Külön öröm számomra, hogy éppen ezt a Delhiben, az ötvenes években (állítólag véletlenül) feltalált ételt díjazhatom. A Moti Mahal étterem akkoriban igen termékeny volt: a butter chicken sikere után feltalálták annak vega párját, a dal makkhanit is (mindkettő alapja a tejszín helyett zsíros joghurtból köpült "vaj", a makkhan). Ezen kívül sokat tettek a korábban is létező, de a Pandzsábon kívül ismeretlen számos étel (bármi, ami tandoorival kezdődik) modernizálásáért és népszerűsítéséért is. Ezeket ismerik mára a világ nagy részén úgy, hogy "indiai konyha". Én mondjuk elolvastam a Moti Mahal friss értékeléseit is, és ez után inkább Kake Da Hotelbe mentem, ami nagyszerű döntés volt.
