While research on the effects of acacia gum specifically in sickle cell anemia is limited, there is some evidence to suggest that certain components found in acacia gum, such as polyphenols and dietary fiber, may have positive effects on blood parameters and overall health. Polyphenols, which are plant compounds with antioxidant properties, have been investigated for their potential to reduce oxidative stress and inflammation associated with sickle cell disease. Dietary fiber, which is highly present in acacia gum, may have a positive influence on gastrointestinal health and gut microbiota. Maintaining a healthy gut microbiome is important for individuals with sickle cell anemia, as they are more prone to infections due to their compromised immune system.

Mango Lime Gelatin Bites //// Purée 1 whole ripe mango in blender until silky smooth. Add juice of 1/2 lime. Heat up mango juice on stove with 1 spoonful raw honey, until just simmering and then add 3 Tbsp beef gelatin powder 1 scoop at a time - dissolving each one completely with a whisk before adding another. Pour it into molds and set in fridge. So easy. Takes about 15 min. //// These little guys are so nice to have around for tiny, grabbing hands. When Woods kept asking for candy after Halloween - every day, naturally - I thought good God what can I do to distract him from this? Lifeway Kefir is hosting a challenge for home cooks and I’ve been invited to create a recipe using their Organic Cultured whole milk Kefir.   
I was ready in no time! This organic whole milk kefir is delicious and the best part is how you can serve this for breakfast, lunch or snack, or even dessert.

Autumn is taking a foothold and that means all things pumpkin. This kefir bowl is the epitome of Fall colors and textures. Roasted pumpkin, creamy Organic whole milk kefir, and cashew butter blend seamlessly for a velvety texture. This is one easy recipe you can make too! 
This nutritious bowl really comes together when you add some delectable toppings. Sure to fill you up and keep you going. Cashews, a dash of cinnamon, a drizzle of maple syrup, some chopped dates and the ever-popular chia seed.  This bowl is my idea of Fall comfort food at it’s finest. The roasted pumpkin adds a decadent flair and a subtle sweetness while the creamy kefir and frozen banana make a thick bowl of goodness.
With just a handful of ingredients, you will be happy you made this recipe.

Makes 2 bowls
INGREDIENTS
1 cup roasted pumpkin (We use the small Pie Pumpkins.Or they’re also known as sugar pumpkins. They are perfect for roasting. How to roast pumpkin is below in DIRECTIONS)
1 frozen banana
1 cup Lifeway Plain Unsweetened Organic kefir cultured whole milk
1 tablespoon cashew butter
cashews for garnish (optional)
cinnamon (optional)
maple syrup (optional)
chopped dates (optional)
chia seeds (optional)
DIRECTIONS
Preheat oven to 400F. Line a baking pan with parchment paper and set aside. Begin by peeling pumpkin skin. Using a sharp chef’s knife cut pumpkin down middle and with a large metal spoon, scoop out the seeds and stringy pieces inside of the pumpkin.  Cut the pumpkin into chunks and place chunks on the prepared baking sheet. Roast for 18-20 minutes, or until chunks are soft when pricked with a fork.
To a blender add roasted pumpkin, frozen banana, Lifeway Plain unsweetened Organic cultured whole milk Kefir, and cashew butter. Blend well and pour into bowls. Top each bowl with cashews, cinnamon maple syrup, chopped dates, and a few chia seeds. Serve immediately!
