Between Christmas and Jan 4 we have even more new friendly fowl, one duckling and several baby chicks. We are hoping for more ducks very soon. One of our Silkie hens has shown signs of being broody gathering a large clutch of eggs. She sat on eggs that were hers and some others from other chicks and ducks too. Dinner one night this week consisted of onions sautéed in bacon drippings, two eggs scrambled topped with cheese, fresh red peppers with guacamole on the side. For brunch today we’re having another egg dish. This frittata has four fully cooked then diced sausage patties, one-half of a medium onion, cheddar cheese and six large eggs from our hens. I topped mine with salsa and a spoonful of sour cream. This along with a cup of tea was superb. This is a quick, easy meal, perfect for #camping or #hiking or no plan for dinner.
