaf, green cardamom, cloves, cinnamon and black cardamom. 3. Add butter and onion. Saute till the onion turns light brown. 4. Add kashmiri red chilly powder, cumin powder, coriander powder, grated tomatos, salt, green chillies and let it cook for few minutes. 5. Add the marinated chicken and water. Close the lid, let it cook for 40 minutes. 6. When the chicken is half cooked, add garam masala, gram flour and close the pot. Let it cook for 15 minutes to 20 minutes. 7. Once the chicken is cooked, add kasuri methi and garnish with coriander leaves. 8. Serve it with Naan, roti or rice. Badam Milk (Almond Milk) Ingredients Milk - 1 liter Almond/Badam - 100 gms (soaked for 2 hours & skin removed) Little Water Cardamom powder - 1 tsp Sugar Saffron in milk Garnish it with sliced Almond/Badam For Masala powder (optional) Few Almond/Badam Few Cashew nuts Few Pistachios Piece of Mace/Javitri Cardamom seeds (Discard the skin) Method: 1. Boil the 1 liter of milk. For masala powder (optional): 2. Grind almonds, cashew nuts, pistachios, mace and cardamom seeds (discard the skin). Its a spice mix. Keep the masala powder aside. 3. Almond/Badam (soaked for 2 hours & skin removed) grind to fine paste by adding little water. 4. Add almond/badam paste in boiling milk. Stir well in a low flame. 5. Now, add cardamom powder, Sugar, masala powder (optional), saffron in milk & blend well. 6. Finally garnish it with sliced Almond/Badam. Turn off the stove & cool the milk. 7. When the seeds start to crackle, add the chopped onions, crushed garlic pods and chopped ginger. Fry till the onions turn golden brown in colour. Chop or puree the Tomatoes and add them to the pan. Saute on medium flame till the tomatoes are cooked, around 4-5 minutes..
Add the spices like turmeric powder, red chilli powder, garam masala, coriander powder and salt.Pour a tablespoon of curd and cook for another couple of minutes. Add water to adjust the consistency of the gravy and boil the curry for a minute. Add kasoori methi (dry fenugreek leaves) to the gravy..
When the gravy turns thick, add the grilled paneer and vegetables in the gravy.

Reposted from @odiafoodiebuddies How tempting that Mattar Paneer Masala (without onion and garlic) looks !! 😍 Recipe is given below, so that you can try it at home and relish! 🤤 (You can add onion and garlic too if you want) . ➡️Make a paste of 10-15 Cashews(Kaju) , 2 green chillies, ginger(1inch) & 3 medium sized tomatoes... keep the masala paste aside. ➡️take about 250gm paneer, 1 Bowl of green peas & shallow fry them with vegetable oil..Keep it aside. ➡️Heat oil in a pan, Roast some whole garam masalas in it , add some whole cumins(Jeera) ➡️Now add the Masala paste We made before, to the same pan. Add 1 tbs coriander (dhania) powder, 1/2 tbs cumin(Jeera) powder , 1 tbs Kashmiri red chilly powder & at last some salt to taste. ➡️now fry the masalas well for 8-10 Minutes (Until oil comes out of it) ..keep adding water so that it doesn't burn. ➡️when the masala is roasted well, add 1+1/2 cup of water and let it come to boil. Papad ki Subzi,a spicy and tangy Rajasthani curry made with yogurt and papad/poppadoms and chickpea flour.
A simple and fuss free curry from the royal state of Rajasthan. If you follow me, by now you must have known my love for Rajasthani Cuisine. I spent 3 years of my college life in Rajasthan and fall in love with the food. It is very much similar to the cuisine of from where I come from Western U. P but still many dishes like Dal Baati, Gatte Ki Subzi, Gatte Ka Pulao, Rajasthani Kabuli/Jodhpuri Pulao are native to the state.
Rajasthan is basically is a dry state and people have adapted there cuisine vegetarians especially to the local available ingredients. Due to scarcity of water, the state does not enjoy a wide range of fresh vegetables. Now a days almost everything is available in big cities but few decades back and still, people in small towns relied on local ingredients. Yogurt, spices and chickpea flour and millets like bajara are widely used in making dishes.

Papad Ki Subzi/Dahi Papad Shak
One such curry rich in flavors and very quick and easy to make is Papad Ki Subzi or Dahi Papad Shak as known in local language. I first tasted this curry from one of my classmates lunchbox, who used bring homemade food for us(those living in college hostel) . We loved this simple curry used to gorge on it with ajwain paranthas.
The curry is very simple and we just need sour yogurt, chickpea flour and papads. It is a very good way to use leftover papads/papadums from the last nite’s party or when we run out of vegetables for making lunch or dinner. Did this ever happened with you that you are about to prepare dinner or wake up early morning to find no veggies, no tomatoes not even onion and potatoes in pantry to cook!!?? I am sure sometimes it happens with all of us, especially towards the weekend..

I am right na?? What you do when you have practically no veggies in pantry/refrigerator. This specially happens when we come back from a long vacation or cleaning the pantry and refrigerator when gong on long vacations. Or sometimes it just you don’t want to go grocery shopping 😉 !!

I make Papad ki Subzi many times especially when I want something quick, easy and different for dinner. Kids love this curry as I top it more crunchy papads and they like to have it with chapatis/rice. You can serve it your guests too, along with other main course dishes like Aloo Matar or Matar Paneer, Rassewale Aloo Tamatar, Palak Paneer,Chautneywale Aloo, Besanwali Bhindi. This curry goes well with chapatis, paranthas and even with pooris(Methi Dal Poori).
For a quick, wholesome meal, pair it with Sookhi Urad dal(Dry Split Black Gram Lentil). Another recipe that you can make when there are no veggies.(updating next),
Let’s see now how I make this super simple Papad Ki Subzi/Dahi Papad Ki Subzi
All the ingredients(papad,boondi, spices) are available at Indian Grocery stores
Papads or better known as Poppadoms, use preferably Moong Papads or Urad Dal Papads.
To make Dahi Papad ki Subzi, we need Curd/Yogurt. Old or sour yogurt should be preferably used used for the authentic taste.
Chickpea flour/besan to bind the curry, spices like bay leaf, cinnamon, cloves and black pepper for flavour.
You can also add boondi to it. Boondi are fried chickpea balls that are used for making boondi raita or used in chaat recipes. I am adding it here.
I am also using dried feugreek leaves(kasuri methi) in the recipe, as it gives a nice flavour and aroma to curry. This is optional and not used in traditional preparation.
Traditionally fried papads are added to this curry, but I usually add roasted papads. You can roast papads on stovetop or in microwave.

Add about 1 cup of water and mix well.

Heat oil/ghee in a kadhai, add hing(asafeotida), cumin seeds/jeera and other whole spices.
Add ginger green chilli paste saute for few seconds.Then, add dried fenugreek leaves/kasuri methi and saute for another 1-2 seconds.
Add yogurt and chickpea mixture and stir it well. Take care it should not curdle.Once the mix comes to roaring boil, add salt.
Cook the mixture for 2-3 minutes and then add crushed papads and boondi to it. Many recipes tell about soaking papads and boondi in hot water before adding to curry, but I add it directly. It get’s cooked and soaked in curry. I like it that way.

Crush Ginger and green chilli in motor pestle or finely chop.
In a mixing bowl, add yogurt, chickpea flour/besan , salt and other powdered spices like coriander powder, red chilli powder, turmeric powder.Add about 1 cup of water and mix well.
Heat oil/ghee in a kadhai, add hing(asafeotida), cumin seeds/jeera and other whole spices.
Add ginger green chilli paste and saute for few seconds. Add dried fenugreek leaves/kasuri methi and saute for another few seconds.
Add yogurt and chickpea mixture and stir it well. Take care it should not curdle.Once the mix comes to raring boil, add salt.

Variations for Curry
Add one pureed tomato for a different texture and flavour.
You can add boiled potatoes and peas to it.
For the drier version add more papad, reduce water to half cup and add green capsicum to it along with chopped tomatoes.

It is unclear whether uncontrolled blood pressure is a risk factor for acquiring COVID-19, or whether controlled blood pressure among patients with hypertension is or is not less of a risk factor.
However, several organisations have already stressed the fact that blood pressure control remains an important consideration in order to reduce disease burden. Even if it has no effect on cardiovascular disease also found frequently in COVID-19 patients with 30% mortality rate which involves hypertension and other cardiovascular diseases.

Best to way to manage Hypertension during COVID-19 is by practicing healthy dietary and lifestyle practices. One should always follow nutrient dense diet which consists of fruits, vegetables, complex carbohydrates, protein, and good fats.
Complex carbohydrates preferably should include whole grains (Brown rice, Whole wheat, Millets like Ragi, Jowar, Bajra, etc), Lentils and Beans.
One serving of fruit (150-200 gm) which are rich in Vitamin C, Vitamin E, Potassium and Magnesium, Calcium and other Antioxidants like banana, all kind of berries and cherries, Citrus fruits, Avocado, melons should be added on a daily basis because research studies have shown that antioxidants reduces the inflammation and increases immunity.
All kinds of legumes and beans are incredibly good for managing hypertension, 1 or 2 servings (1-2 cups) of protein source should be added in your major meal.
Using monounsaturated and polyunsaturated fats are good for lowering down the blood pressure. Example – Olive oil, Canola oil, Rice Bran Oil. Total intake of oil in a day can be 2-3 tsp.
Using cow ghee 1 tsp in your total oil allowance in a day is a good choice to regularize the blood pressure as well as other cardiac disease. Ghee consists of medium chain fatty acids that are considered as good fats. [2]
All kinds of nuts should be added in a daily diet, say handful of almonds, cashew nuts, pistachios, etc in your mid meals since they are rich in omega 3 and 6 fatty acids. You can also include roasted seeds like sesame, pumpkin, etc (1-2 tsp/day). Chew it directly or add to your food recipes like salads bowls, smoothies, etc.
Consuming Drumstick (Moringa leaves) in your diet can be beneficial in managing your blood pressure. You can add few leaves in the recipes such a chutney or chopped into a soup or with any vegetables or boil a few leaves in water. Sip this water or use it to make herbal tea.
Green leafy vegetables, whole cereals, sweet potatoes, eggs, etc are rich source of Vitamin B6, Vitamin B12, Folic acid and plays an important role in controlling hypertension.
Some of the easily available kitchen spices like the ones below should be a part of your diet.
Garlic can be used in the form of chutney or can be chewed in raw form, 1-2 cloves on empty stomach in morning with lukewarm water.
Early morning, pound 3-5 garlic pods mix with curd or buttermilk and take for 5 days as a course. This has good effect on controlling high blood pressure.
Adding 1⁄4 tsp cinnamon powder in Lukewarm water/milk and tea.
You can make immune boosting tea (Recipe given below) or tea with milk.
Adding pinch of raw turmeric in food preparations like dals, curry, or warm milk since turmeric helps in reducing inflammation.
Stay hydrated by drinking 7-8 glasses of water daily. Water is a great detoxifier, and essential for regulating body temperature.
In these summer days, Kanji water can be consumed since it works as a strong probiotic as well as coolant. Also, Mint leaves, lemon slices and coriander leaves can be infused in water. It acts as a coolant. Probiotics are essential to promote growth of good bacteria in your gut.
Aim to consume 2 glasses of buttermilk every day since it is a summer coolant and probiotic.

Dietary regime that needs control
A diet should be low in sugar, fat, and salt.
Usage of salt should be 5 gm a day, according to the recommendations of the World Health Organisation (WHO). It corresponds approximately to one teaspoon. Alternatively, can use rock salt or pink salt.[3]
Avoid foods which are high in salt e.g. fried foods, snacks, soft drinks, preserved pickles, and chutney.
Avoid alcohol and Smoking as this increases the blood pressure as well the pulmonary distress.
Medications and Supplements
Be in touch with your physician over the phone and update your health status. If any supplements or medications prescribed by the physician, continue the same. Don’t change the dose of medicines without physician’s knowledge.
Discuss with the physician and take a multivitamin supplement daily one for a month

Take Chyavanprash 1 tsp in the morning. Complete your routine activities like cooking, cleaning, managing other household chores.
Make time for regular phone calls and staying in touch online with your distant friends and relatives are great ways to keep in contact when we cannot meet face to face.
Do meditation with musical therapy once in a day for 15 minutes.
You can take steam or hot water bath (twice/day) that has added benefits on respiratory organs as well as refreshes you.
Expose yourself for 15 mins to sunlight daily. Ideal time is between 7 AM to 10 AM. Try to get outside for some fresh air or in the garden, balcony, or walking in an open area. Vitamin D is linked to relieve stress and depression.

Take water in a tea vessel and add all the ingredients except the honey and bring it to boil and once it is done strain the tea and add your honey.

200ml water
1/4th tsp any tea leaves
5- Tulsi leaves
1 small Cinnamon stick
1/4 tsp – Honey
Method:
Take water in the tea vessel add Tulsi leaves and cinnamon stick crushed and boil. Once it comes to boil, turn down the gas and add the green tea leaves and steep. Strain the tea and add honey

3. Carrot Kanji
Ingredients:
250 gm carrots-preferably the dark variety (called kaali gajar)
6 cups water
3 Tbsp powdered mustard seeds
2 Tbsp salt
Method:
Peel the carrots, and cut them into 7cm/3″ pieces, not too thin (about finger size).
Boil the water and add the carrots to it.
When the water comes to a boil again, shut off the heat and leave to cool.
Add the salt and the mustard powder, and transfer into a jar with a lid, and keep this in the sun, to mature.
In sunny weather, it takes 3-4 days for the taste of the mustard to become strong. Do not keep the jar in the sun, after it is ready.

General Guidelines
Do maintain 2 hrs gap in between dinner and sleep.
Monitor and maintain a healthy body weight.

Matar paneer recipe | How to make restaurant style matar paneer recipe
Matar paneer is a delicious cury made of paneer cubes and fresh peas cooked in a rich, spicy and tangy gravy. Matar paneer is one of my favorite North Indian dishes.
Matar paneer is a popular dish ordered in Indian restaurants and is also a favorite on special occasions and parties. The dish has its origin in north Indian state of Punjab and is popular more in north, although now it has gained a much wider footprint.
What is paneer?
Paneer is a type of fresh, soft cottage cheese native to the Indian subcontinent. Paneer recipes are an integral part of Indian cooking. Paneer is a versatile dairy product and is used in an assortment of Indian curries, snacks and sweets.
Healthy & delicious
Matar paneer curry is rich in proteins. While peas are packed with proteins and are low in carbohydrates, the other dominant ingredient paneer which is made from whole milk is rich in proteins and calcium.
The near perfect combination of mild sweetness of fresh Peas, coupled with paneer cubes along with tanginess of tomatoes in a spicy and creamy gravy makes this dish thoroughly delectable.
Serving suggestions
Matar paneer forms part of Indian main course meal and goes very well with most Indian breads like phulkas, naan, tandoori roti, paratha, poori etc. as well as with rice varieties like veg pulao, jeera rice or even plain rice.
Many times matar paneer is made a few hours prior to actual serving of the dish. This is to allow Paneer to soak curry which makes it more delectable.
So follow the steps given below to make this delicious and mouth watering recipe of matar paneer.
Ingredients to make matar paneer
Vegetable oil for shallow frying
500gms paneer
2 tbsp vegetable oil
250gms onion finely chopped
2” ginger roughly chopped
2 cloves garlic roughly chopped
1 heaped tsp cumin seeds
1 heaped tsp coriander seeds
1 tsp turmeric
1 tsp mild chilli powder
400gms tomatoes blended to a puree
Pinch of sugar
Salt to taste
200mls water
200gms frozen/fresh green peas
½ tsp garam masala powder
Handful of coriander for garnish
Method to make matar paneer
1.Grind the cumin seeds and coriander seeds to a powder in a spice grinder or pestle and mortar. Set aside.
2.Blend the ginger and garlic with a splash of water to a smooth paste and set aside.
3.Dab any excess moisture from the paneer on kitchen paper and cut into bite size cubes.
4.Heat vegetable oil for shallow frying in a pan over a medium heat.
5.Add the paneer cubes in batches and fry. Make sure they get an even colour and go a light brown (this should take around 2-3 minutes).
6.Drain over kitchen paper and add to a bowl of warm water. Let it soak while you make the gravy.
7.Heat oil in a heavy bottom sauce pan over a medium heat.
8.Add the onions and fry for 12-14 minutes. Stir well as they begin to change colour turn the heat low and add the ginger and garlic paste. Fry well for 2 minutes stirring continuously.
9.Add the cumin, coriander powder along with the turmeric and chilli powder. Fry for a minute and add a splash of water making sure it doesn’t stick to the bottom of the pan and continue cooking the raw flavour of the spices for a further minute.
10.Add the blended tomatoes simmer the curry over a low heat for 8-10 minutes with lid on. Stir a couple of times through the cooking process.
11.Add 200mls water along with the sugar and salt. Continue to simmer for 5 minutes with the lid on.
12.Add frozen/fresh green peas along with the garam masala.
13. Drain the water from the paneer and add the cubes to the curry. Stir well making sure to coat all the pieces with the sauce.
14.Simmer for 2 minutes and turn the heat off. Garnish with coriander and serve with paratha or pulao and raita.

the recipe is fairly easy without much complicated steps, yet i would like to share some tips and feed for a perfect aloo tikki burger recipe. firstly, as mentioned previously i have added boiled potatoes and green peas to prepare the tikki. but it can be easily extended by adding veggies like beetroot, beans and carrot for more flavours. secondly, i have deep fried the patties in hot oil, but it can also be pan fried or shallow fried for less oil consumption. but i personally like deep fried option which cooks the patties evenly. lastly, i have added chilli sauce to the combination of tomato sauce and mayo. this is only to make it spicy and is not mentioned in mcaloo tikki recipe. hence it can be skipped if you do not wish to have it.

1 cup bread crumbs
½ tsp kashmiri chilli powder

oil for deep frying
¼ tsp cumin powder / jeera powder
¼ tsp pepper crushed
salt to taste
½ tsp ginger garlic paste
¼ cup thick poha / beaten rice / aval washed
for maida paste:
3 tbsp maida / plain flour / all purpose flour
2 tbsp corn flour
¼ tsp pepper crushed
¼ tsp salt
¼ cup water
other ingredients:
3 tbsp eggless mayonnaise
3 tbsp tomato sauce
1 tsp chilli sauce
4 burger bun
few lettuce leaves
1 to mato slice
1 onion rings
Instructions
firstly, take 2 boiled and mashed potatoes, ¼ cup boiled peas and spices.
combine everything and prepare patties.
dip into maida paste and roll in bread crumbs.
deep fry in hot oil or bake at 180 degree celsius for 20 minutes or till it turns golden and crisp.
cut half the burger bun and spread a tsp of prepared burger sauce on both sides.
on bottom side of bun place few lettuce followed by prepared aloo patties.
again spread a tsp of burger sauce.
place 2 slice of tomato and 2 rings of onion.
cover with burger bun and press slightly.
finally, serve aloo tikki burger with french fries or potato chips.
how to make mcaloo tikki recipe with step by step photo:
firstly, in a large mixing bowl take 2 boiled and mashed potatoes, ¼ cup boiled peas.
add in ¼ tsp turmeric, ½ tsp kashmiri chilli powder, ½ tsp coriander powder, ¼ tsp cumin powder, ¼ tsp pepper, ½ tsp ginger garlic paste and ½ tsp salt.
combine everything well forming a dough.
add in ¼ cup washed poha and combine again. this helps to absorb moisture from mixture.
now prepare maida paste by mixing 3 tbsp maida, 2 tbsp corn flour, ¼ tsp pepper, ¼ tsp salt and ¼ cup water.
mix well to form a lump free batter.
now prepare a large patties from aloo mixture.
coat in bread crumbs and then dip into maida paste covering all side.
further roll in bread crumbs covering all sides.
deep fry in hot oil or bake at 180 degree celsius for 20 minutes.
flip over and fry both sides till the tikki turns crisp and golden.
now prepare burger sauce by mixing 3 tbsp eggless mayonnaise, 3 tbsp tomato sauce and 1 tsp chilli sauce.
cut half the burger bun and spread a tsp of prepared burger sauce on both sides.
on bottom side of bun place few lettuce followed by prepared aloo patties.
again spread a tsp of burger sauce.
place 2 slice of tomato and 2 rings of onion.
cover with burger bun and press slightly.
finally, serve aloo tikki burger with french fries or potato chips.
notes:
firstly, prepare crispy and crunchy aloo patties for tasty burger.
also add vegetables of your choice while preparing patties to prepare veggie burger.
