You know those SciFi movies where they try to save humanity by freezing a group of them and send them to a far away planet for colonizing? It feels like I'm done that when I take cuttings and hold them in water until *I AM* ready to transplant them. Notice I didn't say "until THEY are ready" - many soft vine cuttings can be transferred to soil immediately after cutting - this is how they do it at plant nurseries. The main reason I root them in water is because maintenance in water is easier than maintaining new cuttings in soil - keeping the soil evenly moist but not soggy is more work than just refilling a glass of water.
